How long can you keep bacon fat until it spoils? Unfridgerated or fridgerated? Partly depends on if you clarify it or not. If you dump it from pan to can :) maybe a week in the fridge. Frozen, maybe a month. I think, but not positive, that it's partly the fault of any impurities in the fat like carbonized bits of meat or other solids. When I do get some, I strain it through a sieve and filter, then into the fridge where it can cool and solidify. Once solid, I cut off any solids that have, by now, settled to the bottom, leaving a semi-clear block of clean bacon grease. Keeps in the freezer (air-tight container) for about 4 to 6 months.
You can also re-liquify it after getting it clarified, then freeze in one of those tiny-size ice cube trays (covered in a freezer bag). Makes for good portion control when you need a small 'brick' of the fat for flavoring greens or ???. | |

My Mom kept bacon grease.. in a small brown ceramic crock...most folks of her era did I am sure! ...she'd use the bacon grease to saute some yellow minced onion, and then add the white or cider vinegar to the saute..and some water (I want to say it was about 1/2 , 1/2) ...along with some white sugar to make this delicious sweet sour dressing---she would pour it HOT over shredded iceberg lettuce...and put a plate over the bowl as it wilted... WOW I had not thought of that in years... | |

This is a great starter soup; you can vary the ingredients, add different vegetables, and add something different to the leftovers to change the taste. I made a big pot of it and kept it in the fridge. It was great to just scoop out a bowl for a great quick nutritious meal, add some chicken, cooked broccoli, mushrooms, curry powder, whatever you feel like that day to the bowl and re-heat). I ate this while on a diet and still lost weight.
Spicy Cheese Potato Soup
2 Bacon strips (or more) 1 cup (250ml) chopped carrots I cup (250 ml) poblano chilies (optional) 1 cup (250ml) chopped onion 30-ml. jalapeno, minced, seeded pepper (optional) 2.5 ml. cumin 3 minced garlic cloves 2 cans (250 ml. each) (fat free) chicken broth 5 cups (1250 ml.) diced peeled potatoes, approx. 10 medium (I liked half sweet potatoes) 2.5 ml. salt 47g. flour 2 ½ cups (625 ml.) (skim) milk 5 oz. (reduced fat) (jalapeno) cheddar cheese 2 oz. (reduced fat) Monterey jack cheese (or use Sharp Chedder and pepper Jack) 160-ml. cup sliced scallion
1. Cook bacon until crisp. Remove bacon from pan leaving 15ml. drippings in pan (or all). Crumble bacon, set aside. Add carrots and next 5 ingredients to drippings. Sauté until golden brown. Stir in broth and add potato and salt. Bring to boil. Cover, reduce heat and simmer 25 min. or until potato is tender. 2. Combine flour and milk in a small bowl stirring with a whisk. Add to pan slowly. Cook over medium heat until thick, about 12-15 min. Remove from heat. Add cheese, stirring until melted. (I liked to put mine in a blender, but you can put half in the blender, or not) 3. Serve in bowls topped with green onions and crumbled bacon. (or mix it all in, what the hey) Makes 10 one-cup servings.
Prep Time: 20 minutes. (yeah, right) Cook Time: 1 hour (obviously if you use different ingredients the cooking time will vary) | |

My grandfather ate salt pork everyday of his life and he was 93 when he died from being hit by a car. The problem with the food products today is the chemical processing which pollutes our environment and bodies. | |

You actually can run a diesel engine on it but you need to remove the solid bits by filtering and I think de-salt by melting it on a lot of water and changing the water then cooling the fat and by that point you could just buy diesel fuel. | |

If you pour grease of anykind down your sink it will eventually clog your sink up.
I use bacon grease to cook onions in, and then I use them in green beans...it is so good.
My mother used to strain the bacon grease and keep it on the stove for a long time..it doesn't get rancid very quickly...long as you don't mix it with other types of grease. | |

Posted: 4/3/2008 1:49:57 PM | | firts you should never chuck it down the drain unless you are wanting to call a plumber and when you do rise off your plate you should use cold water so the grease gets hard and rolls through the drain if you use hot water sure it melts it off the plate but when it hits the cold drain it turns to a solid and sticks to the pipe cousing a blockage over time | |

Ok, bacon fat is not really good for you, but I do indulge about once a month using a recipe of my grandmothers.
You're right, nothing was wasted during the depression and afterward. My grandmother would fry bacon, put the bacon grease in a jar and refrigerate it. Then, whenever she made her homemade buttermilk pancakes, she fried them in the bacon grease. I have to say, it's really good!
She would also fry a whole lb of bacon and my grandfather would take the homemade bread she baked, slice it and dip every bite in the grease. I can't even imagine what his arteries must have looked like.
