Naps can be social. Ask your kids. Ravers and other youngsters have been napping in big, chummy piles for ten years or more, in big college towns, anyway. Touch without sex. Affection without entanglement. Puppies!

So, no cucumber salads. And no beans.

I'll bring a seviché platter, three or four different fish, lime-pickled, arranged around a heap of salsa, with chips and soft tortillas. If I'm promised that nap, I'll make the salsa. Otherwise, you get CostCo. (Which ain't bad!)

I have a simple yet divine dish that I make...BUT!? U MUST LIKE FISH..get some nice fresh salmon...pref. a nice thick northern salmon(not up on exact species or whaever..pink & thick with skin!)already cut into nice steaks..LEAVE THE SKIN ON!..let them soak in some cold water with either some lemon juice and/or white vinegar approx 10 mins, unless u don't mind the extra fishy taste .
yields approx 2 (nice size servings) of gourmet-ish dinner atkes approx 30-35 mins ingredients
approx 1lb of salmon
1bag success white rice 1 bag of success brown rice
approx 1/4 lb-1/2 of asparagus..use broccoli if u don't like asparagus
chicken stock..either boxed liquid and or OX brand..low sodium !
extra virgin olive oil
one small onion,yellow or green
a handful of baby carrots already peeled or one medium carrot (peel it)
Knorrs lemon herb sauce mix if u can find it if not get the bournaisse (?)spell check 1-2 packets I usually use 2 if u know how to make ur own white sauce that will work and ur own herbs___ milk
1 stick butter .. Fill bottom of a deep skillet pan with a lil' COLD! water add fish put on med. heat & cover(add a lil onion or garlic if u want). Get ur rice cooking according to bx isntruct. start steaming veggies(med heat)
if u don't have a steamer use a stainless steel colander over a pot of water & cover...the rice will be the first thing done usually.. drain it well.. in a med. sauce pan add approx 1tbsp oil..over med-low heat..use a grater and grate in the onion & carrot(use all if u want) let it cook approx 3-5 mins at most! add the chick broth about1 cup....add the rice to this mixture...stir well..pepper & salt to taste ..that is done..now start ur sauce..again accord to sauce pkg.
check veggies if done turn off.. after sauce is prepared squeeze in the juice of one whole lemon (if it isnt already lemon flavored!) and whisk it in.. done. check on fish flip it &
cover... approx 10-15 more mins ur fish should be done u can poke it a lil to let water in other areas..use a big fork & gently poke.. when fish is done drain off water or add alil to sauce(can do whiLe sauce is cookiNg too) still want sauce 2 be thick...by no wthe veggies are done!..make ur plates...drizzle the sauce over everything ( i like to make a lil pool in
the rice..u can make a lighter version of the sauce.It makes the dish!Viola! tell me it aint good!?

That sounds good, Mzsomebody...maybe you can bring that to the potluck dinner Outofthedesert is hosting.

I'm thinking about bringing some shrimp kebobs for the grill and maybe some twice baked potatoes.

Hope she comes back and lets us all know what time we should be there.

Tonight I am just having soup and sandwiches...too lazy to cook.

Ok...Count me in on the pot luck...

if we do it in the Mid West somewhere, I'll do my damndest to be there and I'll bring Ribs and Kraut, my famous bacon ranch pasta salad, and red white and blue sponge cake dessert.


Not cooking tonight, kids are with Dad for another half hour, and cooking for 1 really sucks in the summer. Just going to de-stress with a glass or 2 of wine and hit the sack early.

Here is what I made for dinner tonight. It started out as creamed chipped beef but on an impulse became something completely different that I had never made before.

2 tbsp butter
2 tbsp flour (or xantham gum)
1 package of chipped beef (or substitute any cooked meat of your choice)
1/4 cup red enchilada sauce
1 cup milk (or half and half)
1/4 cup sour cream
1/2 cup cheddar cheese
Tortillas

In a large skillet melt the butter and then add the flour. Let it cook for 1-2 minutes to get rid of the taste of the flour. Add in the red enchilada sauce and stir it until it becomes thick. Add the meat and coat it with the sauce. Slowly add in the milk and whisk with a fork until it thickens (about 3 minutes). Stir in the sour cream and cheese and let it melt.

