Satsumo...I love rye bread...ya can't make a good Reuben Sandwich without it...and Ham is just great with a slice of Swiss Cheese in rye...

Out of the Desert...What did you do to those green beens that you had them cooking all day?...I kinda like mine steamed..or even popped in a frying pan with some olive oil and then fried for a minute..then covered to cook them till "almost" tender...they tend to keep a very deep green color that way...

Hi Bethy!!!
I have missed you, thanks for thinking of me! You are the sweetest girl
Hi Naughtical!! How are you?
I have been drowning in end of semester work, graduation next weekend. I had a worse relapse of that virus that was killing me and finally ended up going to the hospital for an IV, meds and dehydration. I have been working more too and doing a lot of dinners at church. I didn't even get to focus much on Pesach. I was hoping to.

I had beef tongue, latkes, salad, matzah and Banana Split Cake....last night, tonight and the next mmmmmmmmmmm LOL I don't mind leftovers, it is the only way I get to eat these days.

Oh Beth, I am doing a little snack for after church today and I made the Matzah Toffee and a few other things, oh man that stuff is good. LOL I walked away and burned the first batch of butter and brown sugar. OMG it looked like a chemistry experiment of sugar and sulfuric acid! I massive lump of black carbon. When I walked back into the kitchen, it was just catching fire and I could barely see through the smoke! LOL I told you I sometimes do that

Green beans cooked all day is a southern thing. Cooked slowly with bacon fat. I knew I was taking the pot to my dad and that was the way his mother cooked them. Believe it or not, if cooked slowly, they still retain their shape. If just for me, I do cook then in the skillet with olive oil and minced garlic just basicly to an al dente, I love the crunch.

Geez Salmon!! Take it easy as you get through all of this next week. (sure, like that ccan happen!) Ooooh Senioritis.
I STILL have the crud--so nothing tastes all that good yet. Start on antibiotic today--oh yay-- so I'm making another soup. Very simple. Broth from the bone of a lamb leg steak, water, salt, a bit of onion, potato and carrot. It will be very brothy and hopefully good for what ails me. I might add some barley. It smells good.
I did a Chicken soup the other day. That was just a chicken thigh, water, onion, garlic and chipotle bouillon cube. When it was ready I cut up a flour tortilla into squares and tossed them in to make quick noodles. I've had it before so I know it's good, but I couldn't really taste it much. Boy howdy, did that chipotle bouillon burn the fire out of my throat when it hit!!

I am making cucumber sandwiches, pineapple cheeseballs and chicken salad for a friend who is giving her sister a surprise 50th birthday party. Eating cream cheese, salmon on a bagel and drinking fresh squeezed o.j. and hot tea while I attend to the party fare. Also talking to Bella, the wonder cat and doing laundry...Can you say multi task and Fifi is ADHD...haha

Before I forget, Fifi47: Some very important CEO's have ADHD , so don't knock it..lol. And from what I heard either Freud or Einstein supposedly had ADHD..Not sure which, but maybe someone can correct me if they wish to take on the challenge..lol.

Anyway..Smiling Salmon: I've missed you too!!! In fact, Naughty and I were talking about what has happened to people...they've like "disappeared off of the face of the earth." I said, "Well, they've either found someone, busy with their lives, jobs, etc. or just exhausted their usage of the thread." LOL

Anyway...sorry to hear that you had the relapse and ended up in the hospital. Not fun..I am sure. A Refuah Sh'layma to you. (Speedy recovery in yiddish) he he he...Thank you to my grandmother who taught me a few words here and there. Sorry you didn't get too much emphasis on Pesach, but between YOU and ME...glad to be done with matzah. Yummy...a good "tongue sandwich" never hurt anyone...lol. Get your mind out of the gutter people...lol. Yeah..I KNOW..the innuendo WAS there, but shame on you. We're talking "beef tongue" sandwiches...well..minus the bread during Passover.
Anyway, I am sorry to hear that the first batch burned, but we all make mistakes as cooks in the kitchen from time to time. Bound to happen. We're not perfect..right?
Let me know how it turned out for the church. It freezes well and, oh..after Passover, you can use cinnamon graham crackers in place of the matzah if you want and get sort of the same effect, but not with matzah. Try it sometime.

Okay..just relaxing on this Sunday after meeting with friends. What a beautiful Sunday afternoon. Life is Good...Peace people. ~~Beth~~

The Japanese Beef Ramen noodle soup was awsome. I can see why every recipe I read for the "real" thing stated labor intensive. OMG the steps it takes is an all day affair.

I didn't write any of it down, but I'll try to put it into a nutshell.

Marinated a tenderloint in soy, ginger, garlic, white pepper and rice wine vinegar for 4 hours.

julliened the bamboo shoots and carrots very fine.

Pressed the water out of 1/2 a block of extra firm tofu and set it in ginger, vinegar and garlic marinade.

Pan fried marinated steak med rare and them let come to room temp resting back in the marinade again. When cool sliced agins the grain and set aside.

Shitaki mushrooms soaked and reserved the liquid.

Noodles ready.

Saute the bamboo and carrots and mushrooms in peanut oil.

Chopped scallions

6 cups beef broth, 6 Tbs soy sauce, 2 crushed garlic cloves, white pepper the mushroom liquid and a drizzle of sesame oil.

