| Spring is in the air! Posted: 3/14/2008 9:37:00 AM | Morning here at the Hunter Ranch
Been a funny morning here seems Hunter locked us in a key to release us a search for we did begin then the kids realized that the little poodle from outside was gone chaos erupted with kids in a panic I was thinking what else could go wrong we heard a whimper out the porch window we did look this poodle who had escaped a thorn bush his poor fur had took limping was he badly entangled was thorns in his leg I could hear crying from the other dog help my friend he did beg finally I found calmness a key came to my hand pretty quick opening up the front door I did was greeted by a friendly lick in this sweet lil poodle came I became to rid him of these thorns quite careful was I for I did not want his precious skin to be torn into the bathtub my kids took him right away to get him all clean giggles of play vanished all of the morning screams peace has again come now comes afternoon Wabbit is thinking Hunter can't get home too soon!

A bit of the baking I must address now There are many cornbreads Now, don't have a cow.... There are the sweet ones Done is a square Some just don't like them But I do, I swear! Cornsticks and fritters Are eaten with fried fish... Or when ever, if you wish! My personal favorite, If I may rant.... Was handed down From my Great Aunt A skillet you'll need Of cast iron indeed And bacon cut smallen To fry at the bottom The batter you make Thick like a cake With buttermilk & white cornmeal, Minus the silk! Don't drain the grease But pour in the batter with ease *Pop in the oven* Till you smell lovin' Turn it out on a big round platter Cut in slices..or break... It really wont matter! Serve it beans or any ol' dish Spread with butter or jam if you wish If you really want to sample a tilt Break some up the next day In a cold glass of milk! (Ahhh...childhood)

Posted: 3/14/2008 12:22:36 PM | Sweet are memories shared by friends warming a heart like cookies fresh out of the oven may they come with no end it appears to me that corn bread I must learn to make for it is a staple food of southern people at a table for dinner it is one they wish to partake so send your recipe to Wabbit please hoping this corn bread you speak of I will be able to make with ease.

Smile do I as I sit here remembering yesterday you and I watching all of our children at play to a beautiful park we found ourselves going boys splashing through creeks a search for snakes had them both glowing squeals of laughter could be heard from children on swings a vision of a mama duck sitting on her eggs within a tree truly made my heart sing ringing of an icecream truck something I had never seen before always new sights for my eyes to see each day here in Alabama brings more upon our return home to your front step we went with coffee in hand purple with pink clouds illuminated our sky peacefulness I felt with no demand I continue to smile as I remember you teaching my little one to feed the squirrels crackers you gave her to place beneath the tree poetry then we all began to give a sweet whirl only five years old is she yet her soul speaks of romantic love remember how she kept telling us to kiss darling a sweet soul she is sent to us from above as night came on quickly children with a movie to watch were finally at rest dancing we made plans to go I dressed for an evening ahead with great zest excited was I truly to finally spend some time with you alone so hand in hand together into night we both did roam......... | |

Alabama, a place of beauty it's true as we travel these roads side by side my eyes soak in this wonderous view
Skies so blue they embrace a soul wildlife to be found to see all of these lands truly is my heart's goal
Side by side with you as my guide I take these lands into my mind envelope me do they become such a sweet part of who I am inside. | |

Posted: 3/18/2008 10:43:34 AM | I don't blame you for staying where it's warm the damp rainy weather up north is not good for the spirit You started me thinking about cornbread the other night a long time ago before I was married and had children I use to go with my ex to a restaurant in Toronto called the Underground Railroad the food was right out of the deep south and the cornbread was mouth watering delight when you master the recipe make sure you share it with your fellow Canadians and thank you for the old memories of my youth. | |

