Try these...easy but they will be a huge hit!

SWEET CHICKEN BACON WRAPS

1 - 1/4 lbs. Boneless, skinless chicken breasts
1 (1-lb.) pkg sliced bacon
2/3 C firmly packed brown sugar
2 T. chili powder

Preheat oven to 350 degrees.

Cut chicken breasts into 1 inch cubes. Cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a wooden pick. Stir together the brown sugar and the chili powder. Dredge wrapped chicken in mixture. Coat a rack and broiler pan with non-stick cooking spray. Place chicken wraps on rack in broiler pan. Bake at 350 degrees for 30-35 minutes or until bacon is crisp!

Shrimp Taco Dip

8-ounce block of light or 1/3 less-fat cream cheese
2 tablespoons low-fat milk
1/2 cup (1/2 of an 8-ounce bottle) chili sauce (I use Heinz brand)
1 cup fresh or frozen (recently thawed) tiny or small shrimp, drained, rinsed and patted dry very well
4 scallions, chopped
3/4 cup chopped green bell pepper
1 (3 to 4 ounce) can sliced black olives, patted dry
1 cup (4 ounces) grated, part-skim mozzarella cheese, packed (reduced-fat Monterey Jack cheese can also be used)

Mix the cream cheese and milk in a small mixing bowl with mixer until smooth. Spread on a small serving platter or in a 9x5-inch loaf pan in an even layer.
Layer the remaining ingredients on top of the cream cheese, in the order that they appear in the ingredient list.
Chill at least one hour before serving. Serve with reduced-fat tortilla chips or wheat crackers.

Don't knock this until you have tried it, but deer dip is UNBELIEVABLY GOOD!

Yep, I said deer. Venison. Absolutely delicious dip!

You could also use about any cooked meat. Roast beef, roast pork, chicken, salmon, tuna, crab even.

I make this with deer cooked in a crock pot, usually use a leftover and make it the next day or reserve some of the meat from dinner presentation and use that to make dip with and serve it at the same meal, often Christmas.

Make sure the pieces are dry, don't do this dripping wet, but put enough meat in a food processor or use a mortar and pestle to create 1 cup of dry, finely minced, almost powdery consistency meat mix, then simply mix this in a bowl with a can of french onion or sour cream and onion dip.

You shouldn't be able to detect pieces of meat if you ground it fine enough, and if you taste it and it still has that sour cream 'tangy' edge to it, add more meat mixture, it will tone down that aspect and take on more of a meaty taste.

Serve chilled with chips or crackers.

Do not be surprised if it is the first thing to disappear from the table!

I'd expect you would want another Middle Eastern appetizer, OPie, don't you? I can't imagine serving tabbouleh with Swedish meatballs or those sweet 'n creamy chip dips.

Here are a couple that I've made before on short notice that will complement what you've already planned.

Moutabel
A spicier version of baba ghannouj. Easy to make and even better the next day.
Prep: 15 min Cook: 30 min

3 medium globe eggplant
1 Tbsp olive oil
1/3 cup tahini paste
1 Tbsp minced garlic
4 Tbsp lemon juice
1/2 tsp coarse or kosher salt
1/2 to 1/4 tsp pepper, to taste
1 to 3 jalapeno or other green chile peppers, to taste

Preheat oven to 400 F. Lightly oil and place eggplant on greased baking sheet. Roast for 30 minutes, or until tender. Set aside to cool.

When cooled, peel. Skins should come off fairly easily. If not, scoop the flesh from the skin with a spoon. Discard skins and set aside flesh.

In a food processor, blend tahini, garlic, and peppers. Add eggplant and blend smooth. Drizzle olive oil as processor runs, and continue until smooth.

Put moutabel in your serving bowl. Stir in the lemon juice and sprinkle with salt and pepper.

Serve immediately with pita or store in the refrigerator for up to three days.

Shashoukeh
A fried tomato dish with peppers. I prefer it hot; others like it at room temp. ood either way.

Prep: 10 min Cook: 5 min

3 ripe tomatoes, seeded and diced (skin them if you want to.)
1 bell pepper, any color, sliced in thin strips (or hot peppers, if you're that sort.)
2 cloves garlic, crushed
2 Tbsp olive oil
salt and pepper

Fry the garlic and peppers in the oil over medium high heat until soft. Add the tomatoes. Fry for about 3-5 minutes, lightly mixing with a spatula or wooden spoon. (You don't want the toms to break down.)

Season with salt and pepper. Serve immediately with pita. A little feta and fresh oregano for garnish is nice.

Mucver
A vegetable pancake, served hot, usually accompanied by a yogurt dip or cacik.

