Orange... but any kind except Chocolate... I don't like Chocolate.

The stuffed tomatoes... Well no recipe really.

Ground beef
Garlic
rice
onion
tomato sauce (not very much)
Green pepper
Water
cook till the rice is done then stuff in a tomato... cook in the oven for 1/2 hour. You can put cheese on them if you like.

Just like making stuffed peppers...

It has been a long day and a bit of a long week so I don't feel like doing a lot of cooking. So I made Angel Hair pasta with pesto and small shrimp. Along with that I made a small caesar salad. I cracked a bottle of Chanti Rufino.
Easy, filling and not too much to do or clean up.
I just used store bought pasta. I fried the shrimp in olive oil, garlic with a touch of red pepper flakes. For the pesto I have the recipe below. Then I tossed the pasta, pesto and shrimp.

3 Cups Fresh Basil, loosely packed with large stems removed
3 Tablespoons Pine Nuts, lightly toasted in the oven or a dry skillet
2 Cloves Garlic, roughly chopped
1/2 Cup Asiago, freshly grated
1/2 Cup Extra-Virgin Olive Oil
Salt, to taste

1) Place the pine nuts and garlic in a food processor and pulse until mixture is finely ground.
2) Add about half of the olive oil and a handful of basil. Process until the leaves are incorporated. With the food processor running, add more basil through the feed tube, a handful at a time, until all the basil is incorporated and the mixture is smooth.
3) Add more oil to obtain the desired consistency.
4) Stir in the cheese with a spatula.
5)Add salt to taste.
Pesto will keep, refrigerated, for one or two weeks

For the salad, I tore up some romaine added some bacon bits ( I make bacon bits, freeze them in small sacks. Then when needed, I pull a sack and nuke it for 15 - 20 seconds) I then added some croutons. For the dressing I have listed it below.

2 large heads garlic
1/4 cup dry vermouth
3 1/2 tablespoons plus 1/3 cup olive oil

2 1/4 teaspoons minced fresh rosemary
3 cups 1-inch French bread cubes

2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon anchovy paste
1 teaspoon Worcestershire sauce
Dash of hot pepper sauce (such as Tabasco)

1) Preheat oven to 300°F.
2) Peel off papery outer skin from whole garlic, keeping heads in tact.
3) Place in small casserole dish. Pour vermouth over. Drizzle 1 tablespoon oil over garlic. Season with pepper.
4) Cover; bake until garlic is very soft and pastelike, about 1 1/2 hours.
5) Cool garlic.
6) Squeeze garlic to remove cloves from skins.
7) Place in small bowl and mash with fork to form paste.
8) Transfer paste to blender. Add fresh lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce and hot pepper sauce and puree.
9) With machine running, gradually add 1/3 cup olive oil.

Chicken Nachos

Shredded Chicken (okay, I admit it... I used canned chicken breast)
Black Soy Beans (almost pure fiber)
Mexican Picante (canned from the Mexican grocery)
1/2 can Chipotles in Adobo Sauce (cut into small pieces)
Onion Power

I drained the chicken and beans, combined all ingredients in a skillet and simmered until the beans picked up the flavors from all the spices in the dish.

I laid out some (soy) chips and spooned heaping portions of the mixture on top, sprinkled with cheese and added some sour cream.

I have a very basic kitchen in a small apartment. I am house hunting right now. But it is not that hard. It does help that this is what I do for a living.

Anyway, I really had my breakfast AND lunch today at the nail salon. In other words,
I didn't eat.....but my toes look beautiful. I got this NEW color by Essie (the ladies know this brand, I AM sure) called "Guilty Pleasures"..ha ha..
I have NOTHING to feel guilty over and as far as PLEASURES....well..been a long time for that as well...sigh

Now I'm craving those yucca fries from Pollo Tropical. I was thinking of going to get some chicken and some yucca fries being that they are open until 11 pm, but I don't know. Maybe I'll opt for a half of a grapefruit and a salad instead, but then my craving is going to get worse and worse and worse......such a dilemma.

Tuesday is when I go back to work. So today I went for a ride to Banff. Really beautiful there. I just got home within the last hour and I haven't eaten all day.

The bbq is heating nicely. I have a half chicken that I have made some cuts in the skin and put slivers of garlic in. Then I rub it with a little lemon juice and olive oil.
With that I am grilling fennel. I cut it in half, lengthwise. Then I applied a mixture of olive oil, balsamic and dijon. I'll grill this.
A supplier I work with gave me some creamer potatoes. They are small potatoes (baby potatoes). These ones are red, white and blue in colours. I am tossing them in olive oil and fresh rosemary. I'll wrap them in foil and grill them.
In honour of my friend "Charmed", I made fresh fruit popcycles last night. I'll have one for dessert.

Hey, it was either that, or order a pizza!

It's TGIF...

Hate when you have a cupboard full of items to cook, freezer and fridge full of delectable treats and, you roll around your tastebuds for an "idea", but NOTHING.

