TPot posted in a different thread, you can sub the Velveeta with cream cheese in the Velveeta and Rotel dip...with or without meat. (my kids like sausage in it...I prefer meatless)

Chinese "Rumaki"
4 cans whole water chestnuts drained 3 tbsp soy sauce 1/2 cup brown sugar 1 lb thin sliced bacon toothpicks
Cut chestnuts in half. Marinate in soy sauce for 1 hour. Drain. Mix sugar with the chestnuts. Cut bacon strips into 3rds. Roll one piece of bacon around each chestnut and secure with a toothpick. Broil for about 5 minutes or until bacon is crisp. These are really yummy!
Individual quiches
Oven heated to 375 degrees F
2 packages premade pie crust 1 quart half and half 6 eggs 1/2 tsp nutmeg 1/2 tsp salt 1/8 tsp ground blackpepper 12 oz package shredded cheddar or jack cheese filling of your choice: cooked vegetables like broccoli, spinach, onions, mushrooms, carrots; chopped ham, bacon, shrimp,crabmeat, surimi (imitation crab)
Roll out pie crust and cut 3" circles. Spray muffin tins with cooking spray and fit each circle into a muffin cup. Fill loosely with meat and/ or veggies. Top with shredded cheese. Do not overfill.
Mix the half and half, eggs, nutmeg, salt and pepper and blend till smooth. Pour filling untill it is about 1/4 " below the edge of the pie crust. Bake about 15 minutes or until golden brown and toothpick inserted in the center comes out clean. Quiches will fall as they cool. Serve warm or room temperature.
Fried Ravioli
2 bags frozen precooked ravioli thawed and dry 1 jar or 2 cups of your favorite marinara sauce or spaghetti sauce parmesan cheese oil for frying
Heat oil to 350 degrees F. Fry the ravioli till golden brown. Dont overcook them or they will be hard as rocks! Meanwhile heat the sauce till steaming but not boiling. Place the ravioli on a platter and sprinkle with cheese. Serve with sauce on the side. | |

| HELP! I need an easy Appetizer! Posted: 3/18/2009 12:49:40 AM | This is a twist on Daytona's "Rumaki" recipe ...an old friend made for us once and it's really simple and everybody seems to love them.
Whole water chestnuts thin sliced bacon bar-b-q- sauce.
Cut the raw bacon in pieces long enough to wrap around each water chestnut and secure with a toothpick then just dunk it in the bar-b-q sauce and stand it on a cookie sheet. when you're all done bake them at 350 til the bacon is done. Unique and REALLY tasty. | |

Posted: 4/5/2009 12:48:24 PM | When I had my house warming party, I made this appetizer called "Hot Jezabel"......it has the most unusual ingredients that together, make a zippy and tasty appetizer. Your guest will be wondering what is in it.....mine loved it and I am asked to make this at parties, from now on!
1 12oz jar of apricot preserves 2 teaspoons of prepared horseradish 2 tablespoons dijon style prepared mustard ground black pepper to taste
1 8oz brick of cream cheese (let soften at room temperature)
In a medium bowl, combine apricot preserves, horseradish, mustard and pepper. Taste the mixture and add more horseradish, mustard or pepper to taste. Depends on how much "bite" you want. To experience the best flavor, cover and chill this mixture overnight - however, you can serve immediately.
To Serve:
Place cream cheese on a plate and pour apricot mixture over the cream cheese. Serve with a basket of your favorite crackers.....yum!

You don't even really need a recipe, just chop up a bunch of tomatoes and mix them in a bowl with olive oil, a splash of balsamic vinegar, minced garlic, salt, pepper, and some chopped fresh herbs like basil and oregano. Slice up some nice crusty bread or a baguette, and you can either toast it in the oven and spoon the tomato topping on it after, or spoon the tomato topping on it to start with and toast it all in the oven. Personally I like to toast it with the topping already spooned onto it but your mileage may vary :)
You can also do different things with the topping like add white beans or roasted red pepper to it. | |

Cut the cheese into bite size cubes, sprinkle with fresh spices cover with dressing - serve with cubed assorted breads and or crackers -

| HELP! I need an easy Appetizer! Posted: 10/3/2009 2:21:32 PM | Here's one I invented years ago. I usually bake balls of choux pastry then cut them in half for stuffing but I'm going to make this even easier for you.
Bake 3 doz mini frozen tart shells according to package directions. (How's that for easy!!)
In a medium glass bowl cream 1/2 lb cream cheese. Mix in 1/2 cup sour cream. chop 1/2 cup cook prawns chop 1/2 cup imitation crabmeat. (real crab will just dissapear) chop 1 medium green onion Add all to the cream mix. Add 1 tbsp lemon juice, 1/2 tsp chopped fresh ginger and 1 tbsp chopped dill.
Microwave on high 2-3 minutes to meld flavors together. Mix well and spoon into tart shells. Finish with a small sprig of dill for presentation or sprinkle with chopped dill. Refrigerate until served. This recipe needs to be kept cold so if I'm going to take it anywhere I don't stuff the shells until I arrive. It's also very versetile. You can microwave it until hot, grill buttered english muffin halves and spoon the mixture over the grilled muffins. Top it with holandaise sauce and you have a great seafood lunch dish. I like to butterfly a prawn, grill it and balance it on top for presentation. Or, add 1/2 cups thin white sauce flavored with a bit of seafood powder. Add chopped potatoes, cooked scallops, a bit of cooked whitefish, bassa, red snapper or halibut and you have a great seafood chowder.

I cook then and then cover in raspberry chipolte sauce and simmer a bit. Place toothpick in each one and serve on a warming dish. Its easy and actually tasty. | |

Taco Dip
12 oz cream cheese 3/4 cup canned pumpkin 2 tbsp taco seasoning 1/3 cup chopped green pepper small can chopped black olives pkg of beef wafer meat chopped fine 1 tsp garlic powder
Mix all together, chill, then serve with fritos, doritos or crackers, no one will ever guess that there is pumpkin in there!
Dill Dip
8 oz cream cheese (I use the fat free) 1/2 cup miracle whip or mayo (I use fat free) 1/4 cup chopped green onions 3/4 tsp dill weed (I use dry) 3 tbsp mild 1/4 tsp onion salt 1 tbsp parsley (I use dry) 1/4 tsp celery seed
Mix all together and chill. I promise, using fat free ingredients tastes great! | |

8 oz cream cheese, softened 1/2 c sour cream 1/4 c mayo 3 tbs dijon 2 tbs lemon juice 2 tbs grated garlic 1 tbs Old Bay(seafood seasoning) 1/2 tsp mace dash worcestershire cream these ingredients, then add 1/2 lb crabmeat 1 cup shredded cheddar cheese

Posted: 10/17/2009 7:10:43 PM | | \Precook these and freeze, really really good hot or cold....do your meatballs like you normally would (frozen I guess,but have never done that)...take medium size jar of Heinz Chili Sauce and a medium size jar of Blueberry jam and mix together in a saucepan...pour over cooked meatballs and put in oven for about a half an hour swo that the sauce goes through them....let cool and freeze or serve over rice if you like...surprising how these two ingredients compliement each other ciao | |

2 cans flaked ham 1 brick creamed cheese (leave to warm on counter) blend these together until well mixed add 1/2 cup chopped sweet pickles or jalepenos (this again depends on your taste)
Mix the above, then spread thinly+ on wraps of your choice, roll as tight as possible and slice in 1/2 inch pieces, arrange on a plate and sprinkle with parsley or any other light garnish.
I have made these for the workplace and parties at friends and got great reviews, especially for those 'hot' people the jalepenos are my fav. | |
