Posted: 3/1/2008 5:18:22 PM | | I have not eaten anything today except popcorn, a diet soda and some vanilla wafers so I decided that i needed some veggies. I combined crushed pineapple with juice, a teaspoon of mustard, some brown sugar, apple juice and some ginger fig preserves that I had in the refrigerator, let it simmer for about 10 minutes, then spooned it over the chicken which had been cut into pieces before roasting it and let this cook for a few minutes while the cornbread baked. My mother uses all knds of fruits and juices to make glazes for pork, ham and fish. I have also used the fruit nectars that are in the can (Jumex is one brand that I buy) to make glazes and sauces. I try to cook about 3 times a week, since leftovers do not bother me and I live alone. (but never tell my calico cat Bella that I said that, she seems to think that I live with her) | |

Posted: 3/3/2008 9:09:27 PM | I took a bunch of asparagus (trimmed and washed and pat dry with paper towels), drizzled garlic-infused olive oil on them, minced garlic, seasoned bread crumbs and grated parmesan cheese, tossed them around a bit and then roasted them in a 450* oven until fork-tender. (I am sure you could do brussel sprouts like this as well.)
You can have them as a side dish or chill them overnight and eat them cold too, perhaps on a salad with flaked tuna or lump crabmeat.
Yum Yum.

naughtical, roasted brussels sprouts are good. I didnt think so until i tried them,same as roasted cauliflower,anyway,
Thought i would share this though
Cream of Asparagus Soup
serves 8
1 1/2 lb asparagus 4 T olive oil 2 leeks.cleaned,cut in half and sliced 3 cloves garlic.minced 6 c low sodium chicken broth 2 c milk salt and freshly ground pepper to taste
Remove tough ends of asparagus stalks.Cut stalks into 1 inch pieces. Set aside.
In a large pot, heat oil. Saute leeks until tender.Add garlic and saute for 1 minute. Add asparagus and chicken broth.Bring to a boil.Lower heat and partially cover pot. Simmer until vegetables are tender,about 20 minutes.
Transfer soup to a blender and puree. Return soup to pot, add milk and stir to combine. Add salt and pepper, to taste.
per serving 151 calories, 8 gr protein, 12 carbs,2 gr fiber,9 gr total fat | |

| Hey good lookin' (and others), whatcha got cookin'? Posted: 3/4/2008 9:34:38 AM | Just planning what I am gonna make for dinner tonight, and I think its gonna be Italian sausage gnocchi. Sooo yummmy! Especially love the fact it takes no more time than to make the pasta.
1 pkg of gnocchi (I use med shells in a pinch)
1tbsp Olive oil 1 lb italian sausage ( taken out of casing) 2 roasted red peppers cut in thin strips 2 cloves of garlic minced a handful of parmesan cheese 250 ml of whipping cream(more depending on how many ppl u are feeding) - I use 500ml generally to extend the sauce Put water on for the pasta.
Break up and fry the sausage in oil when almost cooked add the garlic, roasted pepper, cook til sausage is done. Add whipping cream and parmesan let bubble til thickened. Add salt or pepper to taste. Pour over cooked gnocchi or shell pasta.
I mix it up all the time, I like to put frozen peas in just as I am adding the pasta. I sometimes use green onions and fresh peppers instead of the roasted ones. | |

I am busy making some Hawaiin BBQ Wings for a party...
Very easy to make in a crock pot or divide it up into two crock pots if necessary.
Take a very large bag of frozen wings.. Use your favorite BBQ sauce...( I like Sweet Baby Rays original) 1 Large can of Pineapple Chunks in its own juice (pour the juice in too) 1 Jar of Maraschino Cherries drained(without the stems-reserve that time for when you are having a cherry in your drink and you want to impress your date by tying a knot in the stem with your teeth and tongue..can you do that??? LOL- thought Naughtical might like the humor in this.....ha ha ha) Mix all together and throw into the crockpot(s) Heat on Low for 6-8 hours and then either cool off and freeze to take later to your party or place in a carrying container with lid to take directly to the party. 3 eggs well beaten 1 tsp ranch dressing 4 ounces sliced ham cut into small bits 1/2 cup baby spinach sliced up 2 slices American cheese cut into small pieces (to melt faster) garlic, onion, salt and pepper to taste
Put the ham and spinach into a hot skillet over medium heat and cook until the spinach has reduced a tiny bit. Add cheese pieces, eggs, and spices and scramble until completely cooked.
I put it into a whole wheat tortilla and ate it as a wrap. | |

Night before last my best friend finally broke up with her bad boyfriend and came over to my house asking me to cook her a "Carb Fest Comfort Meal of Simple Foods." She and I are always eating low carb, so I knew exactly what she meant. I had just come back from the store with my treasure bag of a bad food item that I rarely let myself have, so I opened the frige and took out the makings of a very quirky, but simple carb filled meal. The first item is my quick cheaters version of those kolaches I don't have the proper dough recipe for...
Cheddar jalapeno kielbasa wrapped in jumbo cresent roll dough french fries baby lima beans with lots of pepper and butter salad of red onion, grape tomato, English cucumber, crushed garlic, avocado, cilantro w/ just a touch of evoo, cajun spice and tomato paste fresh strawberry pie with a ton of homemade whipped cream
Both of us giggled while we ate and happily found we couldn't eat as much as we wanted. LOL It was a fun guilty pleasure. | |

Wow..what a lot of work. Same concept though...throw them in the crockpot with BBQ sauce, pineapple chunks and maraschino cherries...(remember...NO STEMS) LOL...and then let cook on low for about 6-8 hours.

I ate my first meatballs that I like, other than Italian, not long ago, but they had real Jack Daniels in them. I am sure that is why. That stuff tastes like candy straight up. Good thing I rarely drink LOL
I am not feeling like eating tonight, so I didn't, but I went to the store to buy the things I need to prepare appetizers for a party I am going to tomorrow night. I am making Caponata ala'Pamelaaaaaa LOL aka My Way and I am making Spiedini. We are supposed to be having Italian, so Italian appetizers, of course. | |

I am afraid I am a bit on the boring side with food (maybe why I am single???) and I am such a picky eater. However, I am saving some of these and will attempt to make them, for others...if the opportunity arises.

Might have a GS cookie later (peanut butter ones), or some blueberry cream pie ice cream. The past few weeks have been emotionally stressful, so I need some comfort food. One of my students recently lost his father, he is doing okay but it must be tough to be 6 and have that happen, a friend from college lost her battle with cancer, and a friend/supervisor also died from cancer. | |

Posted: 3/15/2008 4:36:48 PM | | well, this evening's entree features shrimp, sauteed in olive oil to which we add garlic and thyme. we then add arborio, along with diced purple onion, celery and fresh parsley. the whole thing bubbles away happily in its chicken stock swirled with a bit of saffron. we then finish it with fresh grated parm and serve. | |

It was braised pork loin chop with sweet potatoes (mashed and flavored with a little garlic clove and marg.), and a green salad on the side with spritzed balsamic and EVOO as dressing. Was great!
Now I'm heading out for the Coffee House with the girls - just around the corner at the Community Hall.

The hardest part was cutting up the potato since I have no knife skills. I still have all my fingers though! Later I'll probably have some sauteed okra, which reminds me I need to find a recipe for that. | |
