Since groundbeef is so versitile, I purchase it on sale and brown it, drain it and freeze it in a freezer bag so that I do not have to brown it before I cook. Like you, I don't want to sweat all over my supper and I get tired of salads. I do the same thing with chicken breast, cut it up, brown it til its done and freeze it. Chicken thrown in with a box of chicken rice-a-roni and several squirts of lemon juice near the end of the cooking time makes a nice quick and easy lemon chicken dinner.
Hamburger meat in a skillet with can of whole, crushed, diced tomatos and half a can of rice and half a can of water, cook with the lid on til the rice is done like you like it. Salt and pepper to taste.
Make a pot of boxed mac and cheese and throw hamburger meat in with it, I like to add a touch of onion powder so it isn't so bland.
Warm up a bit of chicken or hamburger meat with a cream soup of your choice and serve it over rice.
You can do beef rice-a-roni with hamburger meat and add a touch of sour cream.

Fragrant Chicken Curry
serves 6
2 Tbs. curry powder (I used mild yellow curry powder) 1 tsp ground ginger 1/2 tsp cinnamon 1/4 tsp ground cloves 1/4 tsp cayenne pepper 2 Tbs vegetable oil 1 large onion halved and thinly sliced (I used chopped frozen OreIda onions, about 1 cup) 3 garlic cloves, minced (I used the chopped garlic in a jar, about 1 & 1/2 teaspoons) 1 rotisserie chicken, skinned and boned (or 6 boneless skinless chicken breasts, cooked), meat pulled into chunks, 3 1/2 to 4 cups (I added 1 bag frozen chopped cauliflower) 1 13.5 oz can light coconut milk 1 14.5 oz can diced tomatoes 1 14.5 oz can chicken broth (I added 1 tablespoon dried basil flakes)
Mix spices in small bowl and set aside. Heat oil in Dutch oven or small soup kettle over medium-high heat; add onion and saute until golden, 8 - 10 minutes. Add garlic; saute until fragrant, about 30 seconds. Add spices; toast until fragrant, 30 secs to 1 minute. Add chicken and cauliflower; stir until coated with spices. Add coconut milk, tomatoes, broth, and basil. Bring to simmer; cook until flavors blend and stew is thick, about 20 minutes. Remove from heat and serve over rice.

| ANYBODY HAVE ANY RECIPES OF MEALS DONE IN A FRYING PAN THAT DON'T TAKE LONG AND ARE EASY? Posted: 7/17/2006 6:29:56 PM | I do perogies with Green Curry paste, peppers, tomatoes, basil and spinach with some peameal bacon. The perogies have to boiled, first.
1 lb. perogies (I use potatoe and cottage cheese, and they're frozen)
3/4 lbs. of peameal bacon (backbacon that's rubbed in peameal), sliced into strips
1 large pepper (red or yellow - or half and half)
half a large tomato, sliced
peanut oil
garlic/olive oil
basil (as much as you feel necessary, but don't go overboard)
a handful, maybe 1/2, of baby spinach
green curry paste
1 large skillet
1 pot
1 strainer
Take about 1/2 - 3/4 tablespoon of green curry paste and mix it into water (it won't get around the pan very well unless it's loosened up). Don't use too much; green curry has lighter after-repercussions than yellow or red, but too much will burn your face off all the same.
I keep a lot of flavoured oils, so, aside from the peanut oil and bacon fat, a couple tosses of garlic-flavoured olive oil will help a bit for flavouring.
boil water (takes about 15 minutes)
When water's boiled, drop in perogies (takes about 6 minutes)
when perogies are done, drop enough peanut oil in teh pan as needed to cook the bacon. Start frying it up; when it's partially done, throw in everything else as quickly as possible, finishing with a couple of tosses of the garlic oil. When done, serve.
the beauty of it is that you don't need a sauce; the tomatoes will react with the starches from the perogies and make the sauce for you.
You may want to garnish with cheese; I usually just use mozza, but havarti or colby's really nice, too.

That night, take part, add garlic salt, butter and parmesan cheese and eat up. Quick and easy. The next day, saute chicken breast in butter and cajun seasoning, heat up some alfredo sauce in microwave. Run leftover pasta in hot water, and Cajun Chicken Pasta Alfredo. Add parmesan cheese if you like.
Hope you enjoy. | |

Just take the things you like and throw them all in. I like to take olive oil, fresh garlic, onions, hillshire sausage potato, fresh mushrooms, zucchini, red and green bell peppers, salt and ground pepper to taste and there you have it! You can even add celery, carrots, green beans or what ever you lil heart desires. Wonderful flavors from all these blends. You can omit the meat if you like and still have a great dish.

