| Spinach Salad Posted: 5/20/2008 9:14:55 PM | For a quick "from the grocery store" dressing on a spinach salad, try old fashioned Catalina, that bright red one. Just use a small amount, as little as you can use to dress the salad just before serving it. That way there's no chance of overwhelming the salad with the dressing. It's good but strong. Very good with the egg and bacon variation. Another good one, but not available all over the country, is Dorothy Lynch. It's another sweet and sour and pungent dressing.  | |

fresh spinach washed and torn (if needed) bacon bits hard boiled egg(s) cooled and grated/mashed crutons sliced mushrooms a little parmesean cheese and your favorite ranch dressing and a little salt and pepper to taste | |

| Spinach Salad Posted: 5/23/2008 12:51:13 PM | Spinach Salad with Walnut Dressing Something I make... very simple!
Salad Fresh spinach washed and torn (if you like) Arugula or raddichio lettuces for added color and flavor (if you like) 1 fresh pear (I like a firm one with some crunch to it) toasted walnuts gorgonzola cheese
Dressing this is all to taste as I tend to throw the ingredients together . A good bottled balsamic vinegrette will also work in a pinch... Seasoned rice vinegar approx 1/2 cup (this is a Japanese vinegar also known as awasezu, it is a little sweet) splash of balsalmic vinegar olive oil ,approx 1/2 to 1 cup walnuts, approx 1/4 cup salt, ground black pepper and sugar to taste.
Pour the vinegars in a blender or processor, add olive oil slowly to incorporate, add walnuts, season to taste. Enjoy. | |
