Pot roast, garlic mashed potatos, mixed veggies. I am making all of this for myself, but I am sure a good portion of this will go to the 2 Boston Terriers that allow me to live with them.
People here in town say the dogs eat better than most people and sometimes I tend to agree. But then I have nobody else to cook for and it is tough to cook for one so....

I've got split pea soup going right now. I'm using the white beans instead though. Ham, carrots, sweet yellow onions, celery and a dash of TLC. The smell is intoxicating. It's always better the next day but heck, the house smells great.

oops, sorry! I put 1 cup of rice to 2 cups of water in a pot and after it started to boil. I turned down the fires to med.. Simmered for 15 mins. and rice was done... then I poured shrimp on top.....

Cobb Salad:

a bed of romaine
chopped tomato
chopped hardboiled egg
crumbled bacon
sliced black olives
crumbled blue cheese
chopped green onion
(normally chopped avocado, but this one was bad when I cut into it)
with a garlicky vinaigrette

(I always make it look pretty, even though it's just me . . . .)

On the side: an "Easy Crab & Shrimp Cake"--I got the recipe from this site and they are to die for (I used fresh shrimp and crab).

STUFFED SHELLS/SHRIMP
Just winged this last night yum
1 box jumbo shells cooked al dente
MIX
2 eggs
1 lbs raw med shrimp choped
2 lbs ricotta cheese
1 lbs mozzarellea grated (save 1/2 cup to top)
1/2 cup paresam
1tsp fresh ground coreander seed (I use pepper mill)
S&P
Stuff shells
add to bakeing dish /open side up with a lil of your fav. tomato sauce on bottem
bake pre heated 375 1/2 hr
top with a lil more sauce and saved mozzarela
bake another 15-20 min.

The leftovers of yesterdays cooking session are warming up nicely - ie a lamb shank braised in red wine and organic tomatoes with honey, fresh coriander, celery, carrots, dumpling... Plus I am doing some parsnip crisps to go with it.

Lentil soup w/ smoked pork chops

lentils
smoked pork, cut up into bite sized pieces
Montreal steak seasoning or whatever you prefer
water, usually 1-2" over the lentils and pork and add more if needed to keep it wet.

Put everything in a pan or crock pot and cook until the lentils are tender.

Great dish for these cold nights!

Oh, that's right...not everyone lives in Florida.

Sounds good, MacGyver...not real sure about lentils, though (never tried it). I have got to find some of that Montreal steak seasoning, seems to be a favorite and "must have" for a lot of people.

"McCormick" makes Montreal steak and about 5+ others for any type meats, "Grill Mates" is the product line.


Lentils cook quicker than other dried beans and are great in any veggie/leafy soup w/ ham or even Poultry.

Chopped Kale or Spinach along w/ slivered celery dropped into the lentils after they are cooked is also a great soup base.

Second Time -- I lost 30 lbs on South Beach in 2007, would like to lose at least that much more in 2008. Phase 1 is difficult, just lean meats, low-carb veggies and low fat dairy for 2-3 weeks. Phase 2 is easier, you add in some fruits, a bigger variety of vegetables plus some whole-grain carbs, and stay on that until you lose the weight. It seems to be a logical, healthy approach -- avoid bad fats and bad carbs, eat good fats and good carbs.

What cold nights??? Oh, that's right...not everyone lives in Florida.

I live in Florida and it was colder'n a well digger's behind last night.

Right now I'm cookin' my one and only specialty.... a pot of coffee. That's breakfast and lunch for me. Looks like balogna again for dinner.... Sucks to be a bachelor.

As a storm is approaching, comfort food is always best!!! On stove as I type is a pot of pinto beans with ham fat, and a pot of green chile with pork (of course).

When beans are done...Will mash 'em up with some good ole' bacon grease...Ahhh refried beans!!!

Will fry some hamburger patties...Tuck hamburger pattie, and refried beans into a flour tortilla that is folded in half...Smother with the pork green chile, cheese, lettuce, and sour cream for a yummy "mexican hamburger" !!!

Leftover beans, and green chile tomorrow night for burritos.

Beans always taste better leftover.

A little BBQ pork brisket , baked beans , Awesome soda bread <img src=http://www.plentyoffish.com/newsmiles/007.gif border=0>

waiting in the wings for a little later : a batch of smackin'good homemade oatmeal cookies . They're great , cheated & ate one warm about 5 this afternoon .

( I cut this recipe in half already )

Oatmeal Cookies - Emeril
1 stick unsalted butter, softened
1 cup light brown sugar
1/2 teaspoon pure vanilla extract
1 large egg
3/4 cup all-purpose flour
1 cup quick-cooking oats (not instant or old-fashioned)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
Pinch grated nutmeg
1/8 cup buttermilk
1/2 cup raisins


Preheat the oven to 350 degrees F. Lightly grease baking sheet and set aside.
Place the raisins in a medium bowl and cover with boiling water. Let sit until plump and moist, 15 to 20 minutes. Drain well.

In a large bowl, with an electric mixer cream the butter and sugar until fluffy. Add the vanilla extract and egg, and beat to combine.

Into a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Stir into the butter mixture, and add the buttermilk, stirring to mix. Fold in the oatmeal, raisins, nuts, and chips, blending well.

Drop the dough onto the baking sheets by rounded tablespoons, spacing them 2 inches apart. Bake for 10 to 12 minutes.

Let cool on the sheet for 5 minutes, then transfer to wire racks to cool.

I made 1 pkg. ea. of frozen Baby Brussels Sprouts, Petite Broccoli in cheese sauce and 1/3+ lb. cut up smoked pork into the crock pot (2 qt., perfect for boats) until the veggies are tender crisp and it was yummy, healthy and nutritious!

BTW, Baby Brussels sprouts are really tasty, not bitter at all like the lg. ones.

A nice lowfat Shepard's Pie.

2 lbs or so of ground turkey cooked up in a big deep frying pan with olive oil, mixed with a little gravy master, worcestershire sauce, a packet and a half of Lipton onion soup mix, garlic powder, sea salt, ground pepper, and a little water to make a thin gravy.

I put frozen corn and peas on top of the cooked turkey in a 9x13 baking pan, layer some shredded lowfat cheddar cheese and about 3 lbs mashed potatoes over the top made with garlic powder, margarine and skim milk and sprinkle paprika and ground pepper on top.

Bake for about a half hour at 350 till the top browns. Yum! Lowfat, but my problem is I always want to eat twice as much...

I made veggie soup for supper. It was my first. I had always raved when I showed up somewhere and they had good soup. Duh, all I did was open the cans and heat it up. I am a "chef" now....

Okay, it's 10:30pm right now and I'm about to remove the Chicken Marsala from the skillet. I made a serving for 6 so I should have it around for a while. I will freeze 5 servings. And the one serving will be eaten shortly! (oh, and with yukon gold baked p0tatoes and garlicky broccoli spears (that's broccoli spears not brittany spears! )
