Mmmm. Breakfast is my alltime favorite meal. Plus I've been a breakfast chef for several years now. Yum. When I poach my eggs I don't add any vinegar or lemon to the water. If the water is at the *almost* boiling point that is the moment I add my eggs, right from the shells into the water. Works perfect for me each time.
I love to grill the English muffins with butter in a pan. Then have some pesto sauce on the bottom with fresh shrimp. Then of course hollandaise. Mmm. Knorr instant works well and tastes good if your in a hurry, or just don't feel like making it. I add a bit of fresh parsley to it. Then top the eggs covered with hollandaise with more shrimp. Mmmm.
If you happen to have a jar of sundried tomatoes add a few of those also. Mmm

Served over Na'an bread. you have to fold into quarters to get the size and the lift of an English muffin
