| worlds easiest peanut butter cookies Posted: 5/14/2007 3:42:48 PM | O-K...so I whipped up a batch of these cookies this past weekend and they were a huge hit.
I usually don't like to fiddle with recipes the first go round as it seems insulting to the original chef, but I couldn't resist this time.
I used 1/2 cup brown sugar & 1/2 cup powdered sugar instead of 1 cup granulated sugar and added a teaspoon of vanilla. I also broke a Cadbury bar into squares before tucking it inside each cookie.
Apparently I have to make them again soon or risk losing a few friends. lol
*FYI: I found that 10 minutes @ 350 degrees was perfect and they needed to be cooled on a wire rack to firm up a bit; they were moist and chewy from the first cookie to the last though! | |

............I am curious though, what made you use powdered sugar? the brown sugar I can see, it would change the flavor and texture and presumably be a little healthier for us....what does the powdered sugar do? just curious......... | |

Add peanut butter and salt. Stir in flour and soda sifted together and mix well. Form into small balls of dough and place on greased cookie sheet. | |

I bake pretty regularly but lately my peanut butter cookies have been coming out, well let's just say not well. Very chewy and almost elastic-y. I'm wondering if it's the peanut butter i'm using - too much oil maybe?
Anyone else ever have this problem? Any thoughts on how to fix it. Used to do the same recipe and didn't have the problem. And yes I've tried three different peanut butters, so really at a loss for the solution.
Any suggestions are appreciated. | |

I just made these cookies yesterday to take to a last minute New Year's Day dinner at a friend's mother & dad's house.
1. I did spray my cookie sheet lightly with cooking spray, but I'm not sure it was necessary.
2. Rolled into a ball and flattened into a "thick patty".
3. 350 for 8 min.
FYI...made 23 cookies cuz that's all the Hershey's Kisses I had left... | |

My friends mom would make them every christmas and I would always get a tin of them from her.
After years, i finally started making them myself. But only for christmas. Weird but hey if I ate them all the time, that would be boring.
