I dehydrate tomatoes, various types of peppers(mild to hot), onions, garlic and numerous fresh herbs. Once dried, I then turn it into powder form in my Magic Bullet blender I then dehydrate it for another few hours to make sure all the moisture is out.
Wonderful in chili, spaghetti sauce, in meatloaf, on burgers or any cut of pork. Rub some honey on ribs and coat with this blend and mmm mmm tasty ribs. | |

I like to use 5 spice and also fish sauce. Same warning for the fish sauce, it only take s few drops! But it imparts a real rich savory flavor. Oriental seasonings in general are my secret ingredients to a lot of different dishes.
This is going to sound gross but if you add a little honey and balsamic vinegar to your home made chili it tastes fantastic.
I always add a little brown sugar and a shot of vinegar to my chili gives it a sweet sour taste. | |

Posted: 1/4/2012 11:34:17 PM | As many people have said before, depends on what i am cooking, i was a 5 star chef at a catering company for 3 years, but out of everything, roasted red pepper and garlic seasoning, with a little rosemary, goes well on anything, with the exception of desert, which should have chocolate and a homemade vanilla icecream. yes i may only be 22, but ive been cooking since i was 4, first full meal(by myself) at 5. favorite meal, steak marinated for 3 days in 3 different alcohols, with about 10 different seasonings, stuffed potatoes, Cesar salad with homemade dressing and brandy flambe'd strawberries served over either chocolate or vanilla ice cream. now thats a great meal, if you would like the recipe to anything or directions, shoot me a message. | |

What's your favorite secret ingredient? Ginger.
I always have some fresh and some frozen.
I dice into ~3" cubes and freeze. This way you do not have to peel and can use a micro-planer to add it to anything.
Take a frozen cube out of freezer and in hour or so you can squeeze the juice out of it.
I slice fresh ginger and place in any water that I am using for cooking or steaming. | |

The last one is a sticking point, because lots of guys tend not to read directions very well. | |

Basil is the single biggest reason I work my tail off to do a garden every year. | |
