I'm not sure what you're doing wrong, but changing font style/color on profiles is not supported. That's probably the reason it's not working.

For every opening tag, you will need a closing one, or else the attributes of the open one will continue, unless you commence a new tag that overrides the previous one.

Your example would require a closing tag, meaning at the end of your text. Closing tags have forward slash to denote their closing.

(/b)(/font)(/font)

You can combine the color and size in one

Hence it should look like this

(b)(font color=blue size="3")chop chop chop(/font) (/b)

I've substituted the < > with the ( ) brackets to illustrate their usage and when you use the correct brackets, it should look like this.
