I often times have found myself not saying anything but it seems that if I don't start saying something, no one else will. It's not acceptable to use derogatory words when referring to an individual of another race or religion or make jokes about them and it's also not acceptable to do it to individuals who are disabled. They, more than others, need our compassion. Sometimes we just need a reminder of that. | |

| Be Real ..what's on your mind today? Posted: 7/1/2008 6:45:45 AM | Grilled chicken. I'll share my Mom's recipe for use as a marinade and baste. My Mom, like yours is the BEST cook.
First, I buy the whole chicken and then cut it in half, wash it out with cold water then store on a platter. Brush on and allow the marinade to sit on it for 4 hours in the refrigerator for good penetration, overnite is best. You can still use it on fresh, straight- to-the-grille meat but the taste won't be very pronounced. As you grille, continue to turn the chicken over every few minutes to keep it from burning. Slightly indirect heat is best. If gas fired, the grille should be at 300-350 internal temp. If you use a Weber grille with charcoal, the coals must be gray coated for the hottest fire. Use a charcoal stove to start them ($10-15 at Bass Pro. Don't use lighter fluid in any event. Cancer causing fumes permeate meat.) Keep chicken elevated off high, seering heat to prevent premature burning of skin.
Every other time you turn, use a brush to baste but not heavily. In the last few minutes of cooking, use no baste, so as to allow the skin to crisp to a brown golden color with some blackening. As with a smoked turkey, you can peel the skin off, however the flavoring is in the meat assuming you allowed a long marinade period. Let me know if you like this if you tried it. (there's enough here for up to 10 halves)
1 cup cooking oil 2 cups cider vinegar 3 Tablespoons salt (Adjust quantity or eliminate to meet individual health needs and taste.- I use 1 tbsp. if you baste frequently during cooking) 1 Tablespoon poultry seasoning 1/2 teaspoon pepper 1 egg
Beat the egg, then add the oil and beat again. Add other ingredients and stir. Brush sauce on the broiler halves every few minutes during cooking. The recipe can be varied to suit individual tastes.
Leftover sauce can be stored in a glass jar in the refrigerator for several weeks. | |
