OMG! I would love some blackberries, I loooove them. Can't find fresh ones around here until about May or June. Where did you get yours from Green Eyes, you live in Florida, too?

I'm cooking some wings for dinner tonight, might try a recipe I saw on another thread...baked in the oven with parmesan cheese, not sure yet. I have a box of angel hair pasta to cook with it. Yeah, I know....LAZY!

I made lamb cawl today ( that's soup for you non-Welshies ) and had that earlier. Best of all was the melted middle chocolate pudding for dessert Yummy!

Tonite we're having turkey legs, mashed potatoes and gravy, fresh carrots and frozen peas.

It's a cheap and easy meal. I picked up a package of three fairly large turkey legs for well under $3...even by adding in the cost of the potatoes, onions, carrots and peas, my meal comes to about $5. And there will enough left over for a second meal, and maybe enough left over from that second meal for a sandwich or two.(it's just me and my granddaughter:)

How to cook it? That's easy...de-skin and throw the turkey legs into a roasting pan, add some onions, fresh garlic, sprinkle with parsley, seasoned salt, garlic salt, sage, oregano, pepper and add about an inch of water, cover and set your oven at 300 or so
and forget about it for an hour or so. Add your carrots and peas for the last couple of hours of cooking. Thicken your broth with
Bisto according to direction, boil and mashed your potatoes and you have yourself a holiday meal for very little money and effort. Yum! And the house smells SO good right now that it's almost unbearable...I can't wait to sit down and eat...lol!

Oldsoul?...just a question...you say you add water to the roasting pan?...Is there a cover on it?...I would think those turkey legs would be great just rubbed with olive oil...and then the herbs and seasoning would stick to them...I'm gonna give it a try..there should still be drippings to make some gravy with...

Yeah I put a cover on...I know I'm weird but I tend to drown everything I cook in the oven with water...and I'm not sure why...lol!

I think it's because it's the way my mom cooked everything and old habits are hard to die. I don't put too much though, and most
of it does evaporate in the end as I have one on those little adjustable vapour hole in the lid?

I do the same thing with a pot roast...throw it in the pan with some onions and garlic and spices and add water and later on add some vegetables and voila!

It's only in the last few years that I realized that that was NOT the way most people did their roasts and stuff...dang!

I think most people rub their meat with oil or something and some people even brown them on all sides before roasting it...right?

And for the best easy gravies (beside the real homemade ones with the browned flour) try this Bisto stuff...it comes in a small box and it's browned flavored flour really...you just dissolve a teaspoon or two in a little bit of cold water and add it to your drippings and let it come to a boil and YUM...I couldn't live without my Bisto...and no I don't have shares in the company...lol!

Tomorrow's menu: Same exact meal OR hot turkey sandwiches...no cooking!

I loveeeeeeeee blackerries with a passion...really, ANY kind of berries. I found them at Albertson's and also at Publix. You just have to look through the box to make sure there aren't any "fuzzies" on any of them. Try a fruit stand too..they should have them.

I made something yummy tonight. I took a piece of farm raised skinless, boneless tilapia. I washed it off..(naturally)..put it on a plate of flour that was mixed with some lemon/pepper/garlic seasoning , dipped it into an egg that was beaten and then put it on a plate of panko plain bread crumbs on both sides.

I heated a pan, put some garlic infused olive oil in it and browned the filet for 3 minutes on medium high and then turned over and lowered the heat and cooked for another three minutes. It was d'lish, if I do say so myself. I then cut up a ruby red grapefruit, scored it and ate the entire contents of a half. (I might just go back and have the other half ...it was so sweet and yummy.) I do pride myself of being able to "sizzle" in the kitchen as well. LOL. Yummy!! ~~Beth~~

Thanks for the turkey leg recipe! My uncle cooked some for me a couple months ago that melted in my mouth. When I tried to cook them myself, they turned out a little tough. I just asked him tonight how he does it and he said you have to put a little water in the pan and cover it with vented foil. So I guess that's the secret! We like ours flavored with Sweet Baby Rays.

OK, so I made my Shepherds Pie. Its actually for an elderly friend of mine. I sat and watched corrie with her while we ate. Todays thing was a easter present for my sister, who's on a dairy free diet. Its an Orange Syrup Cake, as usual its based on a recipe and then I improvised.