| When the words just come........ Posted: 3/18/2008 9:57:19 PM | My Canadian Gal Pal has found her way into the South and she shall stay because my heart is with her true I share a secret recipe or two:
Fried Corn: Select the freshest eating corn, husk and silk about 8 to 12 ears. Cut from the cob using a sharp knife, cutting off only half the depth of the kernel. Using the dull side of the knife, scrape off the remaining pulp and juice. Scrape only downwards. For 5 cups of corn; heat 1/3 cup butter ( or half butter, half bacon fats) Add corn and some water, until consistency is is like thin gravy. Salt to taste. Simmer and stir for about twenty minutes until quite thick. Good with fried chicken.
Corn Fritters: 1 1/2 cups flour 1 tsp baking powder 1 1/2 tsp salt 2 eggs beaten 1/2 cup milk 2 cups fresh corn kernels
preferred frying fats
Sift flour, powder and salt
Mix eggs and milk
Blend together until smooth Fold in thoroughly drained corn Heat skillet with oil/fats to 375 Drop by the teaspoon and fry until golden. Scoop out and drain on paper towel May be served with syrup or favorite dressing
I am not telling how this very northern Canadian gal has a Great-Grandmama who gave these recipes. I only hope that you all sit and enjoy. Your happiness will be my grammies pleasure.

| When the words just come........ Posted: 3/19/2008 7:45:56 AM | We are on the road to a man's stomach (We southerners and wantabe's), Who wouldn't? I now will add one of my favorites It's really too easy, just don't let him know it!
Aunt Martha's skillet cornbread:
Bacon Buttermilk 2c white cornmeal 1c flour 2 tsp baking powder 1 tsp baking soda 1 1/2 tsp salt 2 eggs 2 tbl veg. oil 1 tbl. sugah, ya'll 10 inch cast iron skillet, well seasoned! (If'n you don't have one, borrow one..the seasoning takes time!)
Heat oven to 375*
Cut bacon into 1 inch peices, enough to cover bottom of skillet in one layer (just make it crowded!) Fry the bacon till well done, do not drain and don't burn them please! lawd a' mercy!
*While (or before) the bacon is doin' it's thing, in a bowl, blend the dry ingredients. *In anothah bowl, beat eggs and oil with a fork (don't whip them, they haven't been bad!) *Add eggs and oil to the dry Ing. (not stirring yet, darlin') *Add enough buttermilk (now stir with a fork, hon) to make batter thick but pourable. (don't you let yourself get too carried away with the stirring) :) *Now turn that beautifull batter (slowly) into the HOT skillet on top of all that wonderful fried bacon! (Let it sit there to crisp up 30 or 40 seconds) *Now you pop the skillet into your pre-heated oven! (I know, the waitin' is hard but give it 30 to 40 minutes just till the top browns, bless your heart! Careful, do not evah over bake...)
*When done, turn cornbread out on a big round plate and let it set a couple minutes...(we have always cut into triangle slices....big slices!)
Darlin', have your butter and strawberry jam ready!
Tip...if you make your batter early, before bacon is done, it may thicken up. Just add a bit more buttermilk. Soon you will know just what it is suppose to look like..you will be a pro southern cornbread makin' fool!! | |

One year ago was my first visit here a first flight lizard farms southern suns river strolls flowers placed in hair pecan ice cream so many things to my heart I will always hold quite dear.

These make me smile I hold all except one never fried a green tomato always ate them when ripened by the sun of this I will have to try see if fried green tomatoes I will like to eat heard so much about them Wabbit will have to try this southern treat.

Wabbit's big day is very near No, not the wedding, silly Let me make it clear Spies have been reporting A massive amount of eggs Have disappeared from under hens Of which those chickens laid And in her spare time time, (Yeah, she has a few) Has been making baskets...! ...In Alabama...! Right along with her crew! And a right many tablets of colors Have vanished! Here's a few: Green, purple, orange,yellow, pink, Red and blue! Paint brushes, ribbons & Chocolate look-a-likes, It's thought they are being prepared for lil' tykes I will report more, as I hear the news But the way it looks now Wabbit's fix'n to cruise!
