Posted: 10/29/2006 3:55:35 PM | Diane, here is the recipe, I make it every Sunday and take some to work for a group of co-workers who love it and have the rest for breakfast throughout the week. You can also double this recipe. You can make this with any fruit and just alter the ingredience accordingly, last week I made it with pineapple and bananas, so I left out the cinnamon and applesauce. Enjoy.
Fruity Baked Oatmeal Prep time - 5-10 minutes Cook time - 20-30 minutes
Dry Ingredients: 3 cups Old Fashion Oatmeal 2 t. baking powder 1/2 t. salt 1/2 t. cinnamon 2 T Splenda or similar sweetner (possibly more or less to taste) Wet Ingredients: 1 t. vanilla 1 cup FF milk 1/2 cup applesauce 2 eggs (or 1/2 cup egg beaters) Optional (but highly suggested) 1 smashed very ripe banana 1 cup thawed strawberries 1/2 cup thawed blueberries
Preheat to 350 F. Mix wet and dry ingredients in separate bowls then mix together. Spread in sprayed 9x9 pan and bake 20-30 minutes. Serve as is or top with some FF milk. | |

I have had at least cereal 99.9% of every breakfast I have ever had. I used to have 2 bowls of cereal everyday, then changed to 1 big bowl of cereal and a glass of OJ and now I have a big bowl of cereal, a glass of OJ and I make my own version of a egg white mcmuffin at home.
At work on some occasions I enjoy my own version of a breakfast milkshake(half cream of wheat, half rolled oats, brown sugar and enuff milk to make it semi drinkab
I don't drink coffee and think it's a very poor breakfast alternative. | |

Posted: 11/8/2006 1:16:47 PM | gosh we have a lot of very healthy people here,me no breakfast is ermmm coffee and a fag(ciggy)I can't eat for at least a couple of hours of waking up,how can (my daughter)be hungrey the second she opens her eyes?,yes a full english breakfast is yummy,but for dinner lol, at around 11ish maybe a bagel or toast,but rarely before that,Oh did I mention my ciggys?

Breakfast is my favorite meal of the whole day, I can skip lunch easily. I tend to go portable and have bread, brie,tomato with black coffee or seasoned rice with lil fishies/chopped surimi cake wrapped in nori and green tea or miso soup in my mug. I pocket an apple for later. It never fails. On that rare occasion that I'm hung over, red bull seems to really help before breakfast I also love waffles and keep a few varieties in the freezer since I always make more than I need when my son comes over or I have breakfast guests. I can pop em in the 2 waffle maker while my coffee brews. I usually go waffle on one side, sausage on the other while I scramble an egg. My weenie dog usually ends up with half my eggs too. A japanese friend of mine hates sweet foods, so I improvised savory waffles topped with hamachi kama scrambled with eggs and a quick mushroom gravy. Sorta like the chicken and waffles I grew up on. | |

Posted: 11/16/2006 8:14:29 AM | | I think if your single and living alone it also depends a lot on what is open in the fridge. For example yesterday I had a couple big sardines (probably fish steaks) in tomato sauce with hot pepper jack cheese wrapped in a tortilla shell and microwaved because all those where open in the fridge. I also had a grapefruit that I eat like an orange, peel the skin and eat the wedges separately. Today I had a couple jalapeno hot pepper sauce and pepper jack cheese on tortilla wraps and a couple oranges. Tomorrow I'll start something new, the cheese and tortillas are done, but it will probably have some hot pepper sauce on it, cause the open can is still about half full. I hate to waste anything, that's the major thing that got me to where I am today. Not having to work and enjoying life with more than everything that I need. Also buying used stuff, learning and doing all my own repair work on everything that I own, and not being afraid to break something that already doesn't work anyway. Have a great day.
