What if a meatloaf contained more ingredients of plant origin than meat itself We called it veggieloaf in my internship (Loma Linda Univ Med Ctr--all vegetarian school), also pecan loaf (which was to die for wonderful), lima bean loaf, whatever loaf--what ever was in it could have been named. I don't know if I still have some of those recipes around--I might. if you want them contact me and I'll look for them.

It's a jelly roll type meatloaf. I mix... 2 lbs ground beef 1 package dry onion soup mix about 3/4 cup seasoned bread crumbs 2 eggs Make 1 package stuffing mix cooked and cooled. I add the following to the water before it comes to a boil. 1/2 cup diced cerley 2 oz sliced mushrooms 1/2 med onion chopped and a half packaged frozen chopped spinach thawed and darined Mix the ingredients for the meat loaf and spread it out on a sheet of plastice wrap or foil. About 12 inched long. Spread a little more then half the stuffing on top of the meatloaf mixture. Roll the mixture up starting at the narrow end by holding the plastice wrap to pull it over. The way you would roll up a jelly roll cake. Lay in a pan with the end side down and pinch each end to seal. Bake at 350F for 1 and a half hours. I put the extra stuffing mix in the frezzer to use for stuffed chicken breasts another time. You don't have to add the veggies to the stuffing mix if you don't want to, I do because we like the extra veggie favor. | |
