how do others motivate themselves to eat healthy and still cook for one ?

Cost, taste, quality of ingredients, and it's generally faster to whip something up at home than eating out. What's not to motivate you? The only down side is dishes, but I clean when I cook so the clean up is usually minimal. Making full sized meals, and doing the left-overs thing is the way to fly for sure. I find most crok-pot recipes taste better "the next day" anyway. You can always cook for friends too. For the cost of 1 person eating out ($10-$20), I can easily feed 10+ people.
