Just curious if anybody has ever had avocado butter, I have a recipe that is absolutely wonderful on most anything you would butter especially corn on the cob yummy.

Hi Genrae,

Thank you for posting this, even though it was a while back, some dear soul revived it and I am adding to it.

I have always said...Eve was in no way tempted by an apple, it had to be an avocado! I know that is what would have worked for me. I had avocado the first time when I was 3 and I have had it at least 4-7 days a week since! I love them that much.

I still vividly remember my first time eating them. I told my dad it must be food from heaven and he allowed me to NOT eat my dinner and kept feeding me avocado on corn tortillas until I was full. I still feel the same way about them.

I have had avocados every way I saw here except the avocado cream pie. Now that I have to try! It is a great facial/skin treatment! I have made my own avocado butter, but would love to see this gentleman's recipe. I have a little different twist that I didn't see here, so I will post it.

Whenever I am sick, or on medication, my stomach is affected and I cannot hold anything down, not even liquids. I discovered one thing that works, keeps me from being dehydrated and gives me the energy I need, this avocado smoothie. It works for children too.

1 avaocado
1 small banana
1-2 cups of lime sherbet
1/2 -1 cup rice water* (rice boiled in 2-3 times the water needed to cook, then strain and use the water for many different uses)

Blend all together in a blender. This can yeild 2 - 3 smoothies. Excellent.

I absolutely LOVE avocados!! I love to make guacamole but also enjoy them in salads, on top of hamburgers, on top of grilled chicken breast sandwiches. I even like them by themselves!! They are awesome!

Have you ever tried using rice milk or is this the same as? Any thoughts on how that would taste or work out?

GoodDay,

I will be honest. I cannot remember what is in rice milk, or if all are created equal. I just remember years ago picking up a package and reading an ingredient that I would not want to use in this shake. It may have been sugar, it may have been soy, or dairy. I cannot recall, but I cannot honestly say that I have ever read another package. I just know I wouldn't use it if it had preservatives of one sort or another, or the three I mentioned above. The sherbet has more than enough sugar and the others would only make me sicker. It would be your call.

Avocado's are great
I use them in the summer alot
when making deviled eggs, add fresh avocado to it.. you can continue to use the mayo or replace it with sour cream or ranch..
The avocado gives deviled eggs a special touch.. however the downfall to using them is they dont keep well. so make only what you will use. my friends and family love them. mistakes can be good in the kitchen

Fried Avocados in Panko Breadcrumbs ñ Filling
Hj’s creation in 2007

Avocados
Egg
Milk
Panko bread crumbs lots
Salt and pepper
Garlic powder
Vegetable oil to fry
Stainless steel skillet or cast iron with lid

Using 1 whole avocado per person for serving - cut in half peel – remove seed sprinkle salt ñ garlic powder all over avocado even in the hole- dip in egg wash than into season Panko breadcrumbs. If you want dip twice –egg wash – Panko than PUT on dish ñ put them in freezer for about 30- 45 minutes before frying.

Make egg wash with eggs ñ little milk - Or - use eggs white beat to peaks fold into seasoned with garlic powder ñ salt with sour cream ñ milk mixture to dip avocados in before putting Panko. Panko will adhere better.

Now get your oil hot – just using enough oil to fry the avocados might have to add oil if making a lot. Place gently cold avocados in skillet- cover ñ fry till golden brown remove lid turn gently once one side is golden brown repeat. About 3 minutes per side. Remove to paper towels.

~Filling~ put 3 cold cooked peeled shrimp tails on inside hole serve or
by making my Caliente Chicken cooked ñ fill the hole or use cold stuffed crab toped with sour cream ñ guacamole with little grated mixed shredded cheese or set to the side

i normally just put avocados in burritos and I eat plenty...I live on burritos.

i've had in sandwiches of many varieties. I'd think the typical california healthfood-like pita sandwiches with avocado, brussel sprouts, cucumber, and tomatoes would be liked by many.

i may try to blend avocado in a squash soup (you can make from acorn and other squashes, so don't limit yourself with butternut).

by the way, pico de gallo is comonly referred to as salsa in this country yet salsa does not have chunks. if i am not mistaken, the term pico de gallo means a little of this and that.

Avocados rock!

One of my favourites...

Gently fry some red onion and garlic.

When the onions have softened add some white crab meat and just heat through.

Stir this mixture in with some pasta.

Chop some vine tomatoes and avocado and serve this on the top of the pasta/onion/crab mix.

It is quick, easy but AWESOME. Perfect dish for the summer to enjoy in the garden with a glass of white wine..

Avocado is a great flame retardant in food that's too hot/spicy, such as taco soup. For those of us who like 1/2 star food, simply serve your chili-laced entree with a bowl of diced avocado on the side.

I just slice a ripe one in half and eat it plain, with a spoon. Like a cantaloupe, only better.

Great lunch on a hike: easy to transport in a knapsack--so is a boiled potato or a cold omelet made with a cup of cooked spaghetti noodles and grated parmesan.

