Most people just enjoy small kabobs of fruit or serve fresh fruit and a simple dip on the side. They are easy to handle and can be prepared ahead. no utinsels to hang on to.

Take a package of Lil Smokies c0cktail franks and boil them in beer till plump. No water, just cover in any beer and boil. Drain~ toss with a good quality BBQ sauce and throw in a dash of liquid smoke and Tabasco. Then bake in a shallow pan for about 20 minutes to seal in the flavor.

An alternate to this is to use Jerk Sauce instead of BBQ. Serve with cubed fresh pineapple, assorted chunks of cheese and c0cktail toothpicks for utensils. Done deal, and yummah.

Bruschetta is always a big hit. I slice up french bread put pesto sauce on it and a thin slice of tomatoe over that and sprinkle some shredded parmesan cheese over that .
Bake until the parmesan has melted about 15 minutes checking of course at a 400
degree oven.
This always goes first.

LOL doesn't matter Madskillz. We're all getting some great ideas for future use. I've tried some recipes using the crab meat in a can and it was a little fishy tasting so I just use the imitation crab meat and dice it. I also use the imitation crab meat to duplicate the seafood subs you get at subway. I mix it with light miracle whip and add chopped black olives and few banana peppers. YUM!

Actually I was saying I WOULD only have a few hours. It's a surprise party and the surpriseee is only going to be out for a couple of hours.

Hope this helps! Heres one that is soo easy and really great!

For 70 people I would at least double everything....

2 cans salmon - drain
fresh parm cheese grated (in the baggie is fine)
cracked pepper to taste
4tbl spoons ranch dressing.

Just mix and serve cold also keeps for awhile - salmon and white wine go great together too!

..Well hell..if she's still looking for recipes....you can't beat a crock pot full of Buffalo Chicken Dip. I lost my recipe..but it just takes Shredded Chicken, Creme Cheese, Cheddar Cheese, Louisiana Hot Sauce, and the gumption to stir it all together once it melts....Serve it with anything you can spoon it on..crackers...toast bits...Triscuits...you name it. (I'm sure there's a more exact recipe somewhere else on the forum, just do a thread search)

Regardless if she still needs ideas for that party or not...everyone is enjoying the ideas! ;)

Someone mentioned kabobs....which brings to mind E.Z. Fruit Dip....

Marshmallow Fluff
Cream Cheese
Microwave to soften...blend well....serve with pineapple chunks (fresh), strawberries, bananas! Great for fruit kabobs!

I didn't see this posted, but, try spinach artichoke dip.

1 box of frozen chopped spinach (boil it to cook it then let it cool down)
1 small jar of artichokes (I like to chop them up so they're smaller)
1 package of cream cheese

Just mix all the ingredient together so everything is evenly distributed.

Queso and chips..just need to keep the queso warm..or a spinach/sour cheese dip with onion soup mix, (this is a cold one, no worries about keeping the dip warm) serve it with hawaiin bread you can break off the bread/and or crackers and put the dip on it...you can also break out the center of the hawaiin bread put the dip in a bowl in the hole and put the bread you break out of the middle all around it so people can grab a peice and put dip on it...I think the recipe is on the lipton soup packet...there is always good 'ol cheese plates and crackers too.

this one is fairly easy and usually is gone in a short time. Mix 3 packages of cream cheese that is softened with cut up green onion (chop fine) then take cream cheese mixture spread with butter knife on semi thick slices of ham.(about 2 pounds of regular ham sliced medium from the deli) roll each slice up and cut. arrange on a tray and add olives around the edge of the plate and serve.

Another variation on cream cheese:
Sliced salami
Cream cheese
Sliced jalapenos

Spread a dab of cream cheese on a slice of salami and top with jalapenos, roll up and use toothpick to secure.
