| BBQ sauce suggestions.(homemade) Posted: 7/13/2007 8:34:39 PM | OMG, please tell me ( imean this in a nice way) you don't put some kind of sauce on a porterhouse steak, or any steak for that matter. Please tell me you don't. Garlic pepper salt combo. Sear it 'til it quite shaking then eat, leave the sauce for ribs. Take care all.

Cook for 20 - 30 minutes.
But I haven't made my own BBQ sauce since I discovered Sweet Baby Ray's. It's a killer sauce. Taste a lot like my own. But only the original. The other flavors aren't near as good.

| BBQ sauce suggestions.(homemade) Posted: 7/14/2007 7:34:28 AM | Bottle of ketchup (or prepared bbq sauce of some kind) palm full of brn sugar 1/2 palm full of garlic powder (not garlic salt) some chipotle powder ( chef pauls if you can) 1/4 lb marg. 1 cup cold coffee 1 can real coke (not diet not store brand cola real coke) 1 bottle JD ( 1 cup for sauce and the rest for sippin) some salt (to taste)
Simmer in a pot til starts to thicken adjust taste by adding more or less of the sugar and chipotle powder or coke.THis is a dark meat sauce with a dark taste, great on ribs, slow beef or burgers. For light meat change coke to sprite of 7-up and no JD but a little good tequila is nice. When I Q I keep a pan on the BBQ to dip meat into as it thickens I add more coke. And I agree with others do not sauce good steak I rub mine with butter salt and pepper then finish with a light brush of melted butter and coke (but very little) then let rest for up to 10 minutes
Cheers fstfrdy | |

| BBQ sauce suggestions.(homemade) Posted: 7/14/2007 7:57:01 AM | | Get a large pan pour in one bottle of ketchup, one two liter of coke, some lemon, smoke flavoring if you want, put in meat and bake in oven until done. Some other ingredients are celery, onion, paprika if you want. ENJOY | |

| BBQ sauce suggestions.(homemade) Posted: 7/14/2007 2:59:00 PM | My favourite
1 cup catsup 1 cup red wine vinegar 1/2 cup (packed) brown sugar 1/4 cup molasses 1-1/2 tsp. liquid smoke (hickory is nice) 1/2 tsp. salt 1/4 tsp. ground pepper 2 cloves garlic peeled and finely minced 1/2 small onion peeled and finely minced
Combine all ingredients over high heat and whisk until smooth. Bring to a boil and then reduce heat and simmer, uncovered, 30 - 40 minutes or until sauce has thickened.
Note: I usually put the juice of a couple of limes in this as well as some chipotle tabasco to give it that "south-western" flavour.
|
| BBQ sauce suggestions.(homemade) Posted: 7/14/2007 4:03:46 PM | Man where is an old southern man or woman when you need one? lol
I usually buy mine, but that's really because i live in the south and barbecue sauce is everywhere. It seems like everyone makes their own and sells it as a side business here.
I just recently bought one (are you ready for this) at a wine tasting where they actually paired the sauce with 5 or so wines. This one was a vinegar based BBQ sauce though. No tomato products in sight. It paired together well, especially with a mellow red wine that they served.
Cool huh? | |

| BBQ sauce suggestions.(homemade) Posted: 7/14/2007 4:35:44 PM | its going to sound wierd but trust me as im a bit of a mad scientist in the kitchen measurements arent exact because i dont measure but it tastes nice when its done so kind of do it till it tastes right to you
a bottle of catsup about 1/4 cup balsamic vinegar 2 or 3 tablespoons of crushed garlic lots of chili powder 1 cup of apple juice(thats the trust me part) 2 tablespoons of lemon juice a teaspoon of liquid smoke 2 tablespoons of good mustard 1/2 cup robust molasses a splash of jack daniels if you feel like it
combine everything but the molasses over low heat until the water from the applejuice evaporates (like your making a reduction-fancy cooking word of the day) taste and reseason if necessary .if your using this sauce on the grill reserve what you need to baste the meat while grilling.then add the molasses to the remainder of the sauce( because the sugar in the molasses will burn on the grill and give it a nasty taste, and nobody likes to eat charcoal)simmer the rest of the sauce with the molasses in it over low heat for a 1/2 hour or until you feel like it.unbutton the top button of pants and commence eating.

| BBQ sauce suggestions.(homemade) Posted: 8/1/2007 6:31:28 AM | A real killer one, made popular by a restaurant in Montreal, that's a legend for their pork ribs. I once brought an American friend there, who was a huge BBQ fan, and he was a little doubtful (being from the South) , that any Canadian could make good ribs.
( Can't say I blame him, to be honest)
I took him there, and he was quite impressed. There's always a long line up at their door. As a return for the favour, he introduced me to the fine art of drinking bourbon.
Here's the "secret"
Title: Bar-B-Barn Ribs Categories: Pork, Barbecue
Yield: 4 servings 2 lb Ribs, Parboiled 2 c Brown Sugar 1/2 ts Salt 1/2 ts Paprika 1/2 ts Cinnamon 1 c Apple Sauce 1/2 c Lemon Juice 1/2 ts Pepper 1/2 ts Garlic Powder In a heavy saucepan, mix apple sauce, brown sugar, lemon juice, salt, pepper, paprika, garlic powder and cinnamon. Over medium-high heat, bring the sauce to the boiling point and continue boiling for one to two minutes. Place parboiled ribs in an ovenproof dish and brush liberally with the sauce. Bake for 45 minutes at 350'F. Turn ribs and bush underside with remaining sauce. Continue baking for 45 minutes. Serves four. From The Gazette, 90/12/19. Bar-B-Barn ribs are a Montreal favourite.

