Also fruit makes an excellent dessert this time of the year with a nice dip ( chocolate or yogurt)

I know that this will sound a bit odd, but my mother made these and she entertained alot. I have taken these to parties and served them at my own parties, they seem to be a hit with men!!
Saltine crackers
bacon

wrap half a slice of raw ( yes, i said raw! lol) bacon around a saltine cracker
microwave until the bacon is done and crisp
thats it!! the cracker absorbs the drippings and becomes bacon flavored.
I swear that when I make a platter full, I never have any left-overs

here is another, easy
Mahogany Mushrooms
button mushrooms
soy sauce
red wine
teryiaki sauce

in a saucepan place mushrooms and then add one fourth cup low sodium soy sauce, one fourth cup terryaki sauce and about 2 cups red wine. I use Merlot. Let simmer for an hour or two, It really doesn't matter how long you simmer. Taste the sauce to make sure the wine, teryiaki , and soy are not overpowering each other....i am not very good at measurements as I tend to just eyeball it. the longer they simmer the darker the mushrooms are. Strain and serve...Another hit that I am asked to bring to get togethers

This is easy and the friend who gave it to me calls it "love cheese"!!

combine shredded cheddar (I shred my own; I don't like it in the bag, shredded) and chopped pimentos, with a little mayo to bind. Serve with crackers.

If you have the time try a basic chicken salad with roasted red bell peppers on endive spears really classy, cheap (food cost wise) and easy to prepare

little paris toasts, goat's cheese, roasted garlic (just roast the cloves in oven at 400 for about 2 minutes), and little slices of red pepper on top. voila! cute little appetizers, and my friends always gobble them up.

I just can't get invited anywhere without a request for this really easy cream cheese appetizer, it's pretty darn popular, lol. And don't be too easily fooled by the tuna, very few people have guessed that tuna was a main ingredient. :)

Easy Tuna Roll

1 brick cream cheese, softened
1 can of tuna, (in water) drained
1 medium onion, chopped finely
6 TBSP fresh Italian parsley, chopped (reserve 2 TBSP)
*a drop or two of hot sauce, optional (I've never used it)

Mix well tuna, cheese, onion and 4 TBSP of parsley. Shape into a ball or log and place on serving dish. Sprinkle with remaining parsley, chill. Serve with crackers...saltines seem to complement it best.

(This doesn't have to be made too much in advance, but it does have better flavor the longer it sits.)

TOMATO AND BOCCONCINI SALAD

4 medium-size tomatoes
2 balls bocconcini cheese
2 tbsp. fresh basil leaves
salt and pepper
2 tbsp. olive oil

1. Slice the tomatoes and the bocconcini. Chop the basil.
2. On a flat plate, arrange the tomato and bocconcini slices in concentric circles, slightly overlapping each other.

3. Add salt and pepper generously. Sprinke with the oil and chopped basil.

It's easy - fast - and if you cover it with balsamic vinegar - you'll thank me later - sure to be a hit :) Add a little Oregano and thats it :)

Elegant Presentation

ingredients:
one can of hearts of palms
Bourdin cheese spread
Dakin ham slices
fresh dill

Dry the ham off with paper towel to remove and liquid. Spread with the cheese spread. Roll up the spear of the heart of palm. (like a hoho). Then cut the spear in 1/2 inch piece. top with a tiny sprig of fresh did.

pepperoni (minched)

Crescent dough

take a tiny dollop of filling and wrap the dough around it. Smaller then a ping pond ball but larger then a marble.

bake. Tastes like pizza!

A few hours? Didn't you plan? First off if you're having a surprise birthday party, it was not a surprise to you. You must have got distracted. If you're preparing for 70, I'd make appetizers that don't require heating in the oven or on a stove. There are a number of recepies online. Veggies go well especially with the women who are health conscience. Nigela Lawson has an awesome recepie for a Roqamole Dip, made with blue cheese, sour cream, and pickled jalapenos. Dude, if I got an invite to the party, I would have made your guests Crab Cilantro Won Tons or Lumpia. Cheers.

Fry hamburger with a pkg of taco easoning, according to directions on pkg. Put that in a casserole dish, sprinkle shredded cheese on top. Pop in the oven to heat through and serve with side bowls of sour cream and salsa, and tortilla chips for dipping. NOT good with the flavoured kinds! (JMO)

Another cream cheese recipe. I make a bagel dip thats really easy and quite tasty. Cut up bagels or I prefer mini bagels into small chunks. Mix 2 8oz jars old english cheese with 2 softened 8 oz. cream cheese together. You can add a tsp. of garlic powder if you want but its delicious without. Can serve chilled or at room temp.
