Medium rare, nicely marbled so there is lots of flavor - a little bit of pepper, some sea salt - that's it. Nummy.

Bloody........................ ok well not really, I usually choose medium rare. BTW, if you have sore muscles eat some beef and the pain will be gone by next morning.... at least for me.

I like mine medium rare. The ex loved his very rare...a good Vet could have probably saved it...

I will never miss the sight of a PINK baked potato where that steak juice stuff was running all over the plate.

I miss cooking out on the grill...I never could get the hang of it.

heha I just started a thread along similar lines... that being how hard is it to cook a good steak in a restaurant...

I like it medium rare.. more rare than medium.... so, almost raw in the very center or just slightly past blue , pink to the edges and a slight layer of the caramelized/grill marked meat around the outside... left just long enough on the plate to reabsorb some of the juices and to finish that last bit of cooking so it is a touch more done than rare...

I find it is best with a bit of olive oil brushed on the steak and a sprinkling of montreal steak spice... or just some plain old kosher or sea salt and cracked pepper corns

toss it on a real hot grill for about a minute so it just releases from the grill when you pull it.. and has some nice marks.... give it a flip and do it on the other side.. then set it aside under a very light oven or broiler to keep it warm while it rests a little... another minute or two like that and it is perfect... it might not work on a thin strip steak but on a 10z or newyork steak it works well

I always order it a touch less than I expect in a restaurant.. as most places either wait too long to serve it or cook it too long... or have the grill at the wrong temperature

Message: 1/Get the grill good and hot

2/remove steak from refrigerator

3/cover with a tea towel

4/take to grill and partially remove towel
so as the steak sees the grill

5/bon appetite

Haha... I have heard something similar about making a martini...
pour the gin.. show the bottle of vermouth to the glass of gin and toss in the olive..
personally I like a bit more vermouth in a martini... but that is the ultimate extra dry martini

..I have to remove the grates in my gas grill...and just rest them on a couple pieces of steel tubing that I neatly inserted in the bottom of the grill..this lowers the heighth to about 1 1/2 inches above the flame. That's the only way..to get a nice brown on the outside..and pink to red center on a steak cut 1 inch thick or less...Lets face it..if it doesn't have a bit of "char" on the outside..ya might as well eat it raw. I also brush some melted butter..worcestershire, soy sauce, fresh ground black pepper, seasoning salt...and garlic salt on the outside of my steak before cooking..and then before flipping...You rarely need any other salt... I usually only leave them on the fire for 4 minutes on the first side..and 3 on the second...and they come out pretty consistently medium rare to medium

my favourite cut of steak would have to be strip loin or t-bone done medium rare...blood oozing from a steak cooked blue just turns my stomach, you may as well just defrost it in the microwave and throw it on a plate..yuck!!..you people that can eat it blue must have an awfully strong stomach and must mow it down blindfolded!!

outdoors girl - When cutting a grilled roast there is always juice on the serving plate. Growing up, if dad left any, we would fight over who got to drizzle steak juice into their baked potato.

I like my beef medium, pink to light red with juices. Favorite is Filet Mignon followed by rib eye.

Rare to medium rare, depending on the cook. I like it red but warm in the middle. I prefer a Porterhouse or Filet Mignon but I'll happily eat Sirloin. I like to use Liquid Smoke or Hickory Smoked Salt on mine. Grill rubs are pretty common these days and I haven't met one I don't like yet.

I like mine medium rare with a nice baked potato and caesar salad with a nice merlot. If I am doing the cooking, I like to sautee some portobello mushrooms to go with it.
