never in my life, have I ever saved bacon grease, or eaten it with something else...
the only thing that even comes close to this, is after my dad cooked bacon, he would drain the fat into a used can, and after it cooled down, and congealed, he would THROW IT AWAY...
Do I eat bacon now??? every now and then.. but I cook it in the microwave, with paper towels to absorb the grease.. that I THROW out | |

Honey, you make gravy for good ole Southern gravy biscuits with it, for Heaven's sake! First you make a roux using some of it in a skillet on medium heat and s-l-o-w-l-y adding a bit more and a bit more flour, stirring it with a fork the whole time. When it starts getting thick s-l-o-w-l-y, again, start adding milk and stirring it in with the fork so it blends and your mixture doesn't stick to the bottom of the pan. You want to wind up with more flour and much more milk than you do bacon grease. Add black pepper to taste. If you do it right your wrist will get tired stirring and you'll probably get tired watching it, but in the end it will be well worth it. I RARELY ever make it, cause it's so good and so fattening, usually just making it when I have company, maybe a couple of times a year. But before you start the gravy go ahead and have your good old cat-heat biscuits made. You don't want to be distracted when you're making your gravy. Especially in the early stage.
I want you to make me some biscuits and gravy. I will wash all your dishes, wipe down the counters, alphabetize your pantry and mop your kitchen floor, for just one batch. | |

PORK FAT RULES!! and thanks to good genetics and NOT dietary habits, my cholesterol level is low too.
Other than that small amount for seasoning, any leftover bacon or other grease is added to a container with some minute oatmeal I bought by mistake, frozen and when the container if about 1/2 full tossed in the yard for the birds or rabbits. Back when I still had a couple of cats and a dog the beasties got the grease on their dry food- a rare treat for them, and they seemed none-the-worse for eating the stuff. | |

| What can i do with Bacon fat? Posted: 2/15/2008 9:11:16 AM | I never keep it. On rare occasion I have fried some potatoes or steak or eggs in that leftover in a pan but those times are very few and once in a blue moon.
If you get an asbestos wick I think you can burn it. Doesn't zippos still use asbestos wicks? The last few I bought had them. But it sure isn't going to light with just a spark if you've got fat loaded into it.
I've always wondered about those jerry candles that would burn all kinds of fats. What is involved there... a steel wick?
Remember the Steve McQueen movie where they dig the tunnel out of the POW camp? They light the tunnel with fat and little homemade jerry-rigged grease burning lamps made from spam cans or some kind of can.
I remember my parents kept a can by the sink to throw the leftover grease into but only so it wasn't dumped down the drain (and these days it'd surely melt pvc drains!) because it'd clog it.
Back when I still had a couple of cats and a dog the beasties got the grease on their dry food- a rare treat for them, and they seemed none-the-worse for eating the stuff.
I did that all the time with hamburger grease and tuna oil and the family dog lived to be 15 years old! | |

| What can i do with Bacon fat? Posted: 2/15/2008 10:26:31 AM | B O Y do I love you, this post and the person that intelligently mentioned his cholesterol after Atkins. Here are several GREAT things to do with bacon fat.
1) NEVER throw it out, but DO refrigerate.
2) Make the BEST DAMN GINGERSNAP COOKIES you ever tasted. Also, be sure to use crystalized ginger in them too. Just substitute whatever fat is in the recipe for the bacon fat. A great smokey flavor. Oh yes, and also use pepper in them to enhance all of the flavors. I like Green peppercorns best, but black, red, or white will do fine.
3) A Wilted Salad dressing, like a redeye gravy (very southern) - heat, add brown sugar and triple strong hot coffee...all in small amounts. Fantastic over biscuits, mashed potatoes, or a greens salad. It is supposed to be thin, but if you want some body, add some flour first, but not so that it is really thick like usual gravy.
4) Fry up some potatoes with bacon, and onion. MMMM MMMMM Good
5)Use in homemade cornbread, or biscuits.
6) Use in making pate's like liver, or mushroom.

There are certain things it does not work for, but it excellent for frying eggs, potatoes, making fried green tomatoes, or a roux for pork gravy. But yes, you should keep it in the fridge, I use a clean tuna can.
And you should NEVER pour it down the sink! (if you have to throw it out, pour it into a metal can, let it cool & harden,then you can safely throw it in the trash) Very bad for the pipes! Causes clogs!  
NOTE: to help clear your pipes & prevent clogs: pour your old coffee grounds down the sink. Old fashioned, but it still works! | |

Put bacon grease in fridge and when making eggs spoon into pan, heat bacon grease and then break eggs into pan. Spoon drippings onto eggs as the cook until your desired doneness. | |

Posted: 2/15/2008 5:06:17 PM | While I was stationed in Okinawa, Japan, I noticed that the fried rice tasted different then that of the Chinese style rice served here in the U.S...(But better)...After 30 years of wondering why, I asked a Japanese person living by me,"What's the secret?"
The answer was bacon grease!
After you cook down your bacon, separate the bacon from the grease, set aside to cool...Crumble when cool...Depending on what you like in your fried rice (previously cook, cooling in your FREEZER on a flat baking tray)...Cook (everything separatly in your Wok) onions, bean sprouts, etc in some of the grease...(even scramble some eggs in it)...Re-cook the rice after it's cooled down, and dehydrated a bit from freezing, in some of the grease...
Mix everything together (including some of the bacon), to heat up anything that might have cooled off too much...Add Soy Sauce, or Teriyaki sauce to taste...
If done correctly, (few time for practice), it will be on your menu list for a long, long time  | |

Use the bacon fat over the greens to flavor them and add a little fresh garlic. Just a tad...and make sure you eat lots of oatmeal and berries and your colesterol will be fine. | |
