Naughtical, I posted a photo of the Veal Milanese on my profile. The side dish is a simple peppernata of red & green peppers sauted in olive oil with crushed chillis and garlic.

mmmmhhhhh...he just started a couple new threads today, must have been something sudden.

First Americanrover, then Nomad and now Calgary

Cooking dinner late tonight...I have half a chicken baking in the oven. Going to have some mashed potatoes and gravy, corn and biscuits with it.

*sighs* I didn't even get a chance to see his veal picture before he left. *sighs, again*

LOL maybe it was that whole honesty in profiles thing....I know his profile said Capricorn, but here he said birthday in a few days, which would make him a cancer...

Anyway, I thought Nomad and Rover were coming back, hmmmm I email them at their other emails, but have been out of touch the last few days, I will ask them. I am going to have my grandchildren and be on vacation for a couple of weeks, so if you don't see me, I DIDN'T disappear.

I have too much going on, so didn't cook today, had some ice cream and a wrap with turkey, peach jam, jalapenos, dill, cream cheese, green onion. I cooked a lot the other day, but haven't gotten to post. I made some fried eggplant; rapini stir fried with some lemon rind, pecans, shallots, red raisins, a little brown sugar; roasted some asparagus with shallots and olive oil, made the brown bag chicken which was awesome!; and some stir fried mushrooms, onions, tomatoes, corn and shrimp; fried some potatoes with bacon, onion and jalapenos; made cornbread sticks. I have LOTS of food in the frig now. I only had enough turkey left for 3 more wraps, so I eat them when I work at night because they are light on my stomach. I have one left to go and I will be done with the smoked turkey!

Hey everybody...

I'm in the same boat as you are SmilingSalmon...I guess I will take your suggestion and use up my leftover brisket (hunk) in a wrap much like what you are doing with your smoked turkey. It will be awhile (a long one at that) before I buy another brisket. The work to make it was easy, just running out of ideas on what to do with the leftovers so it isn't wasted...and btw...feeding it to the dog is NOT an option.
He was lucky to get some filet mignon during the hurricanes back in 2005. I'm not doing THAT again....lol

Oh...what did I eat...well..went to visit my Mom with my daughter down in Miami for the 4th of July for lunch. My mom is doing amazingly well..so well in fact, that she was able to get downstairs (she is using a walker and wearing a brace to support her back and all around her) to go to lunch in my car. We went to this GREAT place in Coconut Grove, Florida called, Perricones. We started off with a baked brie in crudite with apricot jam melted on it, brown sugar and sliced almonds. Carr crackers were placed all around it, as well as green apple slices. strawberries, grapes and blueberries. Yummy. I ordered a mixed green salad with grilled gulf shrimp, walnuts, gorgonzola cheese and a vinagrette dressing on the side. For dessert, had the Tiramisu and a decaf cap. Needless to say, my daughter is the only one that finished her Spinach ravioli with a pink coral sauce, but my Mom didn't finish her dish, so I basically brought home an entire meal to be eaten tomorrow. LOL. I brought home the remainder of the brie (which I can nuke), my leftover salad, my Mom's leftover whole wheat pasta with grilled shrimp, veggies, sundried tomatoes and artichokes and the rest of my tiramisu. OH...almost forgot...there was the neatest dessert that my daughter and my Mom had. It was called, "Chocolate Sushi"...

Now..Naughty....relax....I KNOW what you are thinking....it had NOTHING to do with fish...I PROMISE...
It was coconut rolled up with pistachio nuts in dark chocolate and then cut into sushi looking bites. Rather creative, I think. And there was this honey-like, caramel substance to dip in the middle of the plate. Amazing lunch. Mom is recovering nicely and, all-in-all, it was a lovely visit.

Okay..going to try to go back to sleep.

I'm making a super easy cheesecake
1 Package white choc. chips
2 8oz packages cream cheese
1 sm container coolwhip
2 grham cracker pie crusts
1 tsp vanilla
Melt the chips stir the cheese into warm chocolate. Stir in vanilla then fold in thawed coolwhip. Pour into crusts and refrigerate till set. yummy plain or you can top with whatever fruit you like.

Cabbage salad w/ 1000 island and home made ground beef jerky that someone recommended in my beef jerkey thread.

I'm making my famous no flour peanut butter cookies. Heres the quick and simple recipe: 1 egg, 1 cup sugar, 1 cup peanut butter. Mix ingredients, put on lightly greased cookie sheet, cook at 375 for 10 minutes. Makes about a dozen.

