Everyone makes pancakes to their own recipe so I guess there is no right or wrong recipe, just tasted and loved ones.

Classic Pancakes
2 cups plain flour
3 t baking powder
2 t vanilla
1 T caster sugar
1 1/2 cups milk
2 eggs
60g butter, melted, cooled
extra melted butter, for cooking
lemons and white sugar, to serve
Method
Sift flour and baking powder into a large bowl. Stir in sugar.
Whisk milk, eggs, vanilla and butter together. Add to flour mixture. Mix until well combined.
Heat a non-stick frying pan over medium heat. Brush pan with a little extra butter. Pour 1/3 cup of batter into pan and spread batter out . Reduce heat to low. Cook for 2 to 3 minutes, or until bubbles start to appear on surface. Turn and cook for a further 2 minutes, or until cooked through. Repeat with remaining batter, greasing pan in between pancakes.
Serve warm with lemon and sugar.

** Replace milk with lemonade...creates incredibly light pancakes with a twist**

Yes, Fist. I actually prefer waffles to pancakes, it holds more "stuff" like macerated strawberries and whipped cream..........mmmmmm

My daughter being a VERY sound sleeper to the point of shaking her to wake her up and have even considered a water pistol. I have discovered one magic word..... WAFFLES ! All I have to do is whisper it and she's up like a shot!

Well as far as I am concerned, cast iron is the only way to fly but here's a couple of pancake recipes I've been making for years and they are really simple but fan-freaking-tastic.

Buttermilk pancakes

1 egg (3 eggs for waffles)
1 1/4 cups buttermilk or sour milk
2 tbls. soft butter or shortening
1 1/4 cup flour
1 tbls. Honey
1 tsp baking pwd.
1/2 tsp baking soda
1/2 tsp salt.

Beat egg well and add remaining ingredients beating until smooth. Bake on hot griddle. For waffles separate eggs and beat egg whites until stiff. Cook on pre heated waffle iron.

Now this one is especially for RK who hates heavy pancakes. These bad boys are sooooo light you'll think they'll float right off the griddle.

Simple Breakfast Pancakes

1 1/2 to 1 1/4 cups unbleached white flour
1 tbls. sugar
1/4 tsp salt
1 tbls baking powder
3 eggs separated
2 cups milk
1/4 cup melted butter.

Sift all dry ingredients together in a mixing bowl. In a separate bowl, beat the egg yolks with the milk and melted butter and stir into flour mixture. Beat egg whites until stiff but not dry and incorporate into the batter. Cook on heated griddle.

Burning pancakes is no picnic, but I have found that if you turn them just when you see the bubbles start to pop, it will be just about perfect. The key here is to make sure that griddle is all the way to the temp you want.

:(( My honey doesn't like pancakes. But wait..... he hasn't tried mine.

Well for me, I like very little syrup on my pancakes, but I'm an oddity. I just add butter and a LIGHT drizzle of syrup.

ditto. I like some with just butter. I got real maple syrup (not the artificial stuff you get on the store shelves usually)from relatives for so long yaerly as a christmas gift I am sick of it, totally, and prefer white corn syrup... sometimes I add more vanilla to that.

I've heard molasses is good but I haven't gone that far. yet.

I cannot imagine molasses on a pancake and certainly not brave enough to try, LOL. The pure maple is awfully good, but I have to admit, I am a huge fan of Mrs. Butterworth.

Shoot..... now I'm hungry for pancakes, LOL.

PANCAKES

2 eggs
1/3 cup sugar
3 tbsp oil
2 cups all purpose flour (sift the flour after you measure)
1 ¾ cup milk
4 tsp baking powder

Blend together milk and baking powder.
Beat eggs lightly. Add sugar. Mix in flour and milk mixture alternately (starting and ending with flour). Add oil. Stir until just mixed.
Cook on very lightly greased pan (at 375F).

P.S.
If you want really, really fluffy pancakes - separate the egg yolks from the egg whites and beat the egg whites until they form peaks. Make the recipe as shown except fold in the egg whites at the end.

Fold = Definition: A technique used to gently combine a light, airy mixture (such as beaten egg whites) with a heavier mixture (such as whipped cream or custard). The lighter mixture is placed on top of the heavier one in a large bowl. Starting at the back of the bowl, a rubber spatula is used to cut down vertically through the two mixtures, across the bottom of the bowl and up the nearest side. The bowl is rotated a quarter turn with each series of strokes. The trick is to stack thin ones up and put butter between them, and they have no prob soakin up syrup...

Thats far better than eating something that resembles a deflated angel food cake that you can feel slide to one side of your stomach when you get up from the table....

warning: those recipes with sugar will brown faster and burn easier. That's why mine has none. And really when you are adding syrup anyway what is the point os sugar in the batter?

At first the "pancake purist" in me said no! no! no! But now, after finding out how wonderfully fluffy these are, I make them all the time (o.k., I admit I usually use the pancake mix but the results are the same):

7-UP Pancakes

1 1/4 cups sifted flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 beaten egg
1/4 cup milk
3/4 cup 7-UP (room temperature)
2 tablespoons oil

Sift together flour, baking powder, sugar and salt. Combine egg, milk, 7 UP and oil; add to dry ingredients, stirring just till flour is moistened. (batter will be lumpy). Makes about eight 4-in. pancakes, which we eat with sorghum syrup and extra spicy sausage. Yum!

I've put 7-up in my pound cake-- never thought of using it in my pancake batter. I might have to have pancakes this weekend and try it. Thanks for the tip!
