| Need marinade mix ideas Posted: 6/1/2009 2:40:16 PM | OP! I did some hunting on the internet and found this. Sounded easy! Dry mixes for a gift basket that would work. Can't say that I have tried them, but it sounded simple!

Step 1 - Begin your dry rub by using a small bowl to mix together the spices you want to be part of the rub's flavor, but do not include salt yet. Salt will be the last ingredient you add.
Step 2 - For an Italian seasoning, mix 1 tsp. each ground fennel, sage and marjoram with 1/2 tsp. each garlic powder, black pepper and thyme.
Step 3 - For a Cajun-style seasoning, mix 1 tbsp. paprika with 1 tsp. each garlic powder, cayenne pepper and thyme, plus 1/2 tsp. each black and white pepper.
Step 4 - For a chile dry rub, mix 2 tsp. pure chili powder (made only from dried ground chiles) with 1/2 tsp. ground cumin and 1/4 tsp. each oregano, black pepper and garlic powder.
Step 5 - Be creative: You can also make a dry rub from combinations of spices you create yourself.
Step 6 - Finish the dry rub by adding enough salt to comprise about 1/5 (20 percent) of the dry rub.
Step 7 - Mix all ingredients together well.

For steaks- ribeyes garlic granular sprinkle ONE side Pepper both sides lightly Pour some liquid smoke mesquite or hickory to both sides - let soak in 30 minutes before wrapping. Salt AFTER grilling ~~~~~~~~~~~~ For chicken or Turkey only 1 cup soy sauce 2 cups pineapple juice 2 tablespoons ground cumin 1 1/2 teaspoons minced garlic 1/4 cup freshly squeezed lime juice
Combine all ingredients with a whisk in a mixing bowl, making sure to break up any lumps of spices. Store in an airtight container in the refrigerator for up to 2 days. Makes about 3 1/4 cups ~~~~~~~~~~~~~~~~~~ For Chicken 1) 2 oz. pkg. dried ancho chilies 1 tsp. black pepper 2 tsp. cumin powder 2 T. oregano fresh chopped 6 cloves garlic 1/2 red onion, quartered 1/4 cup vegetable oil 4 chicken breasts or meat of choice
Soak dry chilies in water overnight or until soft. Remove seeds. Add all ingredients except chicken in food processor or blender. Puree until smooth. Spread mixture over chicken breasts - refrigerate 1 hour- up to 24 hours. Heat grill to 400° F or, if cooking inside, heat small amount of oil in skillet or grill pan over high heat. Salt chicken breasts to taste. Grill chicken breasts about 4 minutes per side, depending upon thickness, until done. Serve with rice, black beans, or choice of side dish. Garnish with fresh cilantro. ~~~~~~~~~~~~~

Mix together garlic, onions, orange juice, and lime juice in a bowl. Heat olive oil in a large saucepan till just smoking. Now cover up your arms and put some pot-holder mitts on because you're about to do something that is contrary to good cooking practice but produces great flavor release. Slice contents of the bowl into hot oil--be very careful because the liquid will splatter. Simmer 5 minutes to soften onions and garlic. Season marinade with rest of ingredients. Whisk together oil and mayonnaise. Add buttermilk, cheese, basil, salt, garlic and hot pepper sauce to taste. Mix thoroughly. Cover and let flavors meld overnight in refrigerator. ~~~~~~~~~~~~~~~~~~~ Great for Chicken 1 part pineapple juice 1 part soy sauce 2 parts water Splash of teriyaki sauce
Pour a can of pineapple juice into bowl, fill the empty can with soy sauce ...dump into bowl ..fill the can twice with water empty into bowl. 6-24 hours in refrigerator covered.
Cook on outside grill Beat egg- add oil -beat again. Add remaining ingredients - stir. Use sauce for basting also. While barbecuing brush sauce on chicken each time you turn it. Leftover sauce may be refrigerated for several weeks. These ingredients make enough sauce for 10 chicken halves. ~~~~~~~~~~~ Marinade cubes of Lamb 1/2 c. olive oil 1 tsp. Greek dried oregano 1 tsp.mint dried 1 tsp. garlic granular 1 lemon large fresh juice kosher salt -pepper Mix all together marinade 4 hours with large cubed lamb pieces for kabobs. Grill ~~~~'' grill chicken that was marinated in Italian Dressing for several hours in ref. than grill slowing - adding romano cheese at the end. | |

| Need marinade mix ideas Posted: 6/2/2009 11:01:26 AM | | Just in terms of freezing meats- especially when it comes to flank steak, I'll put some powdered citric or ascorbic acid on it (along with my own steak spice) so that when it thaws, the acid helps tenderize the flank. I rinse it off before grilling broiling. | |
