| Calgary Christmas breakfast photos Posted: 12/23/2008 5:18:55 PM | Note: This is the original recipe. I recommend just trying two or three the first and second cookie sheet until you find the right time and temperature for your oven. I make my spoonfuls a little bigger.
Applesauce Jumbles
2 ¾ cups All-purpose flour 1 ½ cups packed brown sugar 1 teaspoon salt ½ teaspoon baking soda ¾ cup applesauce ½ cup shortening 2 eggs 1 teaspoon ground cinnamon 1 teaspoon vanilla ¼ teaspoon ground cloves 1 cup raisins
Optional: 1 cup chopped nuts if desired
Mix all ingredients except glace. (if dough is soft, cover and refrigerate.) Heat oven to 375F. Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased cookie sheet. Bake until almost no indentation remains when touched. Immediately remove from cookie sheet and let cool. Spread with glaze.
Browned Butter Glaze
Heat 1/3 cup butter or margarine over low heat until golden brown: Remove from heat. Stir in 2 cups powdered sugar and 1 ½ teaspoons vanillia. Stir in 2 to 4 tablespoons hot water until desired consistency.. | |

Golden Carrot Cookies
1 cup Mashed cooked carrots (about 4 medium) ¾ cup sugar ½ cup shortening ½ cup butter or margarine, softened. (can use unsalted butter) 2 eggs 2 cups all-purpose flour 2 teaspoons baking powder ½ teaspoon salt ¾ cup shredded or flaked coconut.
Orange butter frosting: see below
Heat oven to 400. Mix carrots, sugar, shortening, butter and eggs. Stir in coconut. Drop dough by teaspoonfuls about 2 inches apart on ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8 to 10 minutes. Remove from cookie sheet and let cool.
Orange Butter Frosting
3 tablespoons butter or margarine (unsalted butter is best) 1 ½ cups powdered sugar 2 tablespoons grated orange peel About 1 tablespoon orange juice
Mix butter and powdered sugar. Stir in orange peel and orange juice: beat until frosting is smooth and of spreading consistency. Spread on cooled cookies.
I've made the frosting in a small sauce pan also, under low heat and then spooned it over the cookies when it thickened up a bit after taking it off the heat. Still tastes good! | |

They were not iced and it became a major source of embarrassment when anyone visited, as out came those cookies. Carrot cake is fine but never again for carrot cookies! Did I miss the recipe for the decadent chocolate cookies? | |

1 ½ cups sugar 1 cup butter or margarine, softened 1 egg ¼ cup water 1 teaspoon vanillia 1 ¼ cup All-purpose flour 1/3 cup cocoa ½ teaspoon baking soda ½ teaspoon salt 3 cups quick cooking oats 1 package ( 6 ounces ) semisweet chocolate chips
Note: I switched the chocolate chips with grated ‘BAKER’S’ semi-sweet chocolate squares. 4 to 6 squares.
Heat oven to 350. Mix sugar, butter, egg, water and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls about 2 inches apart on ungreased cookie sheet. Bake until almost no indentation remains when touched. Apx.10 to 12 minutes. Immediately remove from cookie sheet and let cool. | |