125 grams or40z plain flour
3/4 teaspoon baking powder
3/4 teaspoon bicarb of soda
50 grams or 1 2/3 oz butter (I used a substitute)
125 grams or 4 oz caster sugar
2 egges
80 ml milk (I used soya)
3 tablespoons ground almonds
zest of 2 oranges

1. Sift the flower, baking powder and bicarb into a bowl. Add a pinch of salt.
2. Put the eggs, sugar and butter in another bowl. Beat until creamy and light. If it looks a bit curdled, thats not a problem.
3. Fold the flour mix into the eggs, then gently stir in the milk, almonds and orange rind.
4. Pour into a greased 20 cm (8 in) cake tin, bake for 35 min at 180 centigrade, 350 farenheit, gas mark 4.
5. When it comes out (all lovely and risen and brown) make small holes in the top. This is to allow the cake to soak up the syrup.

100 grams or 3 1/3 oz caster sugar
juice of 2 oranges (I added a little lemon juice too)

1. Put the sugar and juice in a pan over a low heat and stir until syrupy. Not too thick as you want it to soak into the cake.
2. Pour the syrup over the cake.

I also sliced an orange very thin and put it in with the syrup. I used this to decorate the top of the cake. I saved some of the syrup, added a little butter, carmelised it and poured that over the oranges. Then I added some slivers of orange zest too, I was having real fun by this point and wanted to keep playing.
I plan to serve it with blueberries and some whipped cream (soya based again) which I'm going to whisk with a little lemon juice and basil. Can't wait.

I was hungry and opted to have a salad with grilled chicken, dried cranberries, carrot slices, snow pea pods, orange sesame dressing. Yummy. I'll have the other half of the ruby red grapefruit in my fridge. Boring, but healthy.

I am making eggrolls...
1 lbs lean ground pork
1minced small carrot
1 minced small onion
5 minced clove of garlic
1/4 minced red bell pepper
salt and pepper
1 egg

combined all the ingredients and wrapped.
If you just made them, no need to depp fried the rolls.
If you are cooking them in a frozen state, you have deep fried them.

...I'm so lucky..we have black rasberries and blackberrys that grow wild all over the farm...and I can't remember the last time I actually ate one of the blackberries. But the rasberries are great to make a freezer jam with...you have to pick a bunch..because you really need to run half of the recipe through a Foley mill to get the pulp seperated from the seeds. Otherwise the jam will be much too seedy. It sets up great...just follow the directions on the Sure Jell package.....and freeze...

whenever i make meatloaf, i make sure to add an oil, or some kind of liquid to make it all stick together while in the bowl..i usually use either olive oil, Salad Dressing, or BBQ sauce.. just make sure the bbq sauce doesnt over power the flavor of the meatloaf.. i made that mistake once. I then add breadcrumbs at the bottom and a little on the top.
Mine always sticks together.

I'm not cooking this right now.. but i did make it last night for dinner..
Santa fe Chicken
I took boneless skinlee chicken breasts [why do more work then you have to?] sliced the top of them so flavor could get right into the middle, sprinkled with fresh garlic and basted with lime juice. I added a bit of oregeno and but a few green peppers around the chicken, then added some lemon and salsa, a bit of garlic salt on top and popped it in the oven.

Cooking it with the Salsa, not only gave it great flavor, but also kept it really moist. It was delicious. And the green pepper gave it an extra umph of flavor.

Remember when picking your salsa though.. it heats up when its cooked.. i used medium and i was almost too spicy for my tastes.. [granted.. im a wimp..]

So.. just be aware.

I made chicken soup, and ate it with a banana and peanut butter sandwich and a deviled egg. I miss the Easter ham dinners of my childhood, but am going to see my mom next weekend, I will be cooking for her 75th birthday party.




I made reference to eating lamb chops in a previous post, and the next day someone bought a lamb to work (Kindergarten kids have been studying about farms), and I felt a bit guilty when I pet the sweet baby lamb.

RIBS...BBQ RIBS...and NO, I did NOT make them, but I definitely wanted something I could sink my teeth into and this hit the spot. Yummy....

Funny thing is, I can never finish the whole rack myself..(sigh)..I eat about 5 ribs and that is about it because I have a salad to start off with. Oh well. They freeze well for another meal, I suppose.
