Swimming googles that cover your eyes and nose.
yes itll look extremly silly id only recommend it if you have heaps of onions to chop.
but it does work everytime unlike freezing or holding them underwater.
Trouble is ... is it worth the embarrassment ?

Seen a chef on food network recommend to put the onions in the freezer for about 10-15 minutes before cutting them. It congeals the juices that cause the crying, so they can't turn into vapors to be released by the chopping.
Have yet to try it as I don't cook much, but look forward to checking this one out.

Funny. I used to have this problem. But it went away a few years ago. Don't know why. But I just don't have the Onion Crying issue.

I would say, get really good sharp knives, so that you cut and not saw the Onion. Thats the only thing that has changed for me over the years, is I invested in really good knives.

Now. Not even a faint problem with it.

Is it my imagination, or are white and yellow onions not that stong anymore?

Yesterday, I sliced 5 large yellow onions for shikabob, and didnt shed one tear.

I wouldnt have believed if I hadnt tried..........

When I was in a cooking class , I told my Japanese instructor about this problem of tearing when I chop onions. She told me a trick her mom told her ( although she had never tried it, as chopping onions doesnt bother her ) simply put the green stem of a spring onion in between your teeth as you chop...NO TEARS, I swear.......I hope it works as well for you !

The way to not cry when cutting an onion is to not remove the root end. Peel the onion, but leave the root end on, cut what you need from the root and no tears! If you chop the root off first thing, it releases the strongest part of the 'fumes' that makes you cry. If you leave the root in tact and cut from the other end, NO TEARS!!

Easiest and quickest way (although you might look silly) Stick your tongue out for the duration of chopping, you get a tingly feeling on your tongue but it does not reach your eyes .... works for me everytime

You cry because the volatile compounds in the onions vaporize when you cut through the cell walls and then consense back out and dissolve into solution when the fumes come into contact with the moisture in your eyes.

If you provide something else for the fumes to dissolve into, they will. A bowl of water next to the cutting board, or even chewing on a toothpick, will prevent your eyes from getting irritated.

Run water over the root end. You don't even need to peel it first.

Then don't cut the entire root completely off, peel, cut slices just up to the root end but not through it. You can usually dice it then without a problem.

I think this works because it firms up the onion (because it is drawing in the water) just before cutting it so it cuts easier.

Use a really sharp knife.

Onions harvested in spring are generally milder. Onions harvested in fall are generally hotter.

I don't even chop onions any more! They are available already chopped in the frozen veggie section of the grocery store. Just throw in a handful or two and on to the next thing...!