| BBQ sauce suggestions.(homemade) Posted: 8/22/2007 9:52:30 PM | Good BBQ is simmered for hours to develop the favors.
This is my Personal BBQ that I've only shared a handful of times to close friends lol.
Spicy Guiness BBQ 1 bottle of Guiness (Stout or Extra Stout) 1/4c Fine minced Celery 1/4c Fine minced White Onion 1tbsp Fine minced Garlic Apple cider vinegar Cayenne pepper Brown Sugar Molasses Ketchup
Sweat your garlic, celery, and onion over medium low heat until translucent. Deglaze this with the whole bottle of Guiness. Now I'm a chef so I never measure sooo add ketchup, vinegar, brown sugar, molasses and about a tsp of cayenne pepper. Simmer over low heat for 2 or more hours and continue stirring and tasting. The favor profile should come across with the Guiness at first with a touch of sweetness and then you should feel the punch of heat from the cayenne. Good luck with this, I've never had anyone not blown away by it :)

| Award winning Cornell University chicken BBQ sauce! Posted: 9/1/2007 4:23:17 PM | You need to make this on the stove with a good mixer. 2 cups vinegar (I like cider) 1/2 cup oil ( I like olive) 2 eggs 2TBSP chicken bullion 1/2-1 TBSP salt (bigger peices more, smaller less) plenty of pepper cayanne or hot sauce optional
Beat eggs and set aside Heat all but eggs on stove on low to medium heat till almost hot to finger touch while mixing. When mixture is hot but bearable to finger slowly add egg as you mix on high. As the mix gets near boiling, without letting it boil, it should thicken up. Just beat the hell out of it. If it doesnt thicken much it'll still work. Marinate chicken as you get the BBQ ready and use a brush to baste. You won't be dissapointed! It's a little messy but you won't be able to stop eating it. Peter

| Award winning Cornell University chicken BBQ sauce! Posted: 9/2/2007 4:20:41 PM | Not trying to steal anyone's thunder, or quite sure how to do this, but here's one that isn't cheap to make but it will knock your socks off. It's quite long. 2 quarts catsup 1 quart mustard 2/3 cup Barbados Jack (or other hot saquse) 3/4 cup fresh horshradish 2/3 cup Tupelo honey 1/3 cup Tabasco sauce 1/3 cup liquid smoke 2/3 cup lime juice 1 1/4 tsp dill seed 2 tbs ground musgtard 1 tbs sage 1 tbs celery seed 1 1/4 tsp Cayenne pepper 1/4 tsp whole cloves 1 1/4 tsp mint leaves 1/4 tsp lemon peel 1 1/4 tsp thyme 5 oz Southern Comfort 2 tbs salt & pepper mixed 5 oz Yukon Jack
Mix catsup and mustard in a very large soup pot. Slowly add other ingredients while you're stirring. It's best to use a mixer on slow speed. After you've completely mixed everything, put the pot on the stove on the firwt notch above warm and let it cook three or four hours, stirring every 15-30 minutes.. You'll have a lot of sauce, but your friends will gladly accept any that you offer them.

| BBQ sauce suggestions.(homemade) Posted: 10/17/2007 9:02:16 PM | Thanks for sharing that one, Montreal Guy. I made those for supper tonight (recipe on msg 36) and they came out great! Fantastic superb eats!
I skipped the garlic (temporarily out from making garlic mashed potatoes)and halved the pepper. I am considering changing it to add some cornstarch to perhaps get it to cling to the ribs better as it does have a tendency to drip off.
Sweet n tangy and the lemon apple flavors were a pleasant variation from the regular tomato based BBQs for the fourteen racks of baby back ribs I bought earlier this summer. I was really getting sick of regular sauces and this was a welcomed change!

| BBQ sauce suggestions.(homemade) Posted: 10/18/2007 3:59:23 PM | Well, heres a very simple yet very effective method i picked up on holiday in Butlins Skeggness. I mean this was going back years ago.
All you need is:
Tomato ketchup
HP Brown sauce
and a splash of Malt viniger
Just mix the ketchup and brown sauce together to your desired taste and then add a splash of viniger to give it that little bit of bitterness.
Trial and error is best so start of with samll quantities and add a little till you get your desired taste
NEVER FAILS | |

| BBQ sauce suggestions.(homemade) Posted: 12/10/2007 1:15:16 AM | Home made chipotle BBQ sauce.
1. Ketchup 2. Brown sugar 3. Honey 4. Red chili flakes 5. chipotle in adobe 6. Kosher salt 7. Fresh ground pepper 8. Onion powder 9. Garlic powder 10. Tomato puree 11. water
Here are the basis of the ingredients that make up this sauce. The exact portions of each depend on how much you want to make. When I cook, I cook everything my feel and do not use measurement unless it's baking..
Combined the dry ingredients together in a bowl and mix together. Add the Ketchup, tomato together in a sauce pot and bring to a boil. Add you dry ingredients and reduce heat to a simmer.. Cook sauce to reduce by a 1/4 or until thick.. Add water to loosen sauce and cook until it thickens to the consistency that you like..
I hop you all enjoy this sauce as it one of my Favorite that I use with all the smoked meats that I make and has been a success in the restaurants that I have Worked with,