I guess I will just heat up some of my leftover broccoli cheese soup and make some pizza along with a glass of red wine.

Okay...

menu changed earlier, of course. I'm just updating for all you inquiring minds..lol.

Seems my new refrigerator posts got more reviews...will have to come up with something more interesting..I suppose. LOL

Anyway, I nixed the broccoli cheese soup. Wasn't in the mood, but I "doctored" up a pizza that I put in the oven. I defrosted about 6 cooked, peeled and deveined extra large shrimp and washed them drained them and placed them on my pizza. Sprinkled a little garlic powder on them and 11 minutes later..voila...great pizza.

I forgo the wine too. I decided I didn't feel like getting a buzz from the wine all by myself, so opted for some new Canada Dry gingerale with green tea antioxidants and vitamin C. Oh..and of course, took all of my vitamins. It tastes good..who knows if it really has any green tea or antioxidants in it. LOL

Good night all..I've got my boogie shoes on and dancing to "Saturday Night Fever" which has been on the big screen tonight. Nothing like being able to dance in your underwear in your living room in front of your full length mirrored wall while watching a movie on the big screen. (I'm sure you are all laughing at the visual I've presented now..lol)

P.S. Charmed: Was that a 7-11 type slurpy? LOL That's what came to mind for me.

My dinner plans changed just as I was taking everything off the grill. I noticed that I had someone moving in next door. A single Mom with two children. She was a bit overwhelmed with the kids saying that they were hungry, trying to empty the U-Haul and get it back by 8pm. So I brought the stuff off the grill over and fed the kids.

So, I made an old Montreal favorite, Steamies. That is hotdogs steamed with the buns steamed also. I topped them with a little vinegar based cole slaw. chopped onions. With cole slaw on the side.

home at 5pm....baseball game on the otherside of town, (may as well have been in Calgary with the funking traffic!) at 6pm....no time for nuttin'....

monkees had Big Mac's "a la route'"...(youngest angel spilled a full frutopia all over oldest Mr.Baseball and 2007 Ultimate seats)...made for wonderful dinner conversation...

Mom had left over ordered pizza from last night.....and cheap red vino....after all the hoopla and some quality TV time with the monkees...

....twas exquisite.......bon apettito mi amigo's.............

Oatmeal with brown sugar, milk and banana. Yogurt and some English breakfast hot tea with lemon. Lunch will be bbq pork chop on toasted bread with a bit of slaw on it, fried potatoes and sliced tomatoes. Probably no dinner, but then I am going to a wine tasting tonight, so might need a bit of a snack beforehand.

This was my lunch today as I won't be able to spend much time on dinner and I had a guest. Oysters on creamed leek, then I added a guinness hollandaise. Recipe below.

24 oysters, shucked, with juice retained
2 tablespoons butter
2 tablespoons water
2 leeks, white and pale green parts only, thoroughly washed and sliced
2/3 cup cream
Salt and freshly ground black pepper

Guinness Hollandaise:
3/4 cup (1 1/4 sticks) butter
1/2 cup guinness
3 egg yolks
Juice of 1/2 lemon

1) Over a small bowl, shuck oysters, strain and reserve the liquid and the shells.
2) Combine the butter and water and cook over medium heat until butter has melted. 3) Add the leeks and cook until slightly tender, 3 to 5 minutes.
4) Add the cream and reduce until it thickens slightly, stirring continuously, 3 to 5 minutes.
5) Season with salt and pepper and keep warm in a bowl over hot water.
6) In a small pot over low heat, melt the butter.
7 ) In another pot over medium heat, combine the reserved oyster liquid and guinness and bring to a boil. Cook until reduced to about 2 tablespoons.
8) Transfer the mixture to a food processor or blender. With the motor running, add the egg yolks and lemon juice, then slowly drizzle in the melted butter and process until thickened.
9) Preheat the broiler.
10) Place the reserved oyster shells on a baking sheet.
11) Divide the creamed leeks evenly into the shells and top with an oyster.
12) Spoon the guinness hollandaise sauce over each and place under the broiler until the sauce is browned and bubbling.

Calgary--how do you get them right? I try, but .... they are never as good as I remember from when I worked the concession stand in college (of course all these years of memories may have sanctified them in my mind!). Seriously, how do you do yours? PS what a sweetie pie!!
I have to quit goofing around on here and finish putting away the mounain of dishes and pots and pans I made putting up all those chicken dishes this week and I have a ton of fresh lemons to juice and freeze. Gotta quit playing and get to it.

Over the years I've aquired a lot of cooking tools and equipment. One of which is a professional table top steamer.
You can boil the hotdogs and put the buns in a bamboo steamer on top of a pot. You can get them in any chinese grocery for about $10 or so.

along with an egg, try soaking some stale bread or french bread in milk and squeeze it out good them add to meatloaf mixture.
