What do you put in your beef stroganoff?

...I'm wondering...Could a person substitute some yogurt for the sour cream?...sure you lose some taste..but the mouth feel should be there..and if you're seasoning it different than just a "standard" sour cream stroganoff, would you even know it was different???

you can use a double thick yogurt but its better if you rather make a half/half mix of yogurt and reduced fat sour cream.

Wont the yogurt break in hot dishes? Why bother when there is both no fat and low fat sour cream available? You trying to avoid the starches they use in those products?

Various mushrooms are good. I've done shiitakes but they seem too heavy/strong for it. But then in general I've been burned out of BS for a number of years because it is just such a heavy dish.

You never want to cook with non fat sour cream. It breaks down. Reduced fat is ok, but regular fat is best. You can use regular sour cream and thin it out with some non fat milk. Fat free yogurt works ok in place of sour cream, but to get a similar texture, you'd need to drain in through cheesecloth.

Tex-Mex or Southwestren cooking was created from mexicans in the U S, trying to recreate indigenous dishes using the local(usa) products...

Remeber Im looking back to 75 years, were you just didnt go to a grocery store to by your favorite items.

When you see Flour tortillas, or Chedar cheese, or Beef used in a recipe, that
" mexican" dish was most likely created in the states

beef is king here in Texas and the southwest..abundance of beef made recipes change to incorrporate beef or substitute other meats.

Chedar cheese was aboundant in in all parts of the US in the 1900s as it is today...
so if you see dishes with chedar, they were created here...you can find them in mexico now...

like Fajitas...created here...served in the resort towns in Mexico, because turist having had fajitas in visits to South Texas and the Soutwest, tought that fajitas were a mexican dish, so when in mexico, they asked the restuantures for them...

with the aboundance of corn in Mexico, corn tortillas is the staple...has been for centuries.
in south texas, we have influnces from various parts of Europe(1850).
Germans brought Milling of flour to the area. wheat was in aboundance in S. Texas...
Flour tortillas(made from wheat flour) were created...

So what is mexican food...I like to think It's the kind mom makes, where ever i the world see is..

I remember when I visited Mexico, the food was not the Mexican I was used to. It really opened my eyes as to what true Mexican is. I would never consider fajitas as Mexican to begin with, but a lot of people do.

And to remain on topic...how many people have cooked or are planning to cook beef stroganoff now that they've read this thread? Me, I'm working on emptying my freezer and fridge to make room for Tom Turkey.

I make mine like indianaman, to include the Lea and Perrins; however, I do add some garlic, and rather than using ground meat, I use sliced steak -- when I can afford it. I also slightly under cook the egg noodles, and lightly coat/toss them in either butter or beef gravy before I serve them.

I have heard that sliced portabellas can be substituted for the actual steak, but have never done this. In this case, you eliminate the additional mushrooms, but keep everything else the same.

I don't usually cook for just myself, but now I'm hungry.

Beef Stroganoff

1 pound. beef chuck steak or roast
3 tablespoons butter or margerine
1 tablespoon oil
1/4 pound mushrooms, sliced
1/4 cup finely chopped onion
1/4 cup green or red bell pepper
1/2 tsp each salt and Worcestshire sauce
dash pepper
1/2 cup sour cream
hot cooked noodles or rice

Cut out and discard bone and fat. Cut the meat into thin bite sized strips. Heat 2 tableaspoons of butter with oil in a wide frying pan over medium-high heat until foamy. Add mushrooms and onion and cook, stirring, until golden. Lift out and set aside.

Add remaining tablespoon butter to pan. Add beef strips and cook over high heat until browned. Remove pan from heat; stir in reserved mushroom-onion mixture, salt, Worcestshire, pepper and sour cream. Return pan to low heat and cook, stirring constantly, just until sauce is heated through- DO NOT BOIL. Serve over noodles or rice.

Brown some stewing beef(or liver) with butter and olive oil, then pour it (grease and all) into a crock pot.

Saute 6 cloves of crushed and chopped garlic and 2 onions(or leeks) then add them to the crock pot.

Followed by:
1/2 a can of beer (ale works best), the other half is for personal use
lemon juice
sea salt
fresh ground pepper
fresh ground mustard seed
fresh ground nutmeg
paprika
10 chopped mushrooms
chopped celery
can of tomato paste
a pinch of sugar

Cook on low for 8 to 10 hours (or overnight if it is a lunch time serving)

1 hour before serving add some whole wheat flour and sour cream. One day I'll try cottage cheese...

