Avo's one of those foods you don't want to do too much to. Guac is good and convienient for easy dipping , but i just like to slice and plate it with a little s&p.
Haas are my favorite, the fatty one's. Some like the more watery variety.

I liked to died laughing one day a few years back when I went to the grocery store. There was a sign (I swear to you I am NOT making this up) that said "Low Fat Avocados" posted in amongst the watery ones. Well of course they were lower in fat--duh they are watery so have less fat. But it struck me so funny. I suppose it wouldn't be as funny except this was in California where not that far south of us avocados are grown commercially.

Yes like most I will just eat it with nothing..straight from the peel. lol
I like to make fruit salads with them also.

Amanda's Salad
1 cup cooked cubed chicken breast
1 orange peeled and sliced
1 grapefruit peeled and sliced
2 handfull's of spring mix (greens)
1 avacado peeled and sliced
Few sprinkles of cashew nuts

I usualy will use a store bought rasberry vinagrette..or something sweet like apricot.
If you have a sweet tooth this is a great way to find that comfort.

Avocado, cream cheese, garlic, cayenne pepper, salt, & pepper to taste, mash it up, warm it up if you want or cold is fine, hollow out an Everything Bagel, toast it, then put the mixture in the hollowed half of your bagel top with a slice of sweet onion, maybe a slice of sweet marinated red pepper, or a slice of lox or whatever floats your boat - great Sunday brunch with some fruit...

Some of my other favorites cold avocado gazpacho, avocado "mayonnaise" on any sammy, egg white omelet with fillings ranging from avocado & shrimp to avocado, white cheddar & assorted veggies or pico de gallo, avocado & pear salad... yum...

Asian Avocado Snack/Guacamole

1 Avocado, halved.

Dash of : Lite Soy Sauce, Siracha Hot Sauce and some prepared Wasabi to taste

Pour the goodies into the hole where the seed was and grab a spoon!

Yummy and healthier than Mayo.

Makes a great Guacamole, you can add some Lemon Juice & Garlic, too.

Avocado ranch dressing

I use the shortcut of Hidden Valley Buttermilk packaged dressing, the kind you add buttermilk to, not milk ! Mash 2 large Haas Avocado, add to dressing.

chopped up avacados, chopped green onions, chopped up tomatoes and then add some salsa-as much as you want of all. mix it up good and dig in!!

I love avos. Have a half in my fridge right now just begging to be eaten!! Like another poster said- I love them mashed on toast for brekky. On a cold day I will mash onto toast, top with a good cheddar and pop under the grill til golden.
My favourite avo meal is to cut one in half, spoon on a decent chili (bean-based for me, but meat based would be fine) top with some cheese and bake for 15-20 mins in a moderate to hot oven. Serve with water cress or on a bed of rice. Add whatever accompaniments you usualy have with your chili. Dont leave them in the oven longer than 20 mins or they might get bitter- tho that has never happened to mine. Warm creamy avo and hot tangy chili... mmmmmmmmmmmmmm!!
