you lucked out with the mayo...commercial mayo has enough preservatives in it to keep it almost indefinitely...
real mayo on the other hand contains raw egg

How about products with those coded expiration dates? How does one decode them?

I worry about few things and just use my common sense. Oils are about the only thing that go bad around here so I added a vit E capsule to the last bottle of olive oil I bought and chucked it in the frig for good measure. I generally use very very little oil so it tends to go bad before I ever get to the bottom.

I have vinegars around here from the last millenium. Some of my own wine vinegars. If it hasn't been sulfited and stored properly it only gets better with age.