I make something very similar to this but I also add some canned corn and a couple of tablespoons of chili powder. Turns out a bit like chili with corn and rice....very tasty.

| ANYBODY HAVE ANY RECIPES OF MEALS DONE IN A FRYING PAN THAT DON'T TAKE LONG AND ARE EASY? Posted: 7/25/2006 10:56:32 AM | Fragrant chicken? YUM! Perogies with green curry? Who woulda thought? I've been eating perogies all my life - cottage cheese are my fave - but I've never tried anything like that. Yet! Thanks everybody for these recipes - tried and true faves are always the best, and simple too. I've moved recently too, and my cookbooks are in boxes still. You've given me some inspiration, and some serious hunger pangs too! I can't wait to buy some fresh garlic and onions to start - mmmm I can already smell it. Happy cooking everyone! p.s. healthy chocolate chips cookies? I guess you mean with whole wheat and oatmeal and stuff..... p.p.s. Does anyone have any tasty ideas for using frozen cooked shrimp? | |

| ANYBODY HAVE ANY RECIPES OF MEALS DONE IN A FRYING PAN THAT DON'T TAKE LONG AND ARE EASY? Posted: 7/25/2006 11:24:21 PM | Hi Sweetie,
Have you tried making Quesadias? I think that's how you spell it.
You need two flour tortillas, a little bit of oil, hamburger (fried) or chicken if you prefer. Cheddar cheese, onions, peppers, tomatoes,, hot peppers (optional), all chopped. sour cream and salsa sauce.
Brush your pan with oil, place a tortilla on the pan (cook at about med. heat...watch because they cook quickly and can burn) sprinkle tortilla with shredded cheese, hamburger, dices onion, and other ingred. except salsa and sour cream. End with cheese again. Place second tortilla on top and brush with oil.
Brown first side, and with large spatula, carefully turn over the quesadias, and brown the other side..make sure cheese is melted and ingredients are heated through.
Place on large plate, cut into triangles, and serve with sour cream and salsa.
Prep time is about 15 min....cook time about the same.
Good luck and if you try it tell me how you like it.

A few medium potatoes peeled or whole and grated. Set between paper towels and mash abit to get rid of excess water. Use butter, oil, margrine or what suits your taste and layer potatoes in pan on medium low heat. Several minutes later cut a plus sign with spatula and flip carefully each section. A flat pan works best. If your an onion and cheese lover sprinkle a finely diced onion over cooked side and layer cheese over onions. In another pan cook meat of your choice with eggs and enjoy!

If your into hamburger meals then fry up a pound of the stuff, drain most the grease, ad one can of tomatoe sauce and season to taste. Serve on any kind of bread or bun with a vegie side dish.
My kids all time favorite; Bell peppers (cored and cleaned) carrots and celery (all sliced length wise) and grape tomatoes with a ranch dip. Use toothpicks to stab and dip grape tomatoes.

| ANYBODY HAVE ANY RECIPES OF MEALS DONE IN A FRYING PAN THAT DON'T TAKE LONG AND ARE EASY? Posted: 7/26/2006 6:14:58 PM | This is the only recipe I have memorized, and is one of my standard impress the girlfriend dishes.
1- chicken breast, boneless, skinless 4oz- cream cheese 1- clove garlic, minced basil, sage, thyme, rosemary- any combination 2 slices proscuitto, about 1/16" thick Some cotton string 1 can chicken stock Dry red wine 1TBS-Dark brown sugar
Cut a pocket into the chicken breast from the edge. Add the garlic and spices to the cream cheese and stuff the chicken with it. Wrap the chicken with the proscuitto, with the proscuitto wrapping over the pocket of the chicken. Tie it all together with some cotton string. Add equal parts chicken stock and red wine to the frying pan. Bring to a boil, then add the brown sugar. Reduce heat, and add the chicken, cooking about 12 minutes or until done, depending on the size of the breast. Remove the chicken when done and keep warm. Bring the cooking fluid to a boil, and reduce to a sauce for the chicken. Slice the chicken into 1/2" thick slices, and pour the sauce over.

| ANYBODY HAVE ANY RECIPES OF MEALS DONE IN A FRYING PAN THAT DON'T TAKE LONG AND ARE EASY? Posted: 7/26/2006 9:38:26 PM | You know, you could make some rice and keep it for days. Then you fry up some ground beef and throw them together. The juice from the beef will flavour the rice, and season it as you please. You could even fry up some potatoes and throw them in too! Holy carbs, but the taste!!!
Hotdogs in a frying pan take about 3 minutes if they're defrosted.
Back to the ground beef, fry it up and then chop up a tomato, together with some melba toast you can make something similar to a bruschetta.

| THANKS FOR THE RECIPES-PLEASE KEEP THEM COMING!! Posted: 8/4/2006 11:54:42 AM | I would like to thank all the members of this website who were kind enough to take the time and type out the recipes for the thread that I created, I really appreciate it very much and hope that you will be kind enough to keep them coming as I am writing the ones that I like down in my recipe notebook that I keep adding to and the more I get the better I like it! I sincerely hope that other members are taking advantage of this thread I created as well and getting some benefit from it, as the ideas for something to cook in a frying pan are concerned.
I like the idea of creating threads that not only benefit me personally but will be of help to others as well, so that they can stretch their dollars just like me and benefit from it, as things are getting far too expensive to buy and I think that the more we help each other the better, even if it is only in the form of recipes that are inexpensive to make! Please keep the recipes coming, okay?
