Oh man ,I can't just have coffee in the morning. I ususally make breakfast my biggest meal. So I'll do waffles, eggs, steak 'n eggs, maybe toast, cereal, juice, etc. (not all of those together! ) Most people just get up in the morning ---- I get up and COOK!

I a sure everyone probably has a recipe sort of like this but I always get lots of compliments, I do it a little different (NO cream of chicken or cream of mushroom soup!!)

Chicken and Rice

This can be adjusted to however much you need for the amount of people you have to serve. I usually end up making a huge batch in my roasting pan LOL.

I use organic chicken broth instead of water to cook the rice
Since the broth is denser you have to add more broth than the normal 2 parts water to 1 part rice
I dissolve some chicken base, not bullion but the kind that requires refrigeration after opening the brand I get here is called Better Than Bullion, again the amount depends on how much rice you are cooking. I make

3 cups rice
60 oz if chicken broth
1 T chicken base

You can use any part of the chicken you prefer, I just use whatever I have on hand.
Place the chicken on top of the rice and broth
Season the chicken to taste ( I season rather heavily so the rice gets seasoned too)
Cover with foil or the lid and cook at 350 degrees F for a little over an hour or until the rice is done and not soupy.
uncover for the last 1/4 to 1/2 hour to brown the chicken

I know this is simple but I have friends that come running when I fix this and their 7 and 8 year old kids really like it. The 8 year old says I make the bestest rice LOL

I just wanted to say thanks to thos who gave a meatloaf recipe. Will see if I can manage one without messing it up.
It's cold here so I have some chicken and noodle soup simmering, will make a grilled cheese sandwich to go with it.

I have a pizza in the oven. It's just a frozen cheese pizza but I added stuff to it. Hot italian sausage, pepperoni, mushrooms and lots and lots of extra mozzarella cheese.

I'm eating a chicken breast n veggies. A simple, quick, one pan bachelor type meal.

Start the grill pan, put in baby carrots and a 1/2 cup water. Put on simmer. Go cut an onion, add that. Sprinkle some seasoning salt on that.

Then I deseeded a dried guajillo pepper. Tore it up and stuffed it in the coffee grinder. Whirl away. Sprinkle half on each side of chicken breast, add to pan. Added half a red bell pepper, too.

Very tasty, a lot of the veggies are slightly blackened. Very low sodium -- not that it was my intention. Plus a glass of cranberry juice.

After that I realized on the bottom shelf I had taken two steaks out of the freezer last night.

I just cooked spaghetti. I don’t know how to cook anything else. If it weren’t for spaghetti I’d never be able to eat again for less than $39.95 take out.

I boil the noodles until they are flavorless. Burn the hamburger until the smoke alarm goes off. Throw in some store bought spaghetti sauce and then watch my son devour in 10 seconds what took me hours and hours to prepare.

I also cooked garlic bread. The kind you can buy in the store pre-garlic-ed and buttered. I put it in the oven on broil at 500 degrees. I was told to put the oven on 400 degrees but I figured an extra 100 degrees meant a shorter wait. Went back when the second smoke alarm went off and took out my charcoal briquets. My son ate one and said it was so-so. I'll use the rest of them on the grill next time when I grill spaghetti.

Yep, it was spaghetti. At least that’s what it said on the box. Looked kinda’ funny and didn’t taste like what I remember spaghetti was supposed to taste like.

But I cooked it. All by myself.

I just did Bbq chicken breast marinated in Worcershire and Hot sauce and slathered with Sweet Baby Rays Bbq sauce, with 2 small baked potatoes which I smear with butter and then sea salt and place right on the grill or oven, and some buttered egg noodles . It was spur of the moment and simple and quick.

a very boring thrown-together mess of chicken breasts, leftover cream of chicken soup, cream of mushroom soup, mushrooms, garlic, red potatoes. asparagus - just basically cleaned out the fridge and threw it in a casserole dish and in the oven...was hoping for comfort food, but basically it's too tasteless so tomorrow what's left will become REAL soup, after I doctor it up some more!

