| Salad Dressing Posted: 7/10/2009 6:57:55 PM | Looks like a lot of people like Caesar so here are 2 recipes my friend and I developed for his restaurant - the creamy is the most popular. I know, should be posting in the recipe forum but I think I did years ago. You can half the recipe for the creamy dressing with no problem, and if you don't like anchovies, you can omit them but it won't be authentic.
Creamy Caesar Dressing 12 small anchovy fillets 1/2 cup capers 4 cloves garlic 1-1/2 tsp. dry mustard 4 egg yolks 1 tbsp. red wine vinegar 1 tsp. Tabasco sauce juice of 1 lemon 1/4 tsp. freshly ground pepper, or to taste 1/2 tsp. salt, or to taste 3/4 cup olive oil – can use good quality vegetable oil if you prefer
In food processor, finely purée anchovy fillets, capers and garlic; pour mixture into a bowl. Using a wire whisk, beat contents lightly; add mustard, egg yolks, vinegar, Tabasco, lemon juice, and salt and pepper to taste and whisk to thoroughly combine. Continue whisking and begin adding the oil very slowly until completely incorporated and the dressing is creamy. | |

| Salad Dressing Posted: 7/10/2009 7:07:50 PM | I love the standard italian dressing on my green salads. But i love dipping veggies in ranch dip! (or onion dip)
The best chip dip is the philidelphia cream cheese chip dip. I started getting that rather than Nallies. Not that I eat chips often, but when I do, that's the stuff. it has a softer, creamier texture of course for dippability. (new word?)

| Salad Dressing Posted: 7/10/2009 7:20:04 PM | I'm a vinagrette kinda person- lately homemade, (Lemon juice, almond oil, italian mrs dash) occasionally with some homemade mayo.
Coffee creamer? Prefer organic whipping cream that's had sliced vanilla bean soaking in it. Add some xylitol for sweetness.
Cream cheese? Mmmm cheesecake.... | |

That recipe sounds so good. I cannot remember the last time I had dressing other than Caesar. I'm relieved to see several others like it too.

Caesar Vinaigrette 1-1/2 tsp. mashed anchovy fillets 1-1/2 tsp. chopped garlic 1 tsp. chopped sour gherkins 1 tsp. chopped capers 1 tsp. Dijon mustard 3 tbsp. red wine vinegar 2 tbsp. fresh lemon juice 1 cup extra virgin olive oil 1/2 tsp. freshly ground pepper, or to taste 1/2 tsp. salt, or to taste
In small bowl, blend anchovy fillets, garlic, gherkins, capers, mustard, vinegar, and lemon juice. Whisk in olive oil; season with salt and pepper to taste. Let stand 1 hour before serving. | |

I usually don't eat mayonnaise, but I did see some grapeseed oil mayonnaise that I want to try. Usually I only see it made with either soybean oil or canola oil, and I want only unrefined if those oils are used at all. I don't use coffee creamers because I prefer black coffee. Creamers are extra calories that I don't need as well as processed things usually including partially hydrogenated anything. My $0.02. | |

Well Tee, I just want to say thank you for a different kind of thread, it made me giggle. Besides, who ever gives us a chance to say what we randomly like? LOL
Thousand Island is easy easy to make. It was my parents favorite and one day when I was three I got in the kitchen while they were sleeping and mixed up some stuff and took it to their bed, woke them up and shoved a spoonful of the stuff into my dads mouth before he could totally open his eyes. Turned out, he said what I had made was the best 1000 Island he has ever had and since we had salad almost every dinner (it was the 50's and early 60's, it is what people did), it was my job to make the dressing every single dinner. My dad loved watching me make it. I didn't know I was concocting his favorite dressing, but I guess it was just meant to be.
I mixed mayo, mustard, ketchup, pickle relish (India is a type of sweet and dill mix, which is what we always had), minced onions and boiled egg yolks. I think my mom had had those leftover from making a potato salad and I threw them in, then I put paprika in it, because I was looking for spice and that is all I found. It actually does make a killer 1000 Island. Later, my son insisted I make it for him everytime we had salad.
I guess I have made literally at least 100 different dressings in my life. I never buy it. I love a balsamic vinaigrette, creamy blueberry, avocado, tangerine, Greek, Bleu cheese, raspberry, Red French/Bleu Cheese, Bacon Roasted Tomato Poblano Garlic, Ginger Orange Sesame, I just custom make them for my meal and salad. Whether it be flavors for the coffee or the Italian Soda, my favorite are definitely Hazelnut and Pumpkin Spice. I do not care for coffee, but I drink it on occasion for the hazelnut creamer.
I saw someone mention olives. I LOVE olives! Often I have a meal that is basically just an Antipasto platter... Jumbo garlic stuffed green olives Dry oil cure black olives Columbo (has to be Columbo) hard dry salami with cracked pepper coating Marinated mini Buffalo Mozzarella cheese balls Multicolored fresh mini pear Tomatoes, or sliced heirloom with shreds of fresh basil Crispy fried Eggplant Artichoke bottoms that I have cooked myself with garlic, lemon and olive oil Hearts of Palm Squid tentacles, shrimp and scallops that have been flash pan seared with lots of fresh garlic, fresh basil shreds, fennel seeds and evoo Proscuitto di Parma (has to be from Parma) Roasted garlic gloves Cherry peppers Anchovies wrapped around large capers Giardenaire - pickled and herbed carrots, onions, cauliflower and cucumber Slices of buttered and broiled Italian bread Finish with grapes, figs and cocoa dusted almonds or hazelnuts with either Coffee with Hazelnut cream or a Hazelnut Italian Soda or if it is a special occasion I will have Prosecco (Italian Sparkling Wine)
When I have this meal, I feel I have died and gone to heaven. The only other thing that makes me feel this way in food is a massive whole lobster and a bottle of Dom Perignon. If I ever marry again, a lot of the buffet will be this meal, plus a few more things. I will agree to just about anything with these two meals.

Another interesting fact I found is just because its low calorie, there is still a bit difference in the calories in the dressings. | |

Spicy Thai Seseme, Marylins Rustic Italian, and (kraft zesty italian with iceberg only, otherwise iceberg i like it with ranch)Im so picky when it comes to store bought salad dressings, but costco has good ones, i like ceasar home made with lots of garlic lol... I also love making my own vinegarette dressing with garlic, oil, vinegar, salt, pepper :)
My favorite coffee creamers are... irish cream and french vanilla
My favorite cream cheese is herb and garlic, and fav bagels are Jalapeno, Everything, Onion, yummy | |

So far I only used Honey Mustard and Italian because that is what I usually have around the house. I take my chicken breast, stab it a few times put in a baggie with a few tablespoons of dressing. Put it in Ref over night or for most of day. Then throw it on the barbie and yum. It really adds some good flavor to Chicken. I have noticed several people have mentioned Newmans Own and they are some of the best dressings i feel made. | |

It's 2 parts olive oil to 1 part balsamic, plus a squish of lemon juice. Add in a tsp of wholegrain mustard, a crushed garlic clove (fresh not packaged!) plus a turn or two of both sea salt and black pepper. My ex mother in law made this homemade salad dressing that was so good but had a ton of calories. (I don't have actual measurements, she would just throw it in there and taste it until she got it right. )She would just take mayonaisse, sugar, vinegar with a touch of mustard and mix it together. I've made it with fat free mayo and splenda and it turns out ok.
Straight coffee creamer for me. I don't like to doctor my coffee :)
I like the garden veggie cheese spread and the smoked salmon cheese spread for bagels or crackers. I wish I had a recipe to make a good veggie cream cheese. Everytime I try to make it, it turns out bland. | |
