Dice 1-2 peeled potatoes (or 1/2 bag Defrosted frozen hashbrowns) 1 red pepper 5-6 sliced mushrooms 1 small zucchini diced 1/2 cup diced ham, chicken, sausage, shrimp or bacon (whatever meat you like) 1 onion chopped 4 eggs blended 1 cup shredded cheese (your favorite) we like swiss
Saute potatoes in a few tbls olive oil till browning add vegetables and meat. Stir until everything is cooked through and add eggs to pan. Let pan sit on stove till bottom is set. Add cheese and put pan under the broiler to melt cheese and the top will get puffy.
It makes a great brunch item or light supper for 2-3 people. My kids love it and you can add just about any leftover vegetables and it tastes great. | |

1 med. summer squash sliced 1 med. zucchini sliced 1 green pepper sliced in strips for color use any bell pepper, I've used a ghost pepper light green in color and a purple pepper both have good flavor. 1/2 red onion sliced in strips 5 small green or red chilies de-seeded & deveined and chopped (optional) 1 jar of prego or ragu marinara sauce with cheese 1 package of polish sausage sliced
Slice up veggies in skillet over med. heat until soft or desired texture if you like them firmer. Add sausage and marinara sauce and heat until warmed. I eat this as is because it is just so delicious, but you can serve it over rice or pasta if you wish which will also make it stretch fir days.

Posted: 7/13/2009 10:47:18 AM | | hi if you like salmon this is for you in a large fry pan a small amount of oil get it very hot fry 3 cloves of garlis salt and peppers 1 package of washed spinich fry garlic till golden add spinich to pan fry just till it wilts remove from pan and set aside wash pan add a little oil and get it hot place salmon skin side down in pan and fry till bottom is brown put spinich on top cover and lower heat cook for another couple min then add hollandaze sauce made from the mrcormick package easy to make just make according to directions the pour on top i put some herbs on my salmon when its frying but you dont have too the salmon is crispy on the bottom and the spinich is delish you can add salt and pepper to taste | |