Fixed pork roast and potatoes but I ended up eating left over tortellini alla panna. the pork was too salty but the kids loved it!

I'm going to cook up some chicken leg quarters in the crockpot.
Take them out of the bag, rinse them off, and throw them in. You can add potatoes, and vegetables and throw some salsa, bbq sauce or canned tomatoes over top. Cook on low for about 5 hours and at dinnertime everyone's happy.

Tonight I made a flank steak cooked medium rare, seasoned with salt & pepper and crushed red pepper. I then made a side of pasta and a gorgonzola cheese sauce from the beef remains in my skillet. Mmmmmm

Ooooooooo kaaaay. This is fun, so I guess I will keep it going.

I have made a chipotle salsa, minced some onion and cilantro, and mashed an avocado with salt, pepper, garlic and cilantro.
I am softening some yellow corn tortillas and cooking some large brown shrimp in a cast iron skillet with olive oil, garlic, butter, chipotle, cilantro, oregano, celery salt and green onion. I have some sweet potato fries in the oven.

I take a tortilla, slather on some mashed avocado, place some shrimp, chipotle salsa and minced onion and cilantro, fold over and eat. As a side dish I have the sweet potato fries. SO GOOD! It is my favorite 15-20 minute go to meal.

Needed something hot and filling, no salt, and fast. Soup is always good... Tired of ramen, sick of the frozen chicken or squash soups in the freezer, Miso wouldn't fit into the last shopping expeditions budget so faked it...

1 small handful Soba Noodles (Japanese buckwheat noodles) about 3/4" diameter bunch cook to directions in a pot of water, drain and reserve. meanwhile while the noodles are cooking put on a tea kettle for boiling water- about 2/5 cups
When noodles are done and drained, and water is boiling...
Dump 2.5 cups of water in the noodle pot, add 2 tsp Wasabi powder, 1/4 cup NO SALT Shoyu (soy sauce), about 1 T dried minced onions, 1/4 tsp minced garlic, 2 T rendered chicken fat (or 2 chicken bullion cubes + 1 tsp oil). Bring to boil whisking, re-add the soba noodles to the pot and heat for 2-3 minutes.

The soy, wasabi and chicken fat make an almost passable miso substitute. Miso would have been better but not in the budget this time. The rendered chicken fat has NO salt, and adds tons of flavor instead of the salt-bomb bullion cubes.

Overall, not a bad experiment. Tasty enough, filling, hot with just a hint of an after-burn but NOT the usual eye-watering spiciness from the wasabi, and the soba noodles held their own nutty flavor without being overwhelmed with anything else.

grilled peanut shrimp is my dinner for tonight...easy to do on the grill so really no mess to clean up! Super easy and super YUMMY!!

I pound raw shrimp-peeled and deveined...place on a skewer..

mixed the below all together and heat up for 30 seconds..stir well..

1/4 cup soy sauce
> 1/2 cup splenda(or u can use regular sugar)
> 1/4 cup peanut butter
3 cloves of garlic, minced
1/4 cup canola oil (or other)
1 Tbsp water

spread half the mix on the shrimp and then place on the grill..cook for about 5 minutes until the shrimp are pink....serve with the remaining of the mixture!!!

I absolutely looooove shrimp but...I'm not sure about it with peanut butter. I'll have to give it a try, though.

The shrimp recipe sounds great, I'll have to try that sometime.

Last night I reheated the remains of my flank steak with barbeque sauce and cheddar in a low carb tortilla. Pretty boring night for cooking.

Tonight is boneless chicken breast..marinated in low fat/sugar free italian dressing over night...cooked in the skillet slowly with a bit of EVOO....Served with some salad with lemon juice dressing...yummy!

I plan on cooking some chicken on the grill tomorrow, I'm going to marinate it in Italian dressing tonight.

Your way of cooking the chicken sounds delicious. I will admit that I did not know what EVOO was. When I looked it up I felt kinda stupid...I should have known that!.

Tonight I'm just heating up some leftover pizza.
