In a related vein...I just bought a copper/tin lined French pan for 50 cents at a local garage sale!!!...if you hurry over there you might get some more ;-)


I have a beast of a cast iron pan that cooks everything so smoothly and evenly its amazing, its like its its own built in slow cooker.

i have all shapes and sizes of cast iorn, i don`t get around to using them all. to store them oiled lightly w/lard( as other post stated) place in a brown paper sack. the bag will absorb some of the oil and form a great container that is rust-proof
i get raves for my cornbread , jalapeno, blueberry,corn, etc and the secret is the crust from a black iorn pan i have 3 that are for baking only.
traditionally in Lousiana a set of black iron cookware were given to newlyweds. hence the gumbo pot.
there is no other way to make southern fried chicken or chicken fried steak., not that i eat alot of it but you have to have the right tool for the job.
if your pan rust, take the entire pan down to the metal with med grit sand paper, it will shine and becoe smooth, then oil or lard it a bit, place in a 350 oven for 1 hr, turn off cool, repeat until the black return on the pan. this will take about 10-12 times to get it back. then hopefully you can appreciate the process involved in it and take proper care of it.

flips the tortillas on it and you are in heaven
