I have decided though that maybe normal plain flour isnt right. The texture of the coating just isnt right(even if its not the right recipe yet and im not using a pressure fryer). so im going to experement with some other flours.
As for the sugar, I have tried with and without sugar and the sugar defenatly adds the colour from the caramisation(im really sorry about my spelling). But I agree that normal everyday sugar cant be right, Im going to try it again with caster sugar and iceing sugar and see if that makes a differnce. | |

Reread my post about the method the asians use -- its far superior to most of the american breading/battering techniques I have tried.
I'm definitely with you on this, raerae, it just aint worth the effort. But if some one is doing it for fun and never really expects to duplicate it and learns in the process then they are a better cook for it. But methinks the boy will need a prescription for Zocor or Lipitor to go along with it by the time he is done with this 'experiment'! | |

I can't eat KFC anymore but like their chicken spicing...we'll get it...or get close.
I got the extra crispy thing down and it don't take corn flakes, instant potatoes or anything like that.

Unfortunately I am still working on my cholesterol numbers from the two years I had the FryBaby(tm) out. Made Lard fried fries until my triglycerides hit 2090 after having normal numbers the year before. I knew better but did it anyhow. Too bad I didn't document it like Morgan Spurlock! Under 400 now... slower going getting them back down then getting them up!
I eat KFC about once every two years, if that. Stuff doesn't even tempt me... except the honey BBQ wings!
Color me green with envy, I will be celebrating if I ever get back down to 97 and I'm younger than you! Been great about getting my regular aerobic excercise in lately... biking.... I think the hail storms finally stopped I should go out tonight. | |

genuine KFC secret recipe 2 cups flour 1/2 tsp salt 1/2 tsp thyme 1/2 tsp basil 1/2 tsp oregano 1 tbsp celery salt 1 tbsp black pepper 1 tbsp dry mustard 4 tbsp paprika 2 tsp garlic salt 1 tsp ground ginger 3 tbsp MSG (Accent) Mix all ingredients well in a large bowl. Dip chicken pieces in beaten eggs Then turn them over in regular bread crumbs (commercial) Finally plunge them in the flour-spices mixture (above) Heat oven to 350 degrees Place chicken in a tray and cover with foil (shiny side out) Cook 40 minutes. Remove the foil then cook for another 40 minutes Baste lightly with oil 5 minutes before the end Let stand 5 minutes and serve.

I'd skip the MSG and I think they are off not having Sage in it. Unsure about so much paprika(the color would surely be noticeable if the real stuff had this much in it), dry mustard, and celery salt.
But notice two ingredients -- celery salt -- remember we were talking about needing a SEED? Celery salt is salt with ground up celery seeds.
Also notice the ginger. One of the baking spices I was alluding to earlier as a possibility. Here's some other links you can check out for more ideas:

Here's another one, with sage:
1 tablespoon rosemary 1 tablespoon oregano 1 tablespoon ground sage 1 teaspoon powdered ginger 1 teaspoon marjoram 1 1/2 teaspoons thyme 3 tablespoons packed brown sugar 3 tablespoons dry minced parsley 1 teaspoon pepper 1 tablespoon paprika 2 tablespoons garlic salt 2 tablespoons onion salt 2 tablespoons chicken bouillon powder or 4 chicken bouillon cubes, crushed 1 package lipton cup tomato soup mix
dunno about the last ingredient but it sounds good with the rest of the ingredients except they should be powdered and the amount of the pepper is obviously way low. Like I have said in many a thread before adding bouillon always makes a recipe better so maybe its a better recipe.
Frankly, these days I just drown the chicken in off the shelf poultry seasoning and fry it up in extra virgin olive oil. May not be quite KFC but it tastes good to me. I never could tolerate much of the deep-fried foods. Two pieces of KFC and my stomach starts feeling queasy. That's my limit, two pieces. It always has been, come to think of it.
Also, here is another hint for ya, if you don't have powdered spices buy them in the broken up pieces, they usually have more essential oils which means better flavor, higher quality at the time of actual usage. Then take a coffee grinder/spice grinder and powder them yourself. You might even add 2 T of flour so that any essential oils that escape get captured by the flour. Which will later be mixed into your bigger batch, of course, and better distributed this way.
Essential oils tend to be rather delicate -- they escape easily. Its where the little extra care of coffee, tea, and spices give far superior results.
But when you get a respectable recipe cobbled together from all this research I expect you to share it! Then I will make a low-fat baked version from that recipe that my stomach can tolerate. | |

I've tried that second recipe you posted. Brown sugar doesn't like frying and the chicken browns too quickly. The tomato soup recipe I'm not sure where they got that. I think that first recipe might be close.
Bought the chicken today. I will begin the mad scientist experiments this weeked. Gotta break out my mortar and pestle, down here they don't sell Rosemary in powdered form and I don't have any clue if there is a spice store down here....
That's one of the very few things I miss about Detroit, the Rafal Spice Company in the Farmer's market. If it's a spice of any kind, they have it.

