If you don't want touristy, do not go to St. Thomas, Puerto Rico or Hawaii. They are all very touristy, dirty, full of crime. I recommend the Out Islands of the Bahamas, not Freeport or the big islands, but the small ones - much closer than Hawaii and just as pretty - very laid back, the people are wonderful and you've got quite a few to choose from. Harbour Island, any of the Exumas (Staniel Cay is amazing), lots to pick from and close (at least to the east coast). Enjoy and stay away from tourist traps (and don't waste two days on a plane to Hawaii!!)

For scuba...Bonaire is the greatest. Shore diving 24/7 and the reefs are beautiful with viz of 100+. The island is also layed back and basically untouches.

Puerto Rico and Dominican Republic both offer all the activities you're looking for (I just did a huge amount of research on Caribbean islands recently when planning for my own vacation, and I'm interested in the same stuff as you).

The main difference is that Puerto Rico WILL be more touristy, and might be more expensive. However, it is substantially 'safer' than DR if you plan on hiking or camping outside the major tourist areas. It still carries an inherent risk factor, just like anywhere else internationally.

Bahamas is also an excellent location for watersports, but I'm not sure how great the hiking or camping will be. Be sure to travel to Bahamas in the late spring to early fall. It does get a little cooler in the winter months - 64-74 degrees in January I believe. A little cool for all-day watersports.

Far of the West Coast of Ireland is a place seldom visited called Tirnanog.
It is a magical place with beautiful buildings and castles and a very hospitable people.
There are lots of places to stay and plenty of seafood bars and lamb and venison in abundance. Unlike Ireland potatoes have never taken on so bread not unlike French baguettes are eaten along with Atlantic olives , basking sharks and a delicacy made from seaweed is common. There are few distractions other than the beauty of the islands and the seabirds and the crashing waves. One way flights can be arranged from Galway, Knock and Derry airports. Most people misjudge how long they want to stay so it is better to arrange a oneway flight and arrange a return usually a lot longer than anticipated but it is well worth the journey.

Have been to Madeira twice - first time ever to visit the same place twice.
May and October - lovely weather both times - all year destination.
Recommend Machico White Waters Hotel - 100m from the shoreline and only 20 minutes from the bustle that is Funchal.
Three and a half hours only from Stansted by Easyjet .
Great for walkers - the levadas are terrific.
Fish - lovely Black Scabbard - you will not taste better.
For floral display go in spring - but its beautiful all year round and MUCH cheaper than EuroZone.

Not Jamaica. I loved the culture but the diving bites and the political situation is dodgy unless you know some locals to show you around.