I didn't cook anything today. I was about to make my final decision about what to cook Wednesday for my current love interest, when dang it I find out that he is a day late getting back from fishing at Key West (storm watch made flight delayed), so he will not be able to spend time with me as he had planned on Wednesday. I like dating men who are business men (so far removed from my public school speech therapist type of brain, although he used to be a teacher so we have lots to talk about), and I am learning all about the popularity of various products that are marketed by America's #1 soft drink company, but he works and travels a lot. We will still do lunch on Wednesday, and that makes me happy. I ate dinner tonight with a friend at Chili's, brought home most of my dinner, maybe being in like or lust or whatever is making me lose my appetite? nah, my favorite khaki pants still fit the same. Now I am craving something sweet, so peanut butter and Nutella on a graham cracker with milk should do the trick.

This is the same recipe I use, but when they are slightly cool, we put an unwrapped Hershey's Kiss right in the middle....yum!

Actually caught some fish this weekend . I steamed them and used the water for noodles with alfredo cheese sauce. Threw some veggies together and viola.

I am now just learning how to cook. But so far I have made some delicious simple dishes. I found this one in a magazine and decided to make it today. I cut open a tomato half way and baked it. I also sauteed some mushrooms and spinach and mixed some soy sauce in with it too. I also cooked up some tuna fish and then stuff it all in the tomato when everything was done. It was so delicious. That soy sauce was what made it taste soooooooooooo delicious. Mmmm Yummy!

We have a few days of rain rain and more rain...so I made up a batch of beef noodle soup.

We ate half the batch tonight, and the teen units will have it gone at lunch tomorrow I'm sure.

Mmmm...healthy and yummy too.

For dinner tonight we had sliced bbq ham, fresh baby limas, fresh corn on the cob, cantaloupe slices, oatmeal-banana cake. My little kids helped cook,, OMG corn silks all over the kitchen! lol

I'm just plain lazy tonite! I cut a cantalope in half and cleaned it. I put cottage cheeze in the middle and a strawberry on top for 1 half. The other I made some instant pudding and filled it up. We're having wish sandwiches for the meat . OK OK I know it's old as heck but I still love the joke.

Well, the grandchildren and I have had many things these last few days. They wanted me to cook a ham, so ham has been the highlight and main ingredient in many of those meals. The best thing is that they have not realized they are getting the same ham each time because I am doing it so differntly. I slow roasted for about 7 hours a fresh ham in about 15 spices, most of them the sweet spices with ginger beer and apple cider that I had frozen from last fall and I gave it a brown sugar apricot glaze.

We have had with with baked potatoes and broccoli with cheese,
with scrambled eggs and biscuits and redeye gravy,
on a pizza,
in a frittata with potatoes, tomato, basil, black pepper, onion and a little cheese, which they loved best of all of them so far,
in enchiladas,
in wraps,
as a sandwich,
I need to get some more ideas.

TexasBaby, I see you are from Burnet and I know how to pronounce it too. I am from Texas and I LOVE LOVE LOVE Inks Lake. Been camping there many times. It was the favorite spot for my children and I as they were growing up. We also used to live on Galveston Island. That place has a lot of little secrets only the long time locals will know. I have only recently seen you here, WELCOME

Thanks for the welcome ~ back. I have been on the site a long time, but broke my computer months ago and just replaced it recently. I've missed posting and reading the forums.
Yes, the part of TX I live in is beautiful, lots of water to play in too. My van is always full of life jackets and noodles for days at the lake.

You know you can throw some of that ham in a pot of pinto beans,,, yummy!

Hey, damon. Whajah bring me?

Last night was mustard greens, little red onions, and spicy Italian sausage, all from the farmers market, tweaked with mushroom broth and red wine. I always grate a little nutmeg into my greens. Love my greens! I had the last, fat slice of my own gooseberry-blueberry pie for dessert. I love my gooseberries. And my pie. Sausage, too, for that matter. I am such a slut . . . .

Tonight I'm stuffing chicken breasts to grill for a few friends. Two tricks there that work for me, both from the traditional French ballotin. I pull the skin off the chicken in one piece as best I can, so I can tie it around the rolls to preserve moisture ands preserve flavor. And I always purée some meat for the stuffing, which makes it cohere. Don't you hate it when a filling just falls out? A little meat makes all the difference.

Oh! I pound the breast meat out and roll them up like jellyrolls. So much easier than cutting pockets into them.

OK, now I'm hungry.