They bore me, the only spice mixture that really sounds interesting to me lately is making rootbeer from scratch. Martha once recited the 14 ingredients from the top of her head and I wish I could remember them all. I would like to make a stronger, less sugary root beer. You know, one with real boldness, real body and that nice malty aftertaste that also keeps a thick head.
I have been hung up on root beers for years. Lately when I go to the state fair I buy different ones from all over. The old time one sold in the heritage village told me it had anise in it. It was pre-root beer. Sasparilla.
Then another place I had Birch Root Beer... they claimed real birch bark in it. 1919 makes a german root beer which has been the most reliable for years now. Most of the other companies come and go. Locally I get IBC which I think is a ripoff brand of IPC which was pretty good stuff. Not quite that great draft quality like the keg drawn stuff at the fair, but close. I wonder if I could persuade a local bar to stock a good quality root beer in kegs. Maybe push it as a gimmick for the non alcohol drinkers as well. Famous Dave's might... the one near me is sort of two fold, they have the family section on one floor and the bar and live music on another. I am jonesing for some high quality root beer! Who can hook me up? 
So I find you can buy the extract already made for you but I think it would be fun to play with the spices themselves, have ultimate control, and see if I can't come up with a better product. What ingredient gives it that malty taste? Malted barley extract? I've always loved that malted taste.
onesimpleneed, I would love to hear this extra crispy method you have going that works without the corn flakes. PM it to me if you don't want to share, I'll keep it a secret. I promise.
If you are serious about this thing, I still think you should start off with the off the shelf poultry seasoning and add to that. I know that is not what I would usually say but my heart just isn't in it, my heart's lust is consumed by root beer. Add a bunch more pepper and then swap out some of the exotic ingredients in smaller mini batches. The ginger, the clove, the anise, in very minute amounts.
Yeah, unless its funnel cakes I don't like any sugar in my fried recipes, it just gets too brown too fast. You could get around that by frying it at first and then finishing it in the oven but I try to avoid extra steps if at all possible. Why use it in the first place?

Well in between a little ...okay in between a lot of ... ...
This "experiment" is getting expensive. Spices are really expensive nowadays. Not quite as bad as coke, but damn near up there...never did get the whole coke thing...Evertime I tried it I ended up sneezing...I'd snort it but the bubbles always made me sneeze...wait...what?
So, two chicken wings and 2 legs later...I can tell you what DOESN'T belong.
Celery Salt? Nope...put that in the first batch and the chicken ended up tasting like wallpaper paste...it cancelled out everything else...
Chicken Boullion? Nope, in or out, I can taste no difference...
That KFC chicken has some aromatics going on....now one of the most aromatic things as far as a spice goes...allspice. I was almost certain it was in there. Problem is, add allspice and the chicken goes a funky greyish when fried...so its out too...
I am sure now its gotta be some sort of most of the following:
1. Pepper 2. Cayenne Pepper 3. Salt...ya think? 4. Tarragon 5. Rosemary 6. Ginger 7. Cinnamon 8. Sage 9. Thyme 10. Oregano 11. Onion Powder 12. Garlic Powder
I know sugar is out because of the point at which it turns dark brown...you can't cook chicken using a frying method and have sugar...just look at a candy thermometer...it tells you everything right there...
Now the funny thing is, the two spices I meant to grab today and didn't, doesn't seem like it "should" belong, but after frying, there needs to be this strong aromatic...
Nutmeg and / or cloves...since allspice is out...
I'll pick those up tomorrow...
I've got to go to the pub...one recipe I have down pat is a whiskey infused liver ...

I've got it real close...
There is 1 aromatic missing...and I'm beginning to think that you really do have to pressure fry to get it...since I'm not stupid enough and could never drink enough to use a normal pressure cooker as a pressure fryer indoors, tomorrow I'm going to take a pressure cooker outside and try it.
Cloves or nutmeg is the only thing I can think that is missing because there is an almost "flowery" taste and smell to KFC.
There are only a few things that fall in that category and I thought allspice was the answer but it really messed up the color.
There is something about the combination of rosemary, ginger, cinnamon and some of the other spices...
I'm wondering...is salt a spice? If we take salt and pepper and take them out of the 11 spices...not take them out of the recipe but keep them in addition to...
I thought I remembered reading somewhere about the fact they wanted to throw people off so they claimed 11 when it was actually more or less, but if it is less, I am not sure yet what to remove....

I can't put my finger, nose, or tastebud on it...allspice was the shiznit...it made the whole thing taste right, I tasted the spice mix, the spice mix with the flour...I didn't enough to lick a raw piece of chicken once it was coated...
But it was not visually right out of the fryer...
The other thing I'm thinking is that they cheated....a few years back I tried to re-create my Grandmother's secret recipe and was told it was only 5 spices and I threw in some Chinese 5 spice....
So it is real peppery...I'm still trying to figure out peppery without massive amounts of pepper...
There must be something to the spices as the cost of the KFC has gone way up...soon, I can get a taste of a breast cheaper at the uh...