Noodles in the bottom of the bowl, pile on the toppings then ladle the boiling broth over everything and a healthy sprinkle of the scallions on top. Kids LOVED it, and I was quite impressed at the flavor the Shitaki water gave the broth.

I'll be making this again, but I'm going to spice it up a little more than just the whie pepper. A little chili oil just might be the ticket.

Hey Been There Done That: I was trying to view your profile as I was thinking that you and I would make "beautiful music together" in the kitchen department, but HEYYYYYYY..what is going on with the profile viewing on POF? Is there a problem that I don't know about? Anyone else having the same situation? Hmmm.. I doubt it is only me having the problem.

I'm opting for Pollo Tropical. Anyone else love that chicken? I just love the seasoning and the rotisserie flavor.

Okay..don't feel like cooking. Growing up, my family would have chinese food on Sunday nights. I don't feel like having that either.

Have a nice night all.

The viewing profile problem has been an on again, off again thing for a few days. They are working on it.

Another lazy night for me...leftover pizza. It was pretty good, though.

Been recovering from a "bug" thing, so just managed to do some cooking today.

I started the day with creamy steelcut oats, with cardamom, agave nectar, goji berries, and of course, milk.

During the day, I alternated between an oriental soup I made with a mild broth made from bonito flakes, seasoned with ginger, kefir lime leaves, lemon grass, and of course, salt, with brown beech mushrooms, straw mushrooms, and a few small pieces of chicken, with some kashkaval cheese on the side, and Danish style smoked salmon with some Oka cheese on the side, and treated myself to some leftover crème brûlée in the evening.

Right now, I'm enjoying a goooood cup of hot chocolate, that I make at home from my own recipe, which includes cinnamon, mint, a few other flavouring ingredients, and a little Pernod.

I need the nourishment after having been "under the weather". Maybe I'll sleep in tomorrow.

Cupboard was a little bare tonight so I improvised!

Leftover mashed potatoes spread in a pan.
Sliced tomatoes spread across the mashed tomatoes.
Sprinkle with shredded cheddar cheese.
Put under the broiler till heated through. Be sure to take it out before the cheese burns!
Serve hot with salt and pepper or italian salad dressing.

HmmmMmmmm.

Lunch: roast beef & gravy over noodles.

Dinner: Left over Costco beef lasagna.

I'm having a "Naughtical" dinner with a bit of a twist.

I began with a fresh salad, cucumber slices, grape tomatoes, cut up green peppers and sliced carrots, craisins, soy nuts and sunflower seeds with a balsamic vinagrette (sp) dressing.

Now...here's the "naughtical" part...he he he

I pulled out two leftover slices of pizza from the freezer that have sliced meatball, mushrooms and onions on it. Heated them right up in the toaster oven under the broiler and then the toaster for one cycle. Topped with a few red pepper flakes for heat index.

This is dinner along with a nice glass of Malbec red wine..Los Cardos, I believe.

Sorry Naughtical...It was in jest...I DO love the way you make dinner so easy to prepare. It's a Monday night, afterall. Right? I didn't want to make any hardships on myself tonight. Dinner is done!!!!! Kitchen is closed!!!

I've got something I like to call Fiesta Rice bowl cooking up for dinner. White rice cooked with lime juice and cilantro and then served with corn, black beans, red and green peppers, red onion, minced garlic, and a little bit of cheese and salsa on top. Sour cream is on the side for those who like it.

It's super filling and easy to make. It's still wonderful re-heated, too.

Chicken casserole, green beans and baby carrots!!!!!!!
I cooked the chicken breasts last night so I wouldnt have so much to do this evening....added sour cream, cream of mushroom soup and chicken broth (I like a little curry powder in mine too). Crushed the Ritz Crackers, added to the top AND bottom of the casserole dish, and poured a little melted butter on top. Just took it out of the oven...Mmmmmmmmmmmmmmmmmm. Simmered the green beans on low and tossed the baby carrots in the microwave. Dinner anyone????

Beth...substitute a cold beer for the wine and keep the pizza warm, I'm on my way. Hey...I make no secret of the fact that I cook kinda simple, easy meals for me so you made me laugh.
That's why I like reading about all the good stuff you more adventurous and energetic people make.

Justhank: I'm starting to get a little concerned about you...maybe you ought to jump over there to the TV dinner thread and find out what some of the better ones are. Got to be better than...well, you know.

Left over Ramen soup tonight. There was only 2 small servings left and the boy child walked home on lunch open campus in a snow storm to have one of them.

That in itself tells me that this Mom is good!

Gee naughtical. Have you EVER had cabbage noodles for breakfast?
I don't eat them cold if that was your concern.

You'll love this then. Lunch today was a 50/50 mixture of cooked cracked wheat and barley mixed with beef gravy.
Also had an apple and a pear.

Hey Dave...you have been missed. I thought you didn't like us anymore.

I love grilled cheese sandwiches, especially with cheddar cheese. I have no great ideas for you but I do like to put some crisp cooked bacon in mine.

Hank: No, I have never had cabbage noodles for breakfast or anytime and I do not see that happening in the foreseeable future.
Have you thought about checking out cooking classes in your area? If we lived closer we could take one together...hehehe.
