If you don't see a place close to you on the list, take the information to any local church that you think might be willing to take this on. I love all the recipes....anything with biscuits and gravy is so so good i am canadian and cannot find grits etc,,, here.,.,.,so my american parents bring me..wonderful treats from the states..grits.....biscuits etc..treats i keep for myself lol

Baked Egg Puff:
1 1/2 Slices Bread, cut into strips
1 Egg, beaten
1/2C. Milk
1/4C. Cheese, Shredded
1 or 2 dashes Hot Pepper Sauce

Preheat oven 350 degrees. Spray 10 oz. glass baking dish with butter flavored cooking spray, line bottom and sides of dish with Bread strips. Mix Egg, Milk, Cheese & Hot Pepper Sauce, pour into dish. Place dish on baking sheet, Bake 40Min.

nzeroenc is right about Angel Food Ministries. If there isn't one in your town, there may very well be the same kind of coop by a different name. They are organized out of churches so call around. See if your town has a surplus food store. Just yesterday I saw rice being sold in one for 20 cents a pound. You have to know the prices of items though . . . sometimes they will get just as much as a regular food store, but they are worth the time to look in.

To answer your question about poor man's breakfast, you can't do an better than old fashioned oat meal (and steal cut bought in bulk at some natural food stores is even better -- Sun Harvest often has theirs on for 49 cents and pound). Do not give your children that instant trash -- no fiber, no nutrients and very expensive in comparison. A store brand of oats cooked in 10 minutes is your best bet.

Never buy white bread, cold cuts or junk food if you want to make your money stretch and feed your family well. OK -- the white bread it a personal prejudice, but cold cuts and highly processed food ARE actually expensive as well as being a bad food choice.

But turkey on sale and cut the largest fleshy pieces off of the carcass. The breasts baked to slice, cut thin into cutlets or ground with dark meat to make meat loaf, meat sauce for pasta and patties. The back and the bones should be boiled to make soups. You can even save the fat you skim off the stock to use in cooking instead of butter. This goes for chicken as well.

Legumes (dried beans) are also a cheap, nutritious staple to keep in the house. Just a little ham or bacon will make them a complete protein. Here is a great recipe to make bean soup.

1 lb dried lima, pinto or great northern beans -- soaked 6 to 8 hours
2 bay leaves

Cook beans until almost done -- sort of al dente. Add:

1 large chopped onion
3 stalks celery, chopped
1 can diced tomatoes

Cook until done, but not mushy. Add:

2 teaspoons salt
3 sliced carrots
pepper to taste.

Cook until carrots are done (5-10 minutes)

If you buy ground beef, you can stretch it by using dry oat meal (old fashioned) and a lot of ground vegetables to make meat loaf.

Low Fat Pancakes!!!!!!

Okay, here's the deal. . . . I had a brainstorm the other day, (yeah, it hurt but I did it anyway). It was suppertime, but I kinda had a craving for pancakes. So I opened up the cupboard, and it was bare ( because this is a poorman's breakfast) except for a box of $.82 Carrot Cake mix. So yeah, you guessed it. I made pancakes out of the Carrot Cake mix. You have to cook them on a lower temperature than regular pancake mix for some reason, because they take longer to rise, and will burn before cooking half way through unless you turn down the flame. So I guess any Cake Mix will do.

Here is the low calorie part. I took the cream cheese frosting , mixed a little water to thin it out a little, then added lite pancake syrup ( that's the low calorie part) to the frosting, then drizzeled it over the perfect carrotcakes. It was wonderful, try it!!

..I haven't seen anyone mention Corn Meal Mush...It's pretty darn cheap...and can be very good..provided you use enough salt to bring the flavour out. I'm a fan of pouring it in a greased loaf pan and frying it the next day. With a little butter and maple syrup it's a wonderful breakfast...toss some sausages in the pan first to get the flavour of them in the mush. If you want to eat it straight up..as a breakfast cereal...just get a little brown sugar and milk..or ..maple syrup works just fine too.

This has nothing to do with being poor and more with this being a healthy alternative to other stuff that is not so good for you.

It may sound horrible, and can be at times, but it is good for you and is very simple.

Oatmeal with nuts and raisins.

No milk. No Butter or fats as there are plenty in the nuts.

