some folk like using Coke cuz they believe the acid in the soda tenderises the meat and the caramel in the drink gives a good flavor.

After I put them in the oven at 350 for 60 minutes . I usually cover them with sauce before going into the oven. Its hard to pick up a rib by the bone without the meat falling off. | |

I prefer to do things easier, maybe not better, but good none the less.

Ribs have to be cooked over charcoal or wood to be the wonder they are. Anything else is ... well tasty meat. I have a slab in the fridge along with a family pack of chicken legs. Thought about doing them today, but didn't get around to it. Too many other things that had precedence.
Weber grills has an instruction that is wonderful of setting them off heat and in regards to the bottom and top vents.
I empathize with those of you in northern climes. Even though I get a cold winter, I can bbq year round as snow is infrequent here. But boy, the 40 d F temps in the winter are bone chilling cold. Brrrrrrrrrrrrrrrrrrr  | |

| EZ BBQ ribs falling off the bone Posted: 8/4/2009 10:11:45 AM | lol...living in chicago, sometimes the oven has to be the grill, although i have been known to bbq in sub-freezing temps (i REFUSE to try to start a fire in sub-zero temps). once winter sets in, i might try the coke method, although cider vinegar has been my go to for years (about 2-3 tablespoons in enough water to cover the ribs).
no matter what, though, i will never EVER boil ribs to tenderize them. all the flavor will end up in the water (broth). the best tenderizer for ribs is time, even in the oven. low and slow is the way to go! best ribs i've ever made spent about 8 hours on the grill over hickory wood and apple & cherry chips (not actually over though, off to the side). i have a bag of kingsford but haven't used it in years...wood adds so much extra flavor! | |

Also do it on a charcoal pit using wood chips. Like yours I wrap in foil and cook for about 2 hrs. After that I open the foil on top and add the wood chips for the remaining time to get a smoked flavor. Use a spray bottle with what ever I using 1/2 and 1/2 with water to spray over ribs to keep them moist. | |

| EZ BBQ ribs falling off the bone Posted: 8/5/2009 4:30:11 PM | hmmm...I have to try that out and that's saying alot. I 'perfected' a method about 15 years ago that I love. But I am going to try this, especially in the winter. If you're interested...another good way is boil them in beer and let them marinate overnight in sauce with some beer. I like using Shiner Bock the best, though others will work. I use a combo of Stubbs and****ys from Texas with about 1/4 Shiner for the marinade. Grill them on the grill and be careful because they will fall off the bone. Oh, i always use baby backs from a butcher (grocery store is OKAY if you have to).

I use seasoned pecan and hickory for about four hours. Very little rub as not to overpower the meat. When the ribs start to sweat, I check the internal temperature to see if they are done. They usually are pull off the bones but not falling off. Ribs have to have something left to bite or it's just pulled pork. | |

Before she passed, my mother was a diabetic so I would substitute the coke for a diet coke and it still worked the same, just without all the sugar.
I use it as a base for basting steaks or ribs on the grill. Here is what I use in my basting sauce:
1/2 can of coke or diet coke 1/4 cup A1 sauce 1/4 cup italian dressing 3 tsp worcestershire sauce 2 or 3 dashes of tabasco sauce (optional)
I just baste it on the meat as it is cooking and it gives such a great flavor. | |

In all seriousness I'm a good cook but for the amount of work ribs can be these ribs I found at Costco are as good as anything I can make from scratch and the price is right too. | |