Prep: 10 min Cook: 5 min

2 zucchini, grated (about 4 cups)
2 carrots, grated (about 1/2 cup)
2 Tbsp finely chopped fresh dill weed
3 Tbsp grated yellow onion
1/2 cup feta cheese, crumbled
1 cup flour (chickpea flour if you're fussy)
3 eggs, beaten lightly
1 teaspoon salt
olive oil for frying

Wrap zucchini in cheese cloth or paper towels. Squeeze out excess water. Put zucchini in a large bowl with the carrots and onions and toss.

Add dill, feta, flour, and eggs. Mix well until it's a thick batter.

Heat olive oil in frying pan over medium high heat until it shimmers. Pour about 2 Tbsp of batter for each fritter. Fry on each side until golden brown.

Drain fritters on paper towels and serve immediately.

Cacik
I'd eat this stuff on about anything

2 cucumbers, peeled and grated
16 oz. cold, plain yogurt
2 garlic cloves, minced
1 Tbsp chopped fresh mint
salt
Extra virgin olive oil

Preparation:
In a mixing bowl, combine cucumbers and garlic. Add salt to taste.

Mix in yogurt with a wooden spoon. Transfer to serving bowl. Garnish with mint and drizzle olive oil over. Serve immediately or refrigerate.

My daughters grad barbecue is this Sunday, so I just might try some of these! All I know is, it made me hungry NOW! ;)

I almost always make some version of the mini smokies....though I most certainly have never boiled them! (Ew!) I do like the posters idea of a bevy of sauces...I usually make my sauce with Grape Jelly and Chili Sauce...it's always a hit and simple!

Obviously there is a trillion things to do with cream cheese...which I love! My cream cheese crab ball is a huge hit...cream cheese, crab, green onions, lemon juice, worchestershire sauce...mixed up, formed into a "bowl" and then you place your c0cktail sauce in the hole.

My gal Linda has the most bodacious Spinach and Artichoke dish that even those who do not care for the ingredients, love hers! Hope she will post it here! :)

One of the simplest things that always gets chowed at my place, is celery stalks with cream cheese, peanut butter, pimento spread, etc....fill the stalks and slice in tidbits...arrange on a platter...colorful!

Do you have access to a grill? If not, you can use under the broiler in the oven as well.

Ingredients:

1 Large Hebrew National Salami
Dark brown sugar
1 jar of apricot jam

Directions:

Unwrap the salami and make cut marks all the way down the salami, but not all the way through. Fill the cuts with dark brown sugar. Take a jar of apricot jam and coat the salami all over with it. Place in foil or a foil pan covered with foil and then put on the grill or in the oven under the broiler until hot and the brown sugar has carmelized. Cut into slices and place on platter with plenty of toothpicks. It can be served hot or cold,if you wish because the flavors have already meshed together. Put some spicy or dijon mustard next to the pieces in case anyone wants to dip, but it is delicious without the mustard too.

Enjoy and, I am sure your guests will too. They'll be begging for the recipe.

-Brie cheese in Puff Pastry!

A big wheel of plain Brie cheese
Appricott preserves
A sheet of puff pastry

You scrape off the top rhine of the brie, put appricott preserves on top, wrap in the puff pastry and cook til golden brown in a glass pan with sides incase u have a blowout!
you can serve with Apples, grapes, bread, carr's table water crackers.

CRUNCH TIME and you live in California.... They make brie already wrapped in phylo dough, packaged and ready to go. You just pop it into the oven for whatever amount of time, and then take out, place preserves on top and you're done. You may also put butter and almonds on top of another.

Here's hopin' for a great party OP!

Easy , elegant and wonderful
Shrimp stuffed englsih cucumbers

English cucumber peeled in stripes, ends cut off and discarded. Cut in 1/2 inch rounds. using a melon baller take the center ouy about half way through to make and indentation.

MiX cream cheese, dill and salad shrimp together, season with salt and pepper. Leave out to soften for about 15 minutes. Put into a decorator bag or a baggie with an end snipped off and stuff into the center of the cucumber...garnish with dill....do not stuff too far in advance...cucumbers will water. These are soooo tasty.

This is easy and delicious - best to serve in a crock pot with a bowl of tortilla chips (tostitos or restaurant style chips).

1. brown 1 lb ground beef
2. Add 1 can rotelli tomatoes, 1 package cream cheese
3. (optional) add small container sour cream

Known only by a few...In the frozen seafood secti0n of your local grocery store there are a variety of seafood stuffing mixes. I don't remember the name of the company but I have tried all 3 flavors (crab, lobster & clam) and all are delicious. The pkg looks like a "slice and bake cookie" tube only smaller. Buy large stuffing mushrooms, remove stems and spoon in defrosted mix of your choice. Bake at about 300 degrees until stuffing browns and mushrooms are slightly softened.
Really easy and quick and impresses the hell out of guests.!!!!