Also:

Yoghurt with Honey and nuts. How about a banana?

Here is the best 1 of all.It requires no cooking and can be ready in seconds.
You take out the milk,and put it in a 8oz glass.Open up the cookie jar.Grab a cookie.Dip it in the milk for about 5 seconds.Any longer and the cookie will fall apart.Then eat the cookie.After youve had enough,drink whats lift of the milk.You get plenty of vit.D .and vit.sugar for you daily intake.Yum

Polenta = "boutique/nouvelle cuisine" grits .
Cornmeal is ground finer . Next step is Masa (flour) .

Grits or polenta can be done the same though , let 'em cool/solidify ,
slice 'em/egg wash batter & fry 'em .

Crumbled sausage/sauteed diced onion/pepper/grated cheese mixed in
before they cool makes a redneck gourmet breakfast t'marra .

I didn't read them all, but one of my Fav's is Chilli omelete, Basically and Omelete with cheese and chili, it sounds bad but it really good!!!
And what we up here in Idaho (Yes the potato state) call and Idaho Omelete, basically fried potatoes, some eggs and whatever else you think my be good thrown together and fried. But yes fry the potatoe's first!!!
Then Tabasco sauce, and ketsup or salsa on the top Yummmm and cheap and easy!!!!

Hey honey, I hear your pain.

Oatmeal is a good cheap breakfast food. Add some milk and it is a complete protein. The generics are cheaper and you get a lot of servings in a big bag. Generic dry cereals like cheerios and rice krispies are great quick breakfasts. Bananas are cheap to buy and apples too and if you add some fruit to a breakfast you can probably end up with servings for each person under $2.

I find cheese and eggs more expensive per serving but that is just me maybe . I'm in Canada and dairy can be expensive. I also stopped buying regular milk when I was on assistance. The cost to get to the store regularly was ridiculous. So I could buy a case of soy milk when I got my cheque and it is UHT shelf safe. No refridgeration needed. Also, milk prices are at the whim of dairy farmers but often soy milk (and rice and almond) go on sale or you get coupons so I could often get it cheaper. Even a case of 12 is $2 cheaper then buying one for one. Dairy milk NEVER goes on sale here. I also rationed milk because if I don't get it in my tea, life ceases to exist in this house. One glass a day and that is it. I get my kids to drink water as often as I can, and I try to get them to eat fruits and not drink juice. Fake juice is bad for your health and real juice is expensive.

If you have a deep freeze, buy on sale in bulk. I got OJ at 99 per can and bought 12 in Jan. We still have some of that juice. With the impeding rise in wheat costs I bought pasta at 99 c a pack and again bought 12 or so. I know there isn't always money to do that, but I find I can get ahead and then grocery bills NOW aren't as bad because I thought ahead. Beans are good. We had a sale with 2 cans for $1 and you can't beat them on buttered toast for breakfast. Yummy, warm and filling.

Not sure if this will help you much. We do a lot of leftovers for breakfast. Pasta and meat sauce. Hamburger is cheap here and often chickens are cheap. Casseroles heated up as leftovers are good breakfast food.

I find that specific recipes for breakfast aren't as good if you are pinching pennies as often the ingredients you need for it you can't get. Cooked rice with milk added and cooked to real soft can be sweetened and eaten like rice pudding. Yummy hot or cold and a good breakfast. Pasta, rice and potatoes are our big staples. Food pantries can be a great help now and again, if there is a family resource centre nearby you might check with them. They have less food but often get surplus things that you can get without feeling as low about taking them. You can also volunteer there and help out and it is a good trade.

Beware prepared foods. They can sometimes look cheap but a cheap frozen dinner is still a lot more expensive then the same food cooked fresh.

I see it's been mentioned before, but I'll add in my personal twist:

First, I have to add, I make my own hemp milk from whole hemp hearts, honey, and water. Very nutritious and nearly as much calcium as milk.

3/4 cup of rolled oats
1 cup hemp milk
a couple dashes of cinnamon
1 tsp brown sugar

Rather than cooking, mix in a bowl the night before, cover, and set in the fridge. In the morning, top with a sliced banana.

Optional (but also my favorite part): top with a dollop of peanut butter, or stir it into the mix.

