Posted: 2/8/2007 1:41:10 PM | | okay call me boring or the product of being born in "america" but i like marble cheese. the thinner you can slice it the better. i don't know why. less is more i guess. can't stand guda... gooda... whatever... but after i go to france and switzerland and taste tons of cheese i will be able to better this question. so expect this thread to be opened again come november | |

Posted: 2/8/2007 6:58:34 PM | Appenzeller,specialy the extra strong one(dont touch it!your fingers will smell for day's after)it also gives a special zing to a real Cheese-Fondue if you ad a little bit of it. If your ever in Switzerland go to any littel Cheese maker and ask for the homemade stuff never been disapointed! | |

If it smells like an old sock, a dirty diaper, vomit, road kill, you can bet I'm not eating it.. | |

| Am I wrong? What is your favorite cheese? Posted: 2/11/2007 10:35:15 AM | Oh, cheese is a definite weakness for me! Gruyere, fresh mozzarella, feta, bleu, roquefort, sharp chaddar, I can go on and on.......
Now I really want to go back to Sicily where all the little shops sell this fresh cheese that tastes a little like provolone and comes in these little gourd shapes that look like a sack that has been tied at the top. I think it might be called caciocavello, but I haven't been able to find a source of the fresh version (which has a wonderful mild nutty taste and smooth texture that reminds me of a good gruyere) anywhere here in the states. The aged version isnt nearly as good, in my opionion. I found when I was there in 1999 that if one tries to keep the fresh version of this cheese for a few days at room temperature it turns to "bleu cheese" ..... but that is good too!  | |

| Am I wrong? What is your favorite cheese? Posted: 2/11/2007 11:35:07 AM | Ok, so my favorite cheese, is a traditional rawmilk Dutch Gouda, that we have been producing for a odd 30 years.
As advice for those seeking tasty cheeses. different kinds of cheese, mozzerella, chedder etc, means nothing when it comes to taste what makes a good tasting cheese is the bacteria cultures that are found in raw milk, which is pretty much what dictates the taste.
a cheese made from pasterized milk is the worst.....a very bland, boring taste. as our health regulations in Canada have changed over the years, it has become near impossible to produce a raw milk cheese, so there is also a third option, sort of a middle ground in the trade off between taste, and "safe cheese"
This is known as heat treated, where its been brought up to the temperature 60 degrees celicius (vrs boiling it for pasteurization)
and is pretty much the only route for one seeking a fine cheese these days ( unless your from Quebec, and then you dont have to worry about anything really, the cheesemakers get away with everything ( not that I think they have bad practices, I'm just kinda jealous because they get pretty much w/e they want, and if they dont, they will whine about it til they do ....thats a typical reaction from the French))
um sorry about my anti french side appearing there for a moment....
anyways. when you want good cheese, you pretty much get what you pay for.

In no particular order they are: Havarti (especially with dill or caraway rye),Oka, Parmesan (not from the box) on pasta, and Norwegian Jarlsberg. I like some others too but those are my favourites.
Although I don't particularly like blue cheese because I don't like tasting mould, I've recently learned that a little blue cheese in scalloped potatoes puts a really nice kick to them. I may never make scalloped potatoes again without it!
As for processed cheese, for the most part I don't even dream of buying it anymore. The only thing I like cheese slices (processed) on are burgers, but that's it. | |

Brie, Munster, Pepper Jack, and Gouda..most all cheeses, but I HATE BLUE AND GORGONZOLA..WHO WANTS TO EAT WHAT SMELLS LIKE FEET?!..I KNOW I KNOW