OK.......OK......OK...so I know you know this......maybe someone else does not! I did not know this until a few years ago.... to ripen the avocado, the best trick is --- put them in a brown bag...and check every day.......I was glad to learn this, so i could buy 6 or more of them and get them all to ripen at once for a dip or whatever.....It was a happy day when I found out the brown bag works for avocados too.......

Shieldvulf, thanks so much for posting that recipe.

For lunch today I made a burrito...a little white rice, cilantro, chopped grilled steak, chile cheese sauce, hot chile salsa and a mound of guacamole.

It is also great if you get a case at the farmers market, mash up several and slather them all over your body, but you have to be doing something else while standing naked and green in the bathroom for 30 minutes while this conditions your skin. I usually find about 45 minutes worth to occupy my time. Great for the skin alone, or mix with cocoa butter, or sweet almond oil. I recommend exfoliating first. You see, this is why it is good to have a significant other, you can do all of these things for each other, if he is into it.

I still have my favorite avocado stand-by meal....shrimp, avocado, hot salsa, cilantro and onion in a soft corn tortilla shell. Yeah, shrimp taco. Of course, I love them with sweet potato fries or roasted!

Ok, Ok ........ Sorry avocado fans sorry its taken me so long but have not been on in awhile . Heres my recipe for avocado butter and hope you try it and enjoy.

Avocado Butter

2 - medium avocados ( peeled and seeded )
2 oz. - unsalted butter ( softened )
2 tsp. - cumin
1 Tbsp. - fresh lemon juice
1 Tbsp. - minced parsley
1 clove garlic ( minced )

mix in food processor until well blended and empty on parchment paper ......roll into a log and leave in paper , put in freezer and its there when you want it .

Enjoy ..... its delish on corn on the cob for sure !

I love avocados, is one of my favorite fruits. I don't like so much as a vegetable like most North Americans eat them.

When I was a kid my father had a hug avocado tree (the are very tall trees), and he cut it down because I didn't lessing to him.

He used find out that I have clime the avocado tree several times to get some avocados, and he always ask me to wait until the weekend so he would get them himself. But because I love them so much, and the trill to clime the tree, I would just keep climbing. My Neighbor were the one that told my father about it, I was so mad...lol

He also had two different mango trees, different tomatoes trees, fig, bananas (lots of different types), and some other medicine plants and fruit trees.

I lived in one of the biggest city in the world, and yet our front yard look like a farm (he had small animals too).

I usually have avocado as a milk shake, or ice cream. Usually as a milk shake now, because I know how to do it, and in the States is really hard to find Avocado ice cream, almost impossible.

What I do is first place a whole avocado in the blender (if the smaller ones, in the country I come from, there is only the big ones, which half will probable do it), half of cup of sugar (or some condensed milk, which is what we usually used in Brasil), pour milk until is around a little on the blender, and blend all together.

When I lived in Boston, I try to get some friends into trying, but they always refused, until one of my friends told me that if I try PB and J, he would try the avocado milk shake. (for the majority of people in Brasil, knowing someone eats PB and J,completly disgust us, is just that a mix of things that we use as "salty" with sugar, is not desirable, like Bostonians that eat sweet beans).

I except right away, and toke a bite out of the PB and J, I didn't like it, but when he tried the shake he love so much, that web bought a fill avocados, and we made a little portion the regular way, some portion adding ice, some portion adding some different types of alcohol. It was a petty cool night.

In the American way which I try later, I like the sweet corn (which we also use salt to it), and the sweet chicken, that some Chinese restaurant have. But PB and J, and sweet beans are not for me.

My friend introduced me to fresh avacado on top of pizza! It's very tasty!

I love avacados but I've only bought them a couple times, because I wasn't really sure what to do with them. That was the same with me for eggplant and squash. I'm vegetarian, and enjoy to cook, so I've been trying to experiment with new food. I'll have to check out more of these threads after I go grocery shopping tonight. :)

Avocados are very good for your skin. I try to eat at least a couple a week.

Avocado salad with bacon.

Cut up about three rashers of bacon into small pieces and fry in olive oil. Drain on kitchen paper. Prepare a salad of leaves and chopped tomatoes - and sliced ripe avocado. Sprinkle crispy bacon on top and finish with just a few drops of balsamic and black pepper. Mwwwwah Delish!

I thought I posted this here before but apparently that was on a different thread, maybe the "hey good lookin..." one.
One of my favorite ways of having avocado is to halve and peel of course, cut it into slices and arrange on serving plate. Then peel an orange and slice it (about 1/4"'), doing the peeling and slicing over the top of the sliced avocados so you can capture all of the juice. Slice the oranges across the segments (ie into rounds), and wedge slices between slices of avocado alternating them. No dressing, no nothing--just avocado and orange. It's good with greeen onions or chives snipped over all as well.
and then today, I saw a guy on RR show do something like it--I didn't see what he did but I could see that there was orange and avocado on th eplate. He did something with turkey cutlets on the same platter. Did anybody see what he did with some of my favorite foods?