You get protein, calcium, lots of fiber, minerals, good fats, complex carbs, and vitamins. It's a fantastic, cheap, and nutritious high-energy breakfast that takes nearly no prep time and involves no cooking.

Sweet potato pancakes

2 lbs sweet potatoes (fresh) peeled and shredded
1/2 onion shredded
2 eggs
1/2 cup any kind of flour
herbs to taste: I grow sage and chives in the garden and add parsley too
salt, pepper and nutmeg to taste

Oil for the pan

Mix everything together. It can be made a day or two ahead if you don't have time in the morning and then just cook before a meal. Makes a nice lunch with a salad.

Drop forkfuls of mixture on a hot greased pan that has been heated to medium high. Use the fork to pull out the edges so they are thin and will crisp up. Cook until the outer shreds look golden and flip. Cook till the bottom is golden and the potatoes are cooked through.

Serve with applesauce or plain lowfat yogurt mixed with chives, depending on if you like sweet or salty version.

If you have heavyweights in your household, part of feeding them may be to try to move to more nutrious options that will be more filling. The glycemic index on these is lower then grain pancakes and the fibre is higher. There is more chewing and that feels more satifying too. While I can wolf down 8 or ten regular pancakes, I find these I can only eat six small ones and I'm not craving more. I can cut down the volume of food intake because it is more satisfying.

Sweet potatoes are great, you can make them as fries too and they are yummy and cheap. In a pinch, I use a white potato in with it if I don't have enough sweet ones and it is just as good. You can also adjust the herbs. The friends who showed me this recipe are poor vegetarians (financially poor, not an adjective to describe vegetarians). They use a lot more herbs then I do. I prefer to have just one or two flavours. Looks like fancy bistro food for pennies per serving.

Hello All...

Just thought I would drop in a couple things....

Peanut Soup.. (sounds gross, but its really good)
canned chicken broth
peanut butter
salted/unsalted peanuts.

Warm up the broth... stir in peanut butter... add peanuts. Salt and pepper to taste

Ramen Noodles A la Me!

No title, just a different way of making the noodles.

Follow the directions on the package... instead of adding your flavor packs, set them aside.
Boil your noodles, then drain them. Hold back 1/4 cup of the hot water.

Grab your favorite bag of frozen veggies... I use mixed veggies myself

A little olive oil in the bottom of a fry pan... throw the veggies in. Stir them up...

Then add your noodles...

Take that 1/4 cup of hot noodle water, and mix up your flavor packs... Pour that into the noodle/veggies frying... cover for a minute or so, steam the veggies...

Serve.

Let's see,, hmm , A poor mans breakfast...
Crickets, earth worms, grubs that can be found eating rotting wood or inside a piece
of dead pine tree..
Earth worms are my favorite, they don't taste bad and are full of protein and vitamins.

Fried bugs with salt and pepper taste better than raw..
Boiled Sassafras root makes a very good tea even without sugar.
If you can catch crawdads and fish it gets even better..
Snakes are also good eating but be sure to cut the poisonous snakes head off at least 4 inches back from the head to remove the poison sack..

Not really poor mans but quick.

Eggbeaters or whatever type you like or if you really like an egg.
One muffin or whatever you want to put it in.
One piece of extra sharp cheese
One piece of canadian bacon, ham or choice of meat.
Organic olive oil spray by Pam.
Small container, I use one from the Fleishmcann's olive oil butter/margarine substitute in the yellow and green package.

Put the muffins in the toaster, spray the container with Pam, add enough egg beaters to cover the bottom of the container about 3/8" deep, any more and you will have a mess. Put the meat on next then the cheese. You will have to rip the meat and cheese to get them to fit correctly.

Now put a wet paper towel on top of the container, put in microwave and nuke it for 45 seconds, then do it for 25 to 30 seconds the next time.

It is hot so use something to cover your fingers, the muffins are done now, either spray them on the plate with Pam or butter them, then upend the container(without the paper towel), put the other muffin on top and wait until the "egg muffin" is cooler to eat.

Takes about 2 minutes max from start to finish of the muffin on top.

It is hot so do let it cool to the touch before eating.

Two spoops rice -- traditionally short grain white. "Sticky" rice but any kind is fine.

One hamburger patty.

Smothered with brown gravy.

Fried egg on top.



....and then you eat it.
