| Avocado Recipes & Uses Posted: 5/10/2007 7:17:05 PM | Here's a guacamole dip recipe that has scored nothing but K-Os with friends & family:
-2 avocados (remove skin and pit) -4 green onions -3 cloves of garlic -juice from 1/2 lime (fresh) -1 tsp cumin powder -1 tsp coriander -1 tsp salt -2 jalapeno peppers (fresh, chopped, de-seeded) -2 fresh tomatoes
Every time I make it, I keep adding more jalapeno so that people will consume it more moderately, but flaming hot or not, it always vanishes quickly... 'Cept now people complain about fire coming out of their ears  | |

One of my favorite salsa's is a fruit salsa made with melons, grapes, pineapple, mango, red onion, and avocado, so I imagine it would also be good in a traditional fruit salad. Never thought of it, but I will now.

Ok, tried the avocado with sugar. It was ok, but not something I'd go gaga over. I'd rather just keep eating the avocado straight from the hull with nothing on it. I love it that way. But I'm still gonna try it in fruit salad. | |

Gald you tried it at least. I always found it to be best with pure hawaiian cane sugar, but you can't get it in the states. Next time you do a fruit salad...throw an over ripe avo in...you won't regret it. Citrus and avos go well together. But the sugar and Avo wasn't bad..eh?

The guacamole recipes here sound tasty but they're not authentic. Real guacamole is avacado mashed slightly in a mojahete (course basalt morter) so as to preseve some texture mixed with eqial parts salsa fresca which is 4 plum tomatos diced into small cubes, one small onion, ditto, 2-4 chili serrano seeded and diced (you can use jalapenos if you're a wuss) a small bunch of cilanto chopped and a bit of salt. You can add a bit of lime juice.
Neither leaving the pit in the guacamole or adding lime juice stops it from going brown. Eat it immediatly preferable with freshly made wheat tortillas - it does not keep at all and cannot be frozen.
The "g" in "guacamole" is pronounced as an "h" by the way. | |

You're right about the guacamole. My mentor and confidant is Hispanic. She has turned me on to so many foods that "mama" used to make. Her guacomole is made exactly as you said. But she uses green onion. She will often lay the serrano's on top rather than dicing it, because of us wusses.
She pronounces the "g" as "wh" whaucamole.
I was at a sub shop here a few months ago called Deli Town. The guy in front of me asked for a #10 on "Gel Ap-N-O bread" (jalapeno) It took me a few minutes to realize what he was saying, but the sandwich maker didn't miss a beat. He must be used to that mispronunciation. | |

Anyway, I always put a shot to tequila in my guacamole. Sometimes I like to make a hot guacamole and I'll add some habenero peppers to it. Always a ton of cilantro though. I also like to make a sandwich spread with avocado, mayo, mustard and a sprinkle of "slap your mamma" seasoning. | |

| Avocado Recipes & Uses Posted: 5/11/2007 11:58:41 PM | I made a Cobb Salad for dinner tonight; instead of Bibb lettuce, I used this mix I had never seen before--"fresh herb salad" (mesclun, baby chard, arugula, frisee, radicchio, parsley, dill, cilantro, etc.)--it was WONDERFUL if you can find it.
And on it, I put bacon, avocado, tomatoes, green onions, hard-boiled egg, bleu cheese, black olives and a bleu cheese vinaigrette. I'll still be eating it for the next week or two.
I always freeze guacamole and have never had a problem doing so; of course, it's not as good as fresh, but it works for me on a taco or taco salad.
But then, I freeze absolutely everything.

I have used on hamburgers, yum! They have been on sale lately so take several and just chop up with a fork, had a pepper chopped, onion and tomatoes all chopped and use as a dip or a topping. | |

For each serving:
1 small ripe but firm avocado, peeled cut into 1 inch cubes: toss in a few tablespoons of lemon juice to flavor and preserve color
about a 1/4 cup or a bit less each (cut in small bite size squares)
sweet onion or red onion red pepper ripe tomato cucumber
bite size cooked shrimp (about50/60 per pound) tails removed, or use larger shrimp cut in half
toss all ingredients in zesty Italian dressing
can substitute diced chicken breast for shrimp
Serve over a plate of salad greens. | |

| Avocado Recipes & Uses Posted: 5/16/2007 4:02:35 AM | My Guacamole Recipe: 2 mashed avacados 1/2 c finely chopped onion l/4 c finely chopped pablano pepper (or you can use jalapaneo pepper) l/4 c salsa (I prefer Pace) l/2 t lemon juice l/2 t worchestire sauce l/2 t garlic salt and pepper to taste NOTE: depending on size of avacado you may need 3 Mix all together
Use as dip, or my family loves this as a topping for a nice grilled steak.
I also take avacado, peel, cut in l/2, remove the seed and fill with tuna salad, add a couple of sliced tomatoes and you have a great meal.
Also like to slice avacado and add to BLT's, great. | |

Avacado-Oatmeal Face Mask
1/2 ripe avacado 1 egg white 1/4 c old fashioned (not instant) oatmeal
1. Mash avacado until smooth. 2. Beat egg whites until soft peaks form. 3. Place avacado, egg whites and oatmeal in blender. Blend until well mixed and smooth. (It doesn't get really smooth, but as smooth as you can make it).
Apply to face and leave on for 15 minutes (while relaxing in the tub lol). Wash off, and pat dry.
The oatmeal works as an exfoliant. The egg white works to tone the skin, and the avacado moisturises. I have tried other store-bought masks, and none of them work as well as this.
You can adjust the amounts to suit your skin type. For instance, if you have really oily skin, add a bit more oatmeal, less avacado. Experiment until you find a combination that works for you. | |

Work this paste up under throughout the skin of chicken/turkey/duck, then smoke on your BBQ, preferably beer butt method upright (don't forget to put herbs into the beer can), use pecan or maple wood for smoking. | |

| Avocado Recipes & Uses Posted: 6/30/2007 10:19:41 AM | I slice them and use them for turkey or chicken sandwiches, along with cream cheese and sliced pimento, OUT OF THIS WORLD!!!
I'll also be mashing them up and using them for some hand crafted soap I make. Avacado is WONDERFUL for aging skin.
Sometimes I'll even slice them in half take out the seed and sprinkle a pinch of salt, grab a spoon and dig in. I LOVE AVACADOS!!!