Take a tortilla and fill it with the mixture, roll it and then top it with more sauce. This should make 3-4 rolls. Sprinkle with more cheese and put it under the broiler until browned.

I use half and half because it is lower in sugar than milk. It also makes it a much creamier dish. I use xantham gum instead of flour. Instead of tortillas I used a low carb wheat/oat/flax wrap that I buy at walmart. Hard to believe this is diet food isn't it? :D

umm pot luckin ...I just smoked up a bunch of trouts and salmon as well as pickled some salmon...but the pickle takes a month to cure. Well worth the wait though.

I bought almost 10 pounds of green (raw) Georgia peanuts at the farmer's market yesterday. I am boiling them now. I LOVE BOILED PEANUTS!

I do realize it is a regional thing and I do understand how gross it must sound to those who have never ate them but they are good. The saltier the better.

currently I have banana cake in my oven, I just baked banana muffins and before that I baked Zucchini bread...it's all about the baking today!
For supper, I have a pork tenderloin marinating in Heinz chili sauce and garlic powder in the fridge to throw on the 'q soon!

Hey, Hopergroper...never heard of pickling salmon, bet that is an interesting taste. The only smoked fish I ever had was smoked mullet.

Tonight I grilled a 1/3 lb burger with pepper jack cheese and put it on top of a portabella marinated with olive oil and balsamic vinegar. I made some fresh green beans and also grilled a piece of lavash bread.

I took boneless chix breasts and let then marinate in a dry rub with flour overnight. Took the gluey breasts this evening and rolled in corn meal and grilled till golden and crispy...

Alfredo Pasta and garden green beans....

MmmmMmmm crispy Chicken and not fried in oil...

just put olive oil brushed on the grates of the gas grill on low heat...

<<< Grilled some Ka-bobs yesterday, marinated some sirloin chunks in olive oil, soy sauce, garlic powder, onion powder, celery salt and rosemary. And in case you ever want some really strong rosemary flavour...I've been grinding some through a spare pepper mill every time I make roasted potatoes...and so I ground some into my marinade yesterday. I parboiled some new potatoes...slipped some fresh from the garden Walla Walla onion chunks on the skewers...some green pepper, some zuchinni....and had an excellant dinner....

I had the most delicious CRAB last night.

Naughtical: I went to this place that serves all kinds of crab. I opted for this bucket of dungeness crabs (never had them before) that were coated in garlic and herbs and also old bay seasoning. It came with two whole crabs with about five claws attached, a corn on the cob on a stick and a boiled new potatoe. OMG...the crab tasted like lobster to me. It was delish..and, I just thought that I would make you all drool.

Tonight I had a swiss burger, medium rare with sauteed mushrooms. Homemade potatoe chips on the side with sour cream and honey to dip in. Yummy!!!

Oh..and one of Naughtical's favorites; although, mine was a raspberry flavored one.


As Vulf always says..."Chores"....(maybe he LIKES to do chores or else he MEANS to say "Cheers" and puts a little twist on it????)

I'd like to do your chores, Beth, if that clears anything up . . . .

The new Cook's Illustrated came in Saturday's mail, and had an interesting twist on pizza dough they claimed saves a lot of time and still comes out well risen and chewy. They were right! All it was, was to mix the flour, water, and salt and let that rest for 20 minutes to develop the gluten. Then stir in the yeast and a little sugar to goose it along. It only needed about a 10 minute knead - instead of the usual 30+ - before putting it down to rise.

I topped it with roasted eggplant and three colors of heirloom tomatoes from the farmer's market, basil from the garden, and CostCo mozzarella. But I would have eaten that crust by itself!

And, Beth, if you were a crust . . . .

As for my "chores"....believe me when I say Vulf, if you were REALLY serious about THAT one...I have PLENTY for you to do. I won't hold my breath though.
I would seriously LOVE it if a man would come into my life that loves to organize, and help with organization, BUT does it in a loving manner. Also, doesn't mind taking "breaks" or "quickies" in between the organizational tactics that he would be "teaching" me.
