| Onions and crying. Posted: 7/28/2006 11:35:04 PM | though it seems you've heard several good suggestions, I'll throw another one at ya... I like to cut one end, and leave the root attached. Slice down the "grooves" in the onion, first in quarters, to make peeling the outer layer much easier. Then following the grooves in the onion, press the tip of the knife until the point is about to the center of the onion, then slice down to the board. Repeat as many times as necessary. When you are ready, you can cut the root off, and have perfectly julienned onion straws, or you can slice the whole onion in half, root to base, lay each side down, and have perfectly chopped onions.
By leaving the root on, I hardly ever cry.
Also, to contradict damned near everyone else's opinion here, the onion "gasses" are drawn to the moisture, not specifically your eyes. Put a bowl of room temperature water next to you when you are slicing, dicing, or chopping onions, and it will also greatly reduce the amount of eye irritation.

I always run the knife under cold running water while chopping onions. It helps a great deal. You have to do this a lot though, but worth it. | |

Posted: 7/31/2006 11:57:23 AM | having worked in many restaurants..well the tricks told to me by chefs were keep the onions stored in the fridge..not in the cupboard...thennewer onions have less of a tear factor than older ones... Then...cut them in half and run it under cold water...and take a break or two to run the knife under cold water as you cut them... The one I found hardest to do...but really worked...take a large sheet of plastic wrap, and place it over top of your hands, knife and onion on the cutting board as you cut it up...the "vapours" can't make their way to your tear ducts as easily. | |

Don't freeze them, freezing vegitables is never good because they always seem to loose something in the process. | |

And if its nice and juicy then run cold water over it and while still wet slice or dice with a sharp knife. A sharp knife is key, keeps juices from squirting different direction. Check it out. | |

Posted: 8/11/2006 5:33:51 PM | one thing that does matter is the actual onion, there are some that dont make you cry at all. for example i believe spanish onions dont. i use to work in a resteraunt ...cutting bags of onions, i've tried it all. nothing really works . i say just suck it up. an as for the smell... i recomend you buy a lemon, slice it an rub it on your hands. that tends to work | |

But seriously, keeping them in the fridge works well. Not sure why or anything, and also to get the onion smell off your hands (this works with garlic too) rub your hands with a stainless steel spoon and it takes the smell right off. | |
