I think the important thing is to keep the pie mix quite dry or it doesnt bake very well(it all comes up over the sides etc). I dont put any carrots or veg in mine as I put all of that into my Stock used for making the sauce. I just put onions, Garlic and thyme and roasted chicken stock. | |

| Try the priest Posted: 5/21/2007 8:27:49 AM | A few years back I won a blue ribbon for my Shepherd's Pie. There was a potato-cooking contest and I entered it. I didn't have a recipe for the Shepherd's Pie so I made up my own. I hope you all like it:
Cook your Hamburg with seasonings and onions. Drain and put in the bottom of your casserole dish. Sprinkle with shredded mozzarella.
Pour over about a cup or so of frozen corn and then a can of cream style corn. Sprinkle with shredded mozzarella again.
Boil some potatoes. Here is the interesting part. :) I take the boiled potatoes and slice them quite thick and layer them over the casserole dish. I usually make two thick layers and then if I have more potatoes I throw a few extra slices over the top. Sprinkle the whole casserole with mozzarella again. Take some buttery crackers (like Ritz) and crush them in your hand and sprinkled them over the cheese. It makes a nice crust and tastes great too and keeps the cheese from burning. One last thing... I take about a 1/2-cup of milk and drizzle it around the edges of the casserole and then pour the rest over the top. You don't want your meal to be too dry.
I cook it for about an hour on 350 with foil on and then take the foil off for about 10 min or so to brown up the topping a little. If you let the casserole set for a few minutes before cutting it, it will hold together quite nicely. I have always had people come back for seconds on this one.

But i do something a little different. I make a bit of gravy with the hamburger. Then it's not so dried out! I usually put canned peas and carrots in the middle. (the x only liked peas, and i didn't want it to be all peas, so I comprimised and put both carrots and peas.) Then the mashed potatoes on top. Melt butter (margerine) on top of them and run a fork down the potaoes to make it look nice and pop it in the oven to brown.

| shepherd's pie. Posted: 5/22/2007 2:34:01 PM | I love shepherd's pie as well. I sautee onions, garlic, a diced jalapeno and carrots. I add some frozen peas to the mixture at the last second.
In the potato mixture, I add buttermilk, bacon (and some drippings), some carmelized onions and fresh parsley.
After baking, it comes out nice and brown on top, and it doesn't break apart at all. Good stuff! | |

1 lb. ground beef 1 lg. onion, chopped Salt and pepper 1 can of creamed corn and I like to add peas, green beens, carrot Mashed potatoes
Saute ground beef and onion until meat is browned. Drain off fat and season with salt and pepper to your taste. Spoon meat mixture into bottom of lightly greased 1 quart casserole spread corn over meat. Add mashed potatoes over corn and your veggies. Bake at 375 degrees about 25 minutes. Place under broiler for 2 to 3 minutes if top isn't browned.
You could even make a bit of a gravy just to add flavour to the meat.

| shepherd's pie. Posted: 3/24/2008 7:55:38 AM | This is what I call comfort food. I just made this for the first time in tens years for a friend's family who just lost their father.
This is how I make it.
Season the ground beef with a little cumin. Sautéed (one) chopped onion , ( two stalks) celery and (one or three) cloves of garlic. Then brown and drain the beef. Add a large can of chopped tomatoes in puree. Add salt and pepper. Bring to a slight boil and add (1/2 cup) cooking sherry or white wine. Let the mixture simmer (uncovered) for about an hour. Add a cup of frozen or blanched fresh sting beans. Let it simmer for another five or ten minutes. Make fresh mashed potatoes, and use plenty of fresh butter, salt, pepper and a pinch of sugar. Pour the meat mixture into a casserole pan. Dollop the mashed potatoes on top and bake at 350 until the top of mash potatoes are slightly brown.
Serve it up lasagna style.
For the best mash potatoes, use Yukon gold potatoes. Add a clove of garlic while boiling the potatoes. Take out the garlic before draining. | |

Most all recipes are the same, but what I like to do is after it is cooked. Make some brown gravy and cover the potatoes with it.
Can't forget the gravy...