Ok.. way to late, but here's a quick one you can do with tortilla bread (wraps).

- Spread cream cheese on a tortilla
(to the edge, and don't be cheap in the middle)
- Drop salsa and spread it in the middle.
(you'll want to use the cheese as a sealer when you roll it, so don't go to the edge.)
- Add long thin sliced green & red peppers (not chopped), and sliced cucumbers.
- Sprinkle with shredded yellow cheddar cheese
- Roll tightly
Slice the wrap in 1 inch chunks

Works best if your veggies are cold and it's served fresh. The fridge makes them soggy after about an hour or two, so don't make them too far in advance.

You can probably do this with a greek pita, but haven't tried it.

Very easy cracker canape

Stone ground crackers
Hard cheese (parmesan, for example); thin sliced or grated
Bacon strips

Set the cheese on the cracker, and wrap with bacon, lay on ungreased cookie sheet, bake at 200 degrees for an hour. (You can put these in the oven, and then go take your shower).

If you need 'em quick, they come out OK if broiled for 5 to 10 minutes, just check them from time to time.

Prep time for several cookie sheets for your size of crowd could be up to 20 minutes, but you could do the prep in advance and then pop them in the oven just in time for the party.

Here is a really great one.....

1 or 2 8oz packages of cream cheese (depends on how mild you want the dish)
1 can of crabmeat (tuna can size)
Appetizer crackers (saltines work best I think)
Old Bay seasoning (optional)
Kelchner's c0cktail sauce (or your favorite brand)

Mix cream cheese and crabmeat. Season with Old Bay if desired. Using a melon baller, scoop a small round of mix on each cracker and top gently with dollop of****ail sauce.

You can also form the mix into a ball and coat with c0cktail sauce. Guests use the crackers to scoop.

I always feast on the leftovers!

This is a very quick and easy appetizer that both big and little kids love!!!!!

Chili Dip

1 8 oz pkg of cream cheese
1 15 oz can hormel chili no beans hot if you like hot you can even use the turkey
1 8 oz pkg of shredded cheddar cheese

in a 9" glass pie pan spread the cream cheese (you can zip in microwave if a little hard)
top with the chili and then the cheddar cheese
Now you can either zap it in the microwave for about 5 min or until hot and cheese is melted or in the oven for 25 min or until hot and the cheese is melted

serve with Tortilla Chips

If you are having 70 people I would double the recipe and use a 9x13 pan you will not have any left!

EASY -
get a bag of doritos
1 cup sour cream
1 packet instant vegetable soup
mix together the sour cream and soup mix preferably overnight, but can be done as little as 1 hour beforehand, but refrigerate as it can melt in warmer weather

to impress:
about 2-3 mussels each
boil, take off half the shell and lay on a plate

then pipe or spoon this mixture on top
2 hard boiled egg yolks
couple tablespoons mayonaise, depending on consistency you prefer
1 clove garlic (fry in a small ammount of olive oil till semi cooked, not crunchy)
paprika and salt and pepper to taste
blend all together well

garnish with:
saffron threads and finely chopped chives

its easier than it sounds, but, doesnt really take that long since you can do the sauce pretty easily while the mussels are cooking

Chicago Dip
INGREDIENTS:
• 1 (10 ounce) package frozen chopped spinach, thawed and drained
• 1 cup sour cream
• 1 cup mayonnaise
• 3/4 cup chopped green onions
• 2 teaspoons dried parsley
• 1 teaspoon lemon juice
• 1/2 teaspoon seasoning salt
• 1 (1 pound) loaf round, crusty Italian bread

DIRECTIONS:
1. In a large mixing bowl, combine spinach, sour cream, mayonnaise, green onions, parsley, lemon juice, and salt. Mix until well blended, then refrigerate.
2. Cut a circle out of the top of the bread and scoop out the inside. Tear the inside into pieces for dipping. Spoon the dip into the center of the bread bowl and serve accompanied by the pieces of bread for dipping.

Am I too late to pipe in? Here's my favorite easy appetizer. Great for summer:

Slice of tomato with a wedge of mozzarella covered with a fresh basil leaf or two. Drizzle with balsamic vinaigrette.

Easy and elegant!

VERY SIMPLE & SCRUMPTIOUS! Takes no time!

2/ softened sticks of butter, 2 cans drained crabmeat, 3 jars (softened)Old English Cheddar Cheese, 2 pkgs english muffins: Mix (by hand) first 3 ingredients together well, spread over muffin halves, place on baking sheet & BROIL carefully till tops lightly brown... let cool somewhat & cut into quarters for the perfect size of a crab delight!
