My personal fave method is saute some mushrooms in some vegetable broth and a small splash of Irish whiskey, minced bayleaves and then using this in the frying pan and searing the chicken or braising it by adding more broth. Also, use the broth mix to boil the rice works too.

Just had to comment when I saw that you sometimes add orange juice to rice.....now that's different....never would have thought of that...However, I think the only time I would use it is if I was in a "citrusy" kind of mood....I feel that I'm talented at "unconventional" cooking methods...and someone I knew who was a cook (for a small diner) used to make a sensational citrus chicken (with limes, mango & orange slices)...anyhow I thought that what you said about the rice would be complimentary to the rest of this dish.

Typically though, my chicken & rice dishes involve cream of mushroom soup or cream of celery soup....I have also used Campbells creamy cheddar cheese soup & some fresh asparagus tips....I'm not one to curry chicken....I don't like curry at all...I think it makes things taste dirty. I've also prepared a nice chicken cassoulet before...I call that "throw all your winter vegetables into your chicken" dish :)

But my standard "chicken & rice bake" involves some kind of "creamed" soup base....sliced onion & fresh mushrooms.....

Have you ever tried bacon wrapped chicken....cook it in the roasting pan & add a few sprinkles of soya sauce...gives it a nice smokey, salty...kind of barbecued flavour without the barbecue....

I had that problem for a while so I tried this with some leftovers and it turned out so good its how I cook it all the time now
Fix your chicken and rice like you always do then put a can or two (depends on how much you make) of cream of chicken soup and as much water in it chop up some onions and garlic and bell peppers and some smoked sausages and mix them in with it and put some Tony Chachere"s creole seasoning in to taste put it in a cassarol dish and cover it with aluminum foil and cook it in the oven at 350 for about a hour try it that way and I bet you will never go back to plain chicken and rice again.

When you make your stock with the chicken put peppers onions celery parsley garlic and a piece of salt pork. Spices: Thyme, Cummin, paprica salt black pepper. Use that stock for your chicken and rice. Before adding the rice put it some little smokies and ground jimmy dean breakfast sausage.

Maby I should have added to strain all the ingredients from your stock. Then put the chicken back. andd the little smokies. Fry the jimmy dean sausage and add that. When the little smokies are done add the rice.

The key is to marinate your chicken in white wine, mushrooms & garlic. Then steam your rice in chicken broth and Lemon Pepper. Merge the two and BINGO!

Spicy clamato in place of water makes a girly pink looking rice that tastes pretty good. Sesame oil adds a nice nutty flavour.

I was on here thinking because nobody posted an obvious answer...but then I thought because this will prove I am smart.

OP,

It isn't only what you add to chicken and rice. It is the chicken. Buy good quality all natural chicken, orgranic free range if you can find it, not the chicken that is from the factory that spews out billions. HOWEVER even more important is the rice itself. If all you have is white rice, throw it out and don't ever buy it again!

Jasmine rice...basmati rice...so fragrant and so yummy...even damn near plain! Just two great rice examples.

And risotto? Don't even get me started...oops too late. Good risotto uses risotto rice not white rice thrown into a crock pot and blasted away at. The secret is to lightly toast your risotto rice so it smells like buttery popcorn before adding the liquid.

Since you said chicken and rice, here is a risotto recipe for you.

Ingredients
1 tablespoon olive oil
1 cup arborio rice (might be labelled risotto at the store)
3 cups chicken broth
4 chicken breast halves, boneless and skinless
3 tablespoons butter
1/2 pound sliced fresh mushrooms
1/2 cup orange juice
1 tablespoon drained capers
1 cup drained artichoke hearts, cut into bite-sized pieces
Salt and pepper to taste
1/4 cup freshly grated parmesan cheese


Instructions
In a large paella pan or a large frying pan over medium-high heat, heat olive oil. Add rice; stir 1 minute. Add chicken broth; reduce heat to medium-low and simmer, stirring frequently, 20 minutes or until rice is just tender but still firm to bite and mixture is creamy.

Cut chicken into bite-sized pieces. In a large frying pan over medium heat, melt butter. Add chicken and mushrooms; saute until chicken is fully cooked and tender. Remove chicken and mushrooms with a slotted spoon to a plate; set aside.

Increase heat to high; add orange juice to frying pan. Simmer until liquid is reduced to approximately 1/2 cup. Add capers and simmer 1 to 2 minutes. Add artichoke hearts, chicken and mushroom mixture, salt, and pepper; stir and simmer until thoroughly heated.

Remove from heat and pour over cooked rice; stir just until blended. Sprinkle with parmesan cheese and serve immediately.

Yield: 4 servings.

boil some split chicken breasts in some water and chicken bouillon for about 30-40 minutes
remove the split breasts and place to the side to cool

add rice to the chicken stock you just removed the split breasts from, let it boil down

mmm this is good

btw. take the split breasts and throw a lil BBQ sauce on them and grill them
they are so tender and you dont have to worry about the chicken still being raw at the bone, also they are super MOIST

( i hate it when my BBQ sauce starts to burn and my chicken is still raw by the bone)

I bake chicken breasts and rice in the oven. Instead of adding water to the rice, use Orange Juice and place chicken on top of the bed of rice and bake in the oven.

I make a chicken and rice dish as follows: one can cream of chicken soup, one can water, 1/2 to 1 tsp curry powder, one cup instant rice , cooked chicken pieces, little salt and pepper and soya sauce. Sometimes I add onion flakes. Mix altogether and pour in a buttered casserole dish. Bake 350 oven until bubbly and starts to brown around edges

May I suggest something slightly different.

Try a different rice.

I would suggest Basmati rice. It is an aged rice. It's more expensive, but if you are only feeding one person on a regular basis, itisn't a big expense at all. You may be able to get it at a south Asian (Indian) grocery store. Where I live, I can get in the local No Frills store in a pinch.

Even by itself, it will have an amazing smell and taste. My fav quick recipe is to cook it with the chicken broth, onion, peas and carrots, and adding red lentils, and pinch of tumeric for colour.

As a fellow human being, I CANNOT allow another human to continue to use Knorr!

Please try this, it's damned simple and tastes like a blackened chicken dish you'd get right from a top-notch restaurant.

1 can of high-quality lemon-pepper concoction (it'll be spendy 'cause of the real lemon rind)
Two split, boneless, fully defrosted or fresh room-temp chicken boob(s)
1/4 cup medium sherry--not the cooking sherry, but the real thing--or chardonnay
2 tbsp canola oil, or any other monosaturate oil (avocado, virgin olive, walnut).
Diced red bell pepper
Cooked rice, 2 cups (cooked)

Pat the chicken dry. Thoroughly coat the chicken in the mixture. Heat oil in a saute pan (that has an accompanying cover) until a drop of water pops. Place the chicken in carefully so you don't get splattered. Sear the chicken on all sides, lower the heat and add the wine; cover the pan with the lid. Simmer two minutes. Remove chicken. Turn the pan on medium high heat and put the cooked rice in the broth left behind; add the diced pepper; stir frequently while it simmers two minutes. Cut chicken into slices and serve over rice/pepper. Hot dayam.

Add some cooked wild rice to your rice, a few sliced mushrooms, maybe a few crunched up walnuts, and according to your taste buds, try a scoop of raspberry jam in it. Mix it up, and let it season and mellow.( low heat, just enough to keep warm.) This is a good rice dish with chicken or pork. I have even had it with venison, and salmon.....

saute` garlic & onion'sin o.o. before you add the broth. bay leaf will also give a kick.
go accordly w/ the bay leaf. a small or a piece, for a small serv'g. a med to lrg. for a bigger serv'g.
