OP I'm from the maritimes and one of the best ways we cook mussels is with beer ;) I used to have beach parties and would cook 50lb bags of mussels outside on a boiler.
Never really cooked them on a stove. If I were to scale it down, I would suggest : 3 celery 4 carrots 1 large onion 1 beer Not sure how many mussels to be honest..but whatever would fill a large pot.
Pour a bottle of beer (I usually used Labatts or Keiths) into a large pot. Chop (in huge pieces) 3 celery, 4 carrots and a large onion. Yup, that simple. You don't want a lot of liquid..you just want them to steam.
Steam mussels until ready. You get your seafood and your veggies too! | |

Or, add some fresh coriander instead of parsley, chopped fresh ginger, chilli to taste and some coconut milk. Yum yum, sadly mussels have gone out of season here in the UK until September/October, but it is something to look forward too! | |

1 box Wheat penne cooked -in 1 tsp. garlic granular ñ 1 T. kosher salt- drain well cooked al dente
Mix all together in large bowl. 1 onion large yellow chopped small 1-15 oz. black olives large chopped garlic granular to your liking salt ñ pepper to taste dried basil to your taste I use 1 tsp. or so 2 medium pinches Italian Seasonings little red crushed pepper 2 cans clams drained well small cans* Olive oil extra virgin just to coat Add in penne - mix well-chill Optional - add Romano cheese ñ just enough fresh lemon juice to taste - which neither is a must but gives extra flavor if you have FRESH lemon. Without either or these. It is good once chilled ñ flavors meld for awhile… or eat hot
~Note if you don't like clams add medium shrimp or crab- about 1/2 lb. You can add some chives if you like | |

3 pounds mussels, rinsed and bearded 1/2 cup dry white wine 2 cloves garlic, minced Freshly ground black pepper 1 handful flat-leaf parsley
A few dabs of cooked butter and flour to thicken the sauce..serve with loads of sliced french bread to soak up the broth which IMO is the very best part of the dish. | |

Unfortunately, the only seafood place I will purchase fresh seafood from is 90 miles round-trip, so it'll have to wait for this weekend for me to try these out, but I so look forward to it!
I'll be getting clams while I'm at it.... Clams Casino, anyone? 
I've not made Clams Casino myself, although I love them, so I'll be running a couple of recipes through my kitchen this weekend also.

Reduce on medium heat for about 45 min.: - 1 can of clam with its liquid -250 ml of heavy cream - a bunch of green onions
In a seperate pot, prepare your favourite pasta and voilà, bon appétit! | |

| Need recipes for Mussels or Clams Posted: 5/2/2009 9:19:04 PM | Four bottles of white wine (cheap wine is fine), 2 large cans of chicken, beef or veggie stock, red pepper flakes, cayenne pepper, lots of garlic and butter, and steam till shells open. Works well with mussels or clams or oysters, serve over risotto or white or brown rice or angel hair, with some asparagus or other veggies or a nice salad, and a loaf of crusty bread.

Ingredients (This makes a lot, so you might want to 1/2 the recipe! I might skip the rice altogether.)
1 (3 1/2-ounce) bag boil-in-bag long-grain white rice 1 cup water 1 teaspoon grated lime rind 2 tablespoons fresh lime juice 1 teaspoon sugar 1 1/2 teaspoons green curry paste 1 teaspoon fish sauce 1 (13.5-ounce) can light coconut milk 1 (8-ounce) bottle clam juice (I skipped this; don't have it) 80 mussels (about 2 pounds), scrubbed and debearded 1/3 cup chopped fresh cilantro Lime wedges (optional)
Preparation Cook rice according to the package directions, omitting salt and fat. Combine 1 cup water and next 7 ingredients (through clam juice) in a large Dutch oven over medium-high heat. Add mussels to pan; bring to a boil. Cover and steam 5 minutes or until mussels open; discard any unopened shells. Stir in cilantro. Place about 1/2 cup rice in each of 4 bowls; ladle about 20 mussels and 1 cup coconut mixture over rice. Garnish with lime wedges, if desired.
ps - my mussels didn't have beards, just little goatees! How does one de-beard a mussel anyhow?

| Need recipes for Mussels or Clams Posted: 11/7/2009 4:13:03 PM | I know this is an old thread, but since Ms. Bunky brought it back up, I will post one of my faves.
Clean and wash mussels and clams.
Put salted water on to boil for angel hair pasta.
In a large heavy pot with a lid, bring about 1" of a combination of light fruity wine, tarragon and lemon juice to a boil. Throw in the cut up pieces of the lemon rind you squeezed.
Put pasta in boiling water.
Put in 2#-3# of mussles and/or clams. I prefer green lip mussels and cherrstone clams. Cover and steam.
Turn oven to broil. Cut diagonals of French bread, spread with garlic butter and toast. Cut about three 1" thick slices and remove crust thinly, then grind or tear into very small pieces. Crush 3 garlic cloves.
Check mussels and clams. If all shells are open, remove all shells to a bowl and keep warm. Throw bread crumbs and garlic into pot and squeeze in another lemon.
Remove toast and drain pasta. Stir the sauce well until thickened. Pile pasta on plate, spoon over sauce, place shells onto plate and toast. Really good with roasted asparagus too!