I serve my stroganoff over whipped potatoes with butter (not margarine!!), 1/2 and 1/2 cream, parsley, and fresh ground pepper.

Serve with a salad or some vegetable sticks, a baguette and red wine.

Most of the suggestions here are good. Worcestershire is such a strong sauce, it can be a blessing or a curse. Garlic, definitely. I like to add Dijon mustard and a spot of ketchup. If you don't add too much, it gives the dish a complex flavor.

Tomato paste, I thought it was part of the recipe, garlic of course but too much in thtis dish, and served with soft shell pasta, very good........

Defiantley try a small sachet of tomato paste and cracked pepper, in the straganoff, and make sure the pasta has olive oil added to the boiling water and sea salt, makes a huge difference.

Its about two tablespoons of paste, the colour is usually just a brown red, when ,ixed with the cream so its no too much, depends how much cream your using but that is the colour and the amount I use

This is the best.......

Don't use ground beef, no no no no, use the best cut available and dice it into bite size pieces.
rump or rib and trin the fat, if you use wholemeal pasta its a better health option, but dont skimp on the cream or the meat

dont over eat and have a fruit platter afterwards, cut down your serve of strogonaff and fill up on fruit platter afterwards, Balance and modetation is better than ruining food by skimping on the meat cut and the other ingredients.....

I like a little dry sherry, But what is really nice is to garnish by placing mashed potatoes in a bakers bag and making a ring around the plate for the stroganoff to be encircled by. The texture of the finely mashed potatoes is in my opinion a much nicer compliment than noodles.

i basically make mine the same way op,but i cut up steak,i've never used hamburger.i do add some garlic,celery seed and basil.i also add a little cooking wine as i too find the basic recipe rather bland.i haven't tried it with black olives but maybe i'll try that too...for some variety i've also added vegs at times..broccoli or peas to add colour to it and serve it over egg noodles..yumm.

Eek ! I am of Russian heritage and some of the recipes for Stroganoff on this thread are anything but Stroganoff.
Firstly the beef must be sliced into thin strips (julienne) so must be the onion.
Caramelize the onion , add the beef and garlic and cook until the garlic is translucent and the beef is grey. Deglaze the pan with a little red wine and work the crystallized juices so they offer up their flavour.Never pour the wine on the meat but only in the pan!
Add julienne dill pickles and a splash of pickle juice. Let simmer.
Season with black pepper,dry mustard and salt.Add sour cream.Simmer until reduced to the desired thickness.Finally add chopped fresh dill. Serve on a bed of egg noodles with a topping of fried onions or julienne potato.
Easy.

Hoary,

Used some of your tips to make a great beef strog last night. Fried up onions and mushrooms seperate from the beef, browned the beef and let it rest, then took the plate juice as well as some whiskey to deglaze the pan. I think you could probably add a little beef stock too. Then I added the onions/mushrooms/beef back in the pan and added SP, mustard and sour cream. Topped it off with fresh dill and served over egg noodles.

I just didn't have the pickles, but the fresh dill was nice. The whiskey sauce gives a nice depth of flavor too.

curls22: You're right about not using low fat sour cream. I used it in stroganoff last week and it came out very runny and tasteless. I also used bottled mushrooms which were quite tasteless as well. Next time I will use real sourcream and fresh mushrooms!

The Frugal Gourmet used to say not to use Worchestershire sauce because real Russian stroganoff doesn't use it but I like it in mine.

I love this recipe that makes great beef stroganoff..

2 lbs. beef stew meat or round steak, cut into one-inch cubes
3 Tbsp. oil
2 Tbsp. flour
3/4 cup beef broth
1 large onion, chopped
1 tsp. garlic
1/4 lb. fresh mushrooms, sliced
2 Tbsp. tomato paste
1 Tbsp. Worcestershire sauce
1 cup sour cream
Salt and pepper to taste
1 pkg. egg noodles, cooked and drained

In your pressure cooker, brown the meat in batches. Add flour and mix well. Stir in the onion, garlic powder, mushrooms, tomato paste, beef broth and Worcestershire sauce. Blend thoroughly.

Close and lock the lid and bring to pressure. Cook 20 minutes maintaining pressure according to the instructions with your pressure cooker.

Immediately release the pressure according to manufacturer's instructions and remove the lid. Stir in sour cream and blend well. Serve over hot noodles. Garnish with chopped parsley, if desired.
Serves 4
Cook time: 30 minutes
Prep time: 5 minutes
