Bay leaves Saffron Cloves Cumin Marjoram
Since I love silverside 2 of these are most important.
Saffron makes rice absolutely delicious. Also if you brush drumstick with it is yum when roasted. (ground it or powder it using tiny bit of sugar and cook it in butter NOT margarine)
Cumin probably gives a nice aroma to chilli bean (I'll try and borrow the chilli from one the kind members )
Now Marjoram is magnificent in some bean soups and on fresh pomegranate. | |

Posted: 9/26/2007 9:49:22 AM | the spices i would have are, 1. salt 2. pepper 3. oreganal (greek) 4. dryed cropped garlic 5. msg ( the best chinese spice there is, yes it is artificial, but a little goes a long way) with any one of these spices, you can make any meat better. i know most of you have not cooked with msg, but is worth trying. you'll be glad you did. a brand name of it is, Ideal ( it's container is red and white). you only need to use a couple shakes, a little goes a long way. unfortantly, most chinese restarants do not know that ( way too much can give you a head acke. ) | |

An annual Mediterranean herb (Cuminum cyminum) in the parsley family, having finely divided leaves and clusters of small white or pink flowers. The seedlike fruit of this plant used for seasoning, as in curry and chili powders. Feel free to let me know what you use it on. Thanks. | |

| If you could only have five.......... Posted: 9/30/2007 11:53:43 AM | 5 is not enough, but, salt, pepper, cumin, paprika and ground celery seed :shrug: Here's recipe. You get the chicken breast filets, [I use tyson, there may be others] Follow heating instr[sprinkle fresh ground black pepper on it]. Butter 1 side each 2 slices bread, cut some sharp cheese thin sliced. When the breast is almost done [20 mins] have the cheese on the bottom slice of bread, on a griddle [like you were going to make a grilled cheese]. Put the chicken on top of the cheese cover with the other piece of bread, brown it! Flip it when lgt brown. brown the other side. use 2 slices of bacon each cut in have on the chicken patty, Put some horseradish sauce on it, mmmmmmmm.
Serve with cold beer and a football game. | |

goingeasy......I liked your choices and I think I will switch to granulated instead of powder, white pepper is something I have never had but sounds interesting. Kosher salt.......how is that different than other salt? I do like using sea salt. | |

Kosher salt is a granulated salt, and by being kosher, if I'm not incorrect, kosher means it is processed to Jewish standards. I'm not sure, I think it has something to do with a clean standard, or certain way of processing. | |

As far as 'single' spices/herbs/flavouring agents, I could go with Pepper, Sage, Garlic, Oregano and Cinnamon. I left out onion because, as a dried substance, it is really not necessary as a complement to garlic, so I chose one over the other. Even though I grow both of them I still like to have extra 'granulated' versions on hand. I also have oregano, sage and spearmint pretty much growing wild; the latter being very difficult to eradicate, as some of you can attest to.
As far as 'blend' spices/herbs/flavouring agents, there are several available by various suppliers under various names. My top 5 choices would be Seasoning Salt, Steak Seasoning, Italian Seasoning, Poultry Seasoning and TAIPAN '5- Chinese Spices' blend. Couple of side-notes are that Club House make some excellent 'spices in a drum' which are available at larger food stores such as Costco and a couple of very 'versatile' ones are ITALIANO and TACO. Both of these are wonderful blends and very cost-effective. There's also Mrs. Dash for some low-sodium alternatives and when it comes to cooking or canning, I first choose Bio-Salt and if I run out I settle for Celtic Sea-Salt.  | |

This has been interesting.....I learned names of spices I didn't know existed and learned how to use spices that I have never tried. Some of the brand names given (of mixed spices) don't seem to be available in my area, they sounded really good.
