Pasta with tomato sauce goes a long way--I know from being a student that it's inexpensive, and delicious! On a nonpoor week I'll make meat sauce. Delizioso!!

I will at most times make chili, stew or soup, because usually it makes enuff for a few meals. And you can freeze it as well....just microwave, its convenient for those nights you don't feel like cooking. There has been those times when $$ is scarce and I would just have whatever I find in the cupboard or fridge....

So glad I live in Southern Ontario and in the summer I buy all my fruits and vegetables at fruit stands when they are in season. Much cheaper than the grocery store and healthier. Can't beat home grown.

Lets be creative, beans pintos, white navy, and whatever else you like. Rice. I cook with what ever I find at that time.

Take Yellow cornbread (mix) meat of some kind, ranch style beans, some veggies.

Mix up cornbread divide in half. Pour one 1/2 on baking pan. Put meat and other Ingredients on top of first layer of corn bread. Add 2nd half of the corn bread, bake. Use Corn bread packs to give you a starting point on temp and cooking time.

Bluk 10 lbs of chicken leg-thighs.$4.90 last week. Cook-use any you want.

Pot of Pinto beans, eat out of pot when hot, save leftovers, eat till it runs out,
You can put some Sausage in it, and a few other spices ans you have red beans and rice (cook up some rice) Navy beans. Eat over white bread.

Becareful of ground Turkey, yes it is Turkey, but other Turkey parts too, beaks, feet + other stuff.

Cream of mushroom soup will add a great flavor to almost any meat.
Cream of chicken soup, cream of Broccoli.

Potato soup remember to use a little milk and a bay leaf.

Tomatoes sause, paste, Rotel Tomatoes , whole Tomatoes, Pacante sause
Cheap McCormac seasoning packets (what ever brand you want to use)

A whole lot of spices, this may cost you some money but you can buy a little each week.
TRy to avoid those with salt, like garlic salt, just by garlic powder.(you can buy real garlic too) Always have a few onions on hand.

It is cheaper to cook your own stuff, if you have the time. Try differnt things use some common sence but try it.

And you can save lots of money growing your own spices... just takes a sunny window.. go to the garden nursery and buy a small rosemary, sage, thyme, oregano, mint, whatever other spice you use often.. this will save you so much! spices are around 7.00 a jar! with growing your own, use less, because fresh is stronger.get a pair of kitchen scissors and cut off leaves as you need them.

This message is for Whitey 2 who wanted to know how long you can 'eat cheap' without it making you ill.

I grew up with 11 brothers and sisters, and always had various and sundry uncles, aunts, etc. etc. staying with us, and we raised most of the foods we ate, so cheap was the word of the day!

Now that I'm grown and a vegetarian with a teeny-tiny appetite, I have to be very, very careful what I eat. But what I do, to make sure that I don't lose muscle tone and too much protein because of my diet is eat lots of lentils (they are DIRT cheap and just boil them with a little salt, and they taste pretty good!) and get some vitamin supplements. A good B-complex, a good daily vitamin with iron, and a calcium. Folic acid, too, if you are a woman of child-bearing years.

If you eat cheap, you can always eat healthy, but make sure you take supplements!!

Pinto beans and cornbread, in the south are staples, and CHEAP AS DIRT!!! You can eat the beans for several meals, then make chili out of the rest of the beans. Piece of cake!

I'm loving this. I"m gonna try almost everything on this thread.

We ate out a lot when I was a kid, so I missed out on what my sweetie calls "trailer park cuisine". I'm finding out that I LOVE boxed mac and cheese, hamburger helper, and even spam

Every now and then I get a craving for cornbread--fresh out of the oven. YUMMMM!!

Whoever said "trailer park cuisine" (or in my parlance student food) has to taste bad??? I like doctoring up mac and cheese, or ramen noodles with various spices, and hamburger helper is a tasty treat. It's fun and a challenge to figure out how to make some of those meals even tastier, and I've had some fun results. You don't have to be rich to make great treats in the kitchen :-)

I am a student and a lover of food whether the finest gourmet goodies or just plain old good student food.

I made myself a pot of corn soup this evening. One can of chicken broth, one can of cream of corn and 2 large eggs. Quick, fast and yummy. And grill cheese and tomato sandwiches to go with it. A full meal and still have corn soup left for tomorrow. Really doesn't cost much to feed myself.

A couple of people have mentioned seperately that both lentils and rice are cheap and easy to prepare....here is a yummy quick recipe that brings them together nicely....

Curried Lentils and Rice

1c lentils, rinsed
4c vegetable broth or cold water
1/2 tsp salt
1 tbsp olive oil
2 yellow onions, thinly sliced
2 tsp curry powder
Freshly ground pepper
1/2c long grain white rice
1 tbsp chopped fresh parsley

Put lentils, broth(water), and salt in a large, heavy saucepan. Cover and bring to a boil, then lower heat and simmer gently for 20 mins.
Meanwhile, heat oil in skillet over low heat. Add onions; sprinkle with curry powder and pepper.Cook until onions are golden.
When lentils have cooked 20mins, stir in onions and the rice. Simmer, covered for 20 more mins or until rice is tender and liquid is absorbed. Sprinkle with parsley and serve.

Corn soup - yummy.

Well I like to do this:

Ramen noodles (chicken flavor) - cook the noodles and drain
add the seasoning packet provided
add mixed vegetables (peas, carrots, corn, beans -frozen or even canned I guess)

Voila! Cheap dinner in about 5 minutes.

Since we always have rice and beans in the house, I make a rice and bean dish in my large stirfry pan. It is filling and we have a lot of it so everyone can get seconds if they want.
When you feed and house 4 people on $1600.00 a month you really learn to watch those pennies.

Oh I've done that mac n cheese/tuna/peas concoction, too. It really is good.

Have also done man n cheese/cut up hot dogs/broccoli - I like that, too.

Or mac n cheese and canned chili with beans - the best is a chili I used to buy in Texas, but they don't have it in NC and I can't remember the name.

Ramen costs .27 where you are? Here it's about .12 - and often on sale for .9 (Food Lion)
